NO FAIL CHOCOLATE FUDGE
This fudge recipe is super creamy and everyone requests it during the holidays. While preparing, be sure that you don't let the mix get hotter than 238 degrees or it gets really dry but still tastes good.

Steps:
- Grease one 8x8 inch pie pan and set aside.
- In a heavy saucepan over medium heat, combine the powdered sugar, milk and butter. Mix well and stir constantly until candy thermometer reads 238 degrees F (112 degrees C).
- Remove from heat and add chocolate chips, marshmallow creme, vanilla and cocoa. Quickly stir together and pour into prepared pan. Cool and serve. Refrigerate in an airtight container.

EASY 2-INGREDIENT CHOCOLATE FUDGE
A deliciously tempting, easy dark chocolate fudge recipe that can easily be made into truffles as well. Be sure to use SWEETENED CONDENSED MILK ONLY or this recipe will not set up. This is a recipe that was tested in a test kitchen before being published by Good Housekeeping magazine. I have been using it since 1990 without fail.

Steps:
- Place both ingredients in a microwave safe 8" x 8" dish.
- Microwave on high for 2 to 3 minutes.
- Remove (with oven mitts, please) and stir to combine.
- Place in the refrigerator for 2 hours to set.
- Fudge can be removed from refrigerator and stored at room temperature after it has set.
- Once at room temperature you can melon scoop it, roll it in powdered cocoa and chopped nuts, and serve as truffles.

- Grease 8-inch square baking dish with butter.
- In 2-quart microwavable bowl, stir condensed milk and chocolate chips; add baking chocolate. Microwave uncovered on High 1 minute; stir. Microwave about 2 minutes longer or until chocolate is melted and mixture can be stirred smooth.
- Stir in vanilla and nuts. Spread mixture evenly in baking dish. Refrigerate until firm. For 64 (1-inch) squares, cut into 8 rows by 8 rows.

- Line a 15x10x1-in. pan with foil; grease foil with 1-1/2 teaspoons butter., In a heavy large saucepan, combine sugar, milk, salt and remaining butter. Bring to a rapid boil over medium heat, stirring constantly. Cook 5 minutes, stirring constantly. Remove from heat. , Stir in marshmallow creme until melted. Stir in both chocolates until melted. If desired, stir in walnuts. Immediately spread into prepared pan. Refrigerate until firm. , Using foil, lift fudge from pan. Remove foil; cut fudge into 1-in. squares. Store between layers of waxed paper in airtight containers in the refrigerator.

- In a saucepan, over low heat, melt semi-sweet chocolate chips with 2/3 cup sweetened condensed milk, 1 tablespoon cream and 1 teaspoon vanilla.
- Remove from heat; stir in 1/2 cup walnuts.
- Spread evenly into foil-lined 9-inch square pan.
- In another saucepan, over low heat, melt milk chocolate chips with remaining sweetened condensed milk, 1 tablespoon cream and 1 teaspoon vanilla.
- Remove from heat; stir in remaining walnuts. Spread over fudge in pan.
- Chill for 2 hours, or until firm.
- Turn fudge onto cutting board; peel off foil and cut into squares.
- Store loosely covered at room temperature.

Steps:
- Lightly butter one 9x13 inch pan.
- In a large bowl, combine the milk chocolate, semi-sweet chocolate, butter, marshmallow cream and nuts.
- In a large saucepan over medium heat, combine the evaporated milk and sugar. Stir constantly and bring to a boil for 4 minutes.
- Pour hot sugar mixture over chocolate mixture and stir with large spoon until well blended (do this quickly before fudge begins to harden). Once this is well blended, pour fudge into a buttered 9x13 inch baking pan. Spread out and smooth into pan.
- Set aside to cool and harden, about 6 hours. Cut into squares when ready to serve.
