- In a large skillet over medium-high heat, saute onion, green pepper and celery in butter until tender. Add bay leaf, tomatoes, brown sugar, basil, salt and pepper; cover and simmer for 5-10 minutes. , Meanwhile, for dumplings, combine flour, baking powder and salt in a bowl. Cut in butter. Add parsley and milk; stir just until mixed., Drop by tablespoonfuls onto the simmering tomato mixture, creating six mounds; cover tightly and simmer for 12-15 minutes or until a toothpick inserted into one of the dumplings comes out clean. Discard bay leaf. Serve immediately.

- Cook tomatoes, onions and garlic in medium skillet on high heat 10 to 15 min. or until evenly roasted, turning occasionally. Peel garlic; place in blender. Add tomatoes and onions; blend until smooth.
- Mix masa harina, 1/2 cup water and Parmesan until mixture forms soft dough; divide into 24 small balls. Heat 1 Tbsp. oil in large saucepan. Add masa balls; cook 2 min. or until evenly browned, turning occasionally. Remove from pan.
- Heat remaining oil in same pan. Add zucchini; cook and stir 3 min. or until lightly browned. Stir in tomato mixture, remaining water and bouillon cubes; bring to boil. Simmer on medium-low heat 8 min. or until zucchini is tender.
- Ladle soup into 8 bowls. Top with dumplings and shredded cheese.

- Chop finely the onion.
- Slice the zucchini (not to thick).
- Saute the zucchini with the onion, garlic.
- Add all your seasonings.

- In a large bowl, combine beef or turkey, bread crumbs, egg substitute or egg, 1/2 teaspoon pepper, and 4 tablespoons cheese. Form into balls the size of walnuts. - For the dumplings: Scrub potatoes and without peeling, cook in boiling salted water for about 25 minutes until done. Drain, peel and press through a food mill or mash in a bowl. Allow to cool slightly and add egg, milk, flour and baking powder. Knead to a smooth dough. Add a little more flour, if required. Season with salt, pepper and nutmeg.
- On a clean kitchen towel, sprinkle with flour and place dough on it and roll out into finger-thick, small rectangles about 4 x 8 cm (approximately 1 1/2 x 3 inches).

- Fry the bacon, drain and set aside. Combine tomatoes, bacon drippings, water, salt, garlic powder, pepper and sugar in a pot on top of the stove. Bring to a boil, turn down to medium and cover.
- Cut shortening into flour until mixture resembles coarse crumbs. Add enough boiling water slowly stirring with a spoon until flour holds together and you can make into dumplings about the size of a walnut.
