APPLESAUCE SPICE CAKE
This recipe came from a box of Duncan Hines cake mix, but I've added some vanilla and extra spices to make it memorable! Being from Duncan Hines means to use a cake mix without pudding. Also, I like to start with a smooth, bland commercial applesauce and sweeten it with brown sugar, then jazz it up with some extra cinnamon and cardamom - whatever spices suit your fancy - so the applesauce tastes really good to start with. A smooth applesauce allows the cake to remain light. If you don't have cardamom, try some five-spice powder. For frosting, use a cream cheese frosting by itself or sprinkled with chopped nuts. For a diffferent flavor, add some dulce de leche (caramel sauce) to your cream cheese frosting along with a little maple flavoring. This is one of my favorite cakes!

Steps:
- Pre-heat the oven to 350.
- Grease and flour a 13 x 9 cake pan or two 9-inch cake pans.
- Put all ingredients into a mixing bowl and mix on low speed for 1 minute.
- Stop the mixer and scrape the sides and bottom of the bowl.
- Mix for 2 minutes on high speed and pour into pan(s).
- Bake until a cake tester comes out clean, about 40 minutes for a 13 x 9 pan, 30 minutes for 9-inch pans.
- Frost as desired.

Steps:
- Preheat oven to 350°F for metal, aluminum or glass pans, 325°F for dark or coated pans.
- Place the Duncan Hines mix in a container .
- Measure 10 liquid ounces of a soda (Sprite, Canada Dry, and other neutral ones are often better for everything, but you can use Pepsi or Coca-Cola for darker colored cakes.).
- Add the soda in slowly so that it doesn't evaporate, stir as you do this. (The instructions are to add eggs, water, and oil. Do not do it).
- Transfer it to the baking utensil.
- Bake for 15-18 minutes if you make cupcakes. Most other pans come for about 25-30 minutes but check on the cake after 24.
- Let the cake/cupcakes cool for 5 minutes before consumption.
- Layer up with a good frosting or icing. Duncan Hines also has many amazing flavors such as creamy milk chocolate and whipped vanilla.
- Stir frosting if to be used.
- Decorate. It usually takes less than 5 minutes.

CARAMEL-APPLE UPSIDE-DOWN CAKES

Steps:
- Preheat oven to 350 degrees.
- Combine cake mix,eggs,applesauce,and juice in a large bowl with a mixer.
- Using a large cupcake tin, place 1 tablespoon melted butter, 1 tablespoon pecans, and 1 teaspoon brown sugar in each cup.
- Layer 4 to 6 apple slices on top of brown sugar, then pour about 1/3 cup batter on top.
- Repeat to make 11 more cakes.
- Bake for 20 to 25 minutes or until a cake tester comes out clean,.
- Allow cakes to cool for 10 minutes.
- Flip the cakes onto a cookie sheet lined with parchment paper.
- Serve warm or cooled.Great with a scoop of rich vanilla ice cream on the side!

This is an easy and quick Bundt Cake that will leave your house smelling wonderful -- of apples and spice, a great recipe for Fall. Cake is moist and full of wonderful spicey rich flavor!

- Preheat oven to 350.
- Spray the Bundt pan completely with non-stick/non-fat cooking spray & flour lightly. Blend dry mix, eggs, & applesauce in a large bowl on low speed until moistened for approximately 30 seconds, then beat at medium speed for 2 minutes - then, stir in the chopped nuts & raisins by hand, (nuts and raisins are optional).
- Pour the batter in prepared Bundt Cake Pan.
- Bake for 38-43 minutes at 350.
- Cool in pan for 15 minutes.
- Remove from pan & cool completely before frosting.
- Frosting Directions ~ Cream together with a mixer all ingredients until thoroughly blended and creamy - frost cake with icing once cake is completely cooled.
OLD FASHIONED APPLESAUCE SPICE CAKE
I found this recipe on a Duncan Hines spice cake mix box. It was easy to make. It was not too sweet, but sweet enough! I used chunky applesauce & I did not frost the cake -- I just sprinkled it with cinnamon sugar, but the frosting sounds good too.

- Preheat oven to 350.
- Grease & flour a 13 X 9 pan.
- Combine cake mix, eggs, applesauce, and oil in a large bowl.
- Beat at medium speed with an electric mixer for 2 minutes.
- Stir in nuts.
- Pour into pan.
- Bake at 350 for 40 minutes or until toothpick inserted in the center comes out clean.
- Cool in the pan for 15 minutes.
- Invert onto cooling rack, then turn right side up.
- Cool completely.
- For frosting:.
- Combine vanilla frosting and cinnamon.
- Stir until well blended.
- Spread over cooled cake.
- ENJOY!
