This is another great cake for the fall. When apples are plentiful and delicious there are so many ways to thank mother nature for its bounty. I pick a lot of the wild apples in the fall, and turn them into great desserts.

½ cup shortening
1 cup white sugar
1 egg
1 ½ teaspoons vanilla extract
1 ½ cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
¾ cup milk
2 apples - peeled, cored and cut into eighths
¼ cup white sugar
1 teaspoon ground cinnamon

Steps:

  • Sift flour with baking powder and salt.
  • In a large bowl, cream shortening and 1 cup sugar until light. Beat in egg and vanilla until fluffy. Add sifted ingredients to the creamed mixture alternately with milk, beginning and ending with the sifted ingredients. Spread the batter into a greased 7 x 11 inch baking pan.
  • Place apple pieces in rows on the batter with the sharp edges pressed in slightly. Sprinkle 1/4 cup sugar and cinnamon on top.
  • Bake at 350 degrees F (175 degrees C) for about 50 to 60 minutes, or until the apples are tender and the cake tests done.

There's plenty of recipes for this cake listed, but I think this one sounds a little different. Found it online at Taste of Home. It looks fairly simple and baked in a loaf pan. It would be a great take along for potlucks or just an easy snack for the family. Now that our apple trees are full and ripe, it's a great time to try this out. As an update, finally got around to trying this and loved it. Simple, with a nice presentation and very good. I did add a cup of chopped pecans as we love nuts and everyone enjoyed it. Don't make the mistake I did though - be aware that the divided sugar puts 3 Tablespoons in the apples and then the 1 cup goes in the batter.

3 cups tart apples, such as Granny Smith, peeled and sliced 1/4 inch thick about 3 medium size apples
3 tablespoons sugar
1 teaspoon ground cinnamon
1 cup sugar
2/3 cup butter, softened
4 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1/8 teaspoon salt

Steps:

  • In large bowl, combine apples, 3 tablespoons sugar and cinnamon; let stand for 1 hour.
  • In large mixing bowl, cream butter and remaining sugar until light and fluffy.
  • Add eggs, one at a time, beating well after each.
  • Add vanilla.
  • Combine flour and salt; gradually add to the creamed mixture and beat until smooth.
  • Pour into a greased 9x5-inch loaf pan.
  • Push apple slices vertically into batter, placing them close together.
  • Bake at 325°F for 1 1/4 to 1 1/2 hours or until a toothpick inserted near the center comes out clean.
  • Cool for 10 minutes in pan before removing to a wire rack.
  • Serve warm.

1 egg
1/2 c milk
2 c flour
2 tsp baking powder
1/4 tsp salt
1/2 c sugar
1 tsp melted butter
2 large tart apples, unpeeled & chopped
powdered sugar for coating
salad oil for deep fat frying

Steps:

  • 1. Beat eggs until foamy, add milk. Stir in flour, bk powder, salt & sugar. Fold in butter & apples.
  • 2. Heat 2 inches of oil to 370 degrees on a deep fat thermometer. Drop batter carefully by spoonfuls into hot oil. Fry until light brown.
  • 3. Drain on paper towels. Sprinkle with powdered sugar.

1/2 teaspoon vanilla extract
6 tablespoons butter
2 1/2 ounces milk

2 1/4 teaspoons baking powder
2 small or 1 large Granny Smith or Golden Delicious apples
2 1/2 ounces heavy cream, to serve

Steps:

  • This cake has been made at Ballymaloe for years. We even have guests who ask for it specifically every time they visit. The fruit sinks to the bottom as it cooks, leaving a light sponge on top with a lovely sugary crust.
  • Preheat the oven to 400 degrees F. Line the sides and base of a 8 by 8-inch square cake pan with parchment paper.
  • Using an electric whisk or hand held mixer, whisk the eggs, 6 ounces caster sugar, and vanilla extract in a large bowl, until the mixture is thick and mousse-like, and the whisk leaves a figure of eight pattern, this will take about 5 minutes.
  • Melt the butter in a saucepan with the milk, and then pour the mixture onto the eggs, whisking continuously. Sift in the flour, cinnamon, and baking powder, and fold carefully into the batter so that there are no lumps of flour. Pour the mixture into the prepared pan, and smooth the surface.
  • Peel and core the apples, and cut them into thin slices, and then arrange them over the batter. They will sink to the bottom. This is meant to happen! Sprinkle the cake with the remaining 1/2 ounce sugar, and bake in the oven for 10 minutes. Reduce the oven temperature to 350 degrees F, and bake until well risen and golden brown, about 20 to 25 minutes.
  • Allow the cake to cool in the tin, cut into squares and serve warm. It is delicious with cream!

1/2 teaspoon vanilla extract
3 1/2 ounces butter

2 cooking apples, peeled, cored and thinly sliced
heavy cream, to serve

Steps:

Number Of Ingredients 8

100g caster sugar
100g soft margarine
2 eggs
100g self-raising flour
1tsp baking powder
1 eating apple
1tsp cinnamon
2tsp demerara sugar

Steps:

  • Preheat oven to 180C/gas mark 4/fan 160C. Grease and line a 20cm cake tin.
  • Cream the margarine and sugar together until light and fluffy. In a separate bowl, beat the eggs with a fork.
  • Mix the eggs, a little at a time to the margarine and sugar. Sieve in the flour and baking powder.
  • Spread the mixture into the cake tin.
  • Core the apple and slice thinly. Arrange the apple slices over the cake mix and then sprinkle the cinnamon and sugar on top.
  • Place in the oven and bake for around 20 minutes, until golden brown and springy to the touch.

3 medium tart apples, peeled and cut into 1/4-inch slices (3 cups)
3 tablespoons plus 1 cup sugar, divided

85 g butter
75 ml milk
125 g plain flour

  • Preheat the oven to 200c/390f/gas mark 6. Line a cake tin with greaseproof paper.
