A simple one pot meal, this Dump-and-Bake Swiss Steak is an easy dinner recipe that can be prepared in the oven or in the Crock Pot.

1 - 1 ½ lb. beef round steak
2 tablespoons flour
1 (14.5 ounce) can petite diced tomatoes, NOT drained
1 large sweet onion (sliced)
2 stalks celery (diced)
2 medium carrots (peeled and thinly sliced)
8 ounces sliced mushrooms
1 sprig fresh rosemary
2 sprigs fresh thyme
1 tablespoon Worcestershire sauce
½ cup beef stock or beef broth
1 teaspoon salt
¼ teaspoon pepper
1 teaspoon garlic powder
2 teaspoons cornstarch, plus 2 teaspoons cold water
For serving: cooked noodles, rice or mashed potatoes

Steps:

  • Preheat oven to 325 degrees F. Place flour in a shallow dish or tray. Dip steak in flour to coat on both sides. Place in the bottom of a Dutch oven or other large covered baking dish that has been sprayed with cooking spray.
  • Add remaining ingredients (except cornstarch).
  • Cover and bake for 2 hours.
  • Combine cornstarch and cold water to make a slurry. Stir cornstarch mixture into the pot. Cover and bake for 45 - 60 more minutes. Remove herb stems. Slice or shred steak and serve with vegetables over mashed potatoes, noodles or rice. Garnish with fresh herbs, if desired.

We adapted this to make it super easy for OAMC and freezing. The portions are for 2-3 servings each because it fits really well in a gallon ziploc bag. You could double it and it would probably still fit. Freezes very well. Plan to make two sets and you'll use up your packages of ingredients. Updated to add: Works well in crockpot - cook on low 6-8 hours. I'm sure it would work great from frozen as well. Also, I've used plain onion soup mix and the taste is still great.

1 lb round steak (approx)
1 (15 ounce) can diced tomatoes, undrained
0.5 (1 1/4 ounce) package beef and onion soup mix (dry)
0.5 (1 1/4 ounce) package brown gravy mix (dry)
mashed potatoes

Steps:

  • Cut steaks into portion sized pieces. Combine all ingredients together in a gallon ziploc bag. (You can brown meat first if desired, but not necessary.).
  • Freeze at this stage, if desired. (Note: If frozen, thaw before baking).
  • Transfer to baking dish, Bake covered at 350 for 1 ½ hours.
  • Serve over mashed potatoes.

1/2 to 3/4 pound beef top round steak
2 tablespoons all-purpose flour, divided
1/2 teaspoon salt
2 tablespoons canola oil
1 can (14-1/2 ounces) stewed tomatoes
1/2 cup chopped carrot
1/4 cup chopped celery
1 tablespoon chopped onion
1/4 teaspoon Worcestershire sauce
2 tablespoons sharp cheddar cheese

Steps:

  • Cut meat into two portions; pound to 1/4-in. thickness. Combine 1 tablespoon flour and salt; coat meat on both sides. In a skillet, brown meat in oil. Transfer meat to a greased shallow 2-qt. baking dish; set aside. , To pan drippings, add tomatoes, carrot, celery, onion, Worcestershire sauce and remaining flour. Bring to a boil over medium heat; cook and stir for 2 minutes. Pour over meat. Cover and bake at 350° for 1-1/2 hours or until the meat is tender. Sprinkle with cheese; return to the oven until cheese is melted.

One of my favorite beef dishes, I make this one very often at my house. Although the recipe calls for steak, you can use any cut of beef that you prefer, I sometimes cut up a small roast for this. I have even added 2 tbsp grated Parmesan cheese to the cream mixture.

1/4 cup all-purpose flour
2 lbs steak, cubed
1 medium onion, chopped
1 -2 cloves minced garlic (optional)
4 tablespoons oil
2 (10 3/4 ounce) cans condensed cream of chicken soup, undiluted
2 tablespoons grated parmesan cheese (optional)
1 cup whole milk or 1 cup half-and-half
1/3 cup water
salt and pepper
1/2 cup dry breadcrumbs
5 tablespoons butter or 5 tablespoons margarine, melted and divided
1 1/3 cups flour
2 teaspoons baking powder
1/4 teaspoon poultry seasoning
1/2 teaspoon salt (or to taste)
2/3 cup milk

Steps:

  • Dredge the cubed beef in flour.
  • In a large skillet, brown the meat on both sides in oil.
  • Transfer to a 2-1/2-quart greased baking dish.
  • In the same skillet saute the onions and garlic until soft; transfer to baking dish.
  • In the same skillet combine the soup, Parmesan cheese (if using), milk, water, salt and pepper, stirring occasionally; pour over the steak and onions in the baking dish; mix to combine.
  • Cover, and bake at 350 degrees for 50-60 minutes, or until meat is tender, remove from oven, and leave in baking dish.
  • FOR THE DUMPLINGS: increase the oven temperature to 425 degrees.
  • Combine the breadcrumbs and 2 tbsp melted butter in a small bowl; set aside.
  • In another bowl, combine the flour, baking powder, poultry seasoning and salt.
  • Stir in the milk and the remaining butter JUST UNTIL MOISTENED.
  • Drop by rounded tablespoonfuls into the crumb mixture; roll until coated.
  • Place the dumplings over the steak.
  • Return to oven and bake uncovered at 425 degrees for 20-25 minutes, or until the dumplings are lightly browned and a toothpick comes out clean.
