CHOCOLATE COVERED POUND CAKE BITES

These Chocolate Covered Pound Cake Bites make a sweet, no-bake recipe that's portable, poppable and delicious!

1 (16 ounce) frozen pound cake ((I used Sara Lee frozen All Butter Pound Cake) )
2 cups dark chocolate wafers or dark chocolate chips ((I used Ghirardelli dark chocolate melting wafers) )
3-4 tablespoons sprinkles for topping (, if desired)

Steps:

  • Remove pound cake from freezer and allow to thaw just slightly (about 5-10 minutes). This will make cutting the cake easier. However, you want it to remain mostly frozen so that the cake does not crumble when dipped into the melted chocolate.
  • Line a large baking pan (or a flat surface) with parchment paper.
  • Cut pound cake into quarters the long way, then cut into about 8-10 slices. From there, cut into cubes. Set aside.
  • In a medium bowl, melt dark chocolate wafers/chips on medium power in microwave, stirring every 15 seconds so it doesn't burn, until smooth.
  • Working one at a time, dip each pound cake cube into melted chocolate, ensuring all sides are covered. Place onto parchment paper. Top with sprinkles. Repeat until all cubes are coated with chocolate.
  • Place the pan into the fridge to harden chocolate for faster results. You could also just keep on the counter, if desired. Keep refrigerated until ready to serve.

What a delicious cake for the holiday! This cake contains delicious lemon flavor. The special addition of vodka makes this a delectable dessert.

CAKE:
1/4 c butter, softened
1 3/4 c granulated sugar
4 large eggs,separated
1 Tbsp grated lemon rind
1 tsp vanilla extract
8 oz cream cheese,softened
1/2 c lemon vodka or plain
2 3/4 c all purpose flour
1 Tbsp each baking powder and baking soda
1/4 c milk
1 Tbsp lemon juice
1/2 tsp salt
1/2 tsp almond extract
1/2 c chopped almonds, optional
VODKA SYRUP:
1/4 c lemon vodka, or regular
1 c powdered sugar
1 c angel flake coconut
2 Tbsp lemon juice

Steps:

  • 1. Preheat oven to 350^. Spray and flour a 10-inch tube pan. Set aside. --- Cream butter, sugar, egg yolks, lemon rind and vanilla together in a mixer bowl until light and fluffy on medium speed.
  • 2. Combine cream cheese and vodka in a small bowl. Sift flour, baking powder,baking soda and salt into a separate bowl. Alternately add flour mixture and cream cheese mixture to butter mixture, beat well after each addition. Beat for 1 minute more, until mixture is light.
  • 3. Combine almond extract with egg whites; beat in a clean mixer bowl until stiff but not dry. Fold egg whites gently into cake batter along with the chopped almonds , if using.
  • 4. Pour batter into the prepared pan and bake for 50-55 minutes. Cool in pan on wire rack for 10 minutes, then turn out onto rack and cool completely. --- Syrup: Combine all ingredients for vodka syrup in a saucepan;except coconut. Cook over low heat for 5 minutes. Cool; pour in thin stream over cake. Sprinkle on coconut right away. Let stand 1 hour before serving.

GRILLED POUND CAKE WITH DRUNKEN BERRIES AND SYLLABUB

1 cup butter, plus more for the pan
2 cups granulated sugar
2 teaspoons vanilla extract
6 eggs
2 cups all-purpose flour, plus more for the pan
1 1/2 cups heavy cream
1/2 cup granulated sugar
1/4 cup sherry
1 tablespoon brandy
1 teaspoon vanilla extract
Zest from half a lemon
1 cup blueberries
1 cup raspberries
1 cup strawberries
1 1/2 cups red wine
1/4 cup granulated sugar
1/4 cup brown sugar
1/4 cup melted butter
Zest from half a lemon
Fresh mint leaves, finely chopped

Steps:

  • For the pound cake: Preheat the oven to 325 degrees F. In a large bowl, cream the butter and granulated sugar. Blend until the grains of sugar are no longer visible. Beat in the vanilla. Then add the eggs and flour alternately. Grease and flour 2 loaf pans or a 9- by 9-inch cake pan. Pour the batter into the pan(s) and bake for 1 hour. Then remove and let cool on a wire rack.
  • For the syllabub: In a large bowl, combine the heavy cream and granulated sugar. Whip with a whisk or hand mixer until the cream is whipped and fluffy. Slowly fold in the sherry, brandy, vanilla extract and lemon zest. Place the bowl in the refrigerator to set up.
  • For the berries: In a large bowl, combine the berries and wine. Add the granulated sugar and mix. Cover and let sit to bring to room temperature. (You can put it in the refrigerator, I just happen to like the berries at room temp. Whatever floats your boat.)
  • To serve: Preheat a grill, grill pan or broiler. Cut the pound cake into 1/2-inch thick slices. Stir the brown sugar into the warm melted butter. Brush both sides of the pound cake slices with the melted butter and brown sugar.
  • Place the slices on the hot grill or under the broiler. If using a grill, get grill marks on both sides. If using a broiler, get some golden brown color on both sides.
  • Cut the pound cake slices on a diagonal or in strips, and arrange in a creative way in the center of a dessert plate. Try and get some height. With a slotted spoon, ladle a good scoop of berries over the pound cake. Add a good dollop of syllabub on top of the berries, and dust with lemon zest and mint.

1/3 cup granulated sugar
1 & 1/2 to 2 teaspoons ground cinnamon
2 tablespoons unsalted butter
1 standard loaf-size pound cake, cut into 1-inch cubes*

Steps:

  • Place a sheet of waxed paper near your stovetop.
  • Combine the sugar and cinnamon in a bowl. Place near the waxed paper.
  • Melt the butter in a large skillet over medium heat.
  • Add several pieces of pound cake. Turn each piece over when the undersides are lightly toasted and continue toasting.
  • Once the batch of cake pieces are toasted, transfer them to the bowl of cinnamon sugar. Shake to cover and then transfer to the waxed paper.
  • Repeat steps 4 & 5 with the remaining cake pieces.
  • Serve warm or at room temperature.

BUTTERMILK "DUMP" POUND CAKE

No need to go through all the traditional steps in mixing up this simple, but delicious pound cake. Make it with the flavorings you like and make it your own.

1 cup shortening
2 cups sugar
3 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
3 eggs
1 cup buttermilk
2 teaspoons almond extract or 2 teaspoons orange extract (1 tsp each of any 2 flavorings you like etc.)

Steps:

  • DUMP all ingredients in large mixing bowl and mix with electric mixer on medium speed for 15 minutes.
  • Pour batter into greased Bundt or tube cake pan.
  • Put into COLD oven.
  • Set oven temperature at 325 degrees and bake for 1 hour 20 minutes, or until cake tests done.

1 teaspoon kosher salt
1/2 teaspoon baking soda
1 cup unsalted butter (2 sticks)
2 cups granulated sugar
1 cup dark brown sugar
4 eggs
1 cup buttermilk
1 teaspoon vanilla
1/4 teaspoon almond extract
1 orange, zest of
lemon, zest of
1/2 cup prune, coarsly chopped brandy soaked

Steps:

  • Heat oven to 325 degrees. Position rack in bottom third of the oven. Butter and flour a 9X3 inch tube pan, or spray with nonstick cooking spray.
  • In large bowl, whisk together the flour, salt, and soda. In the bowl of an electric mixer, cream the butter and sugars at medium high speed until light and fluffy, about 3 minutes. Beat in the eggs, one at a time, mixing well after each addition. Add the flour mixture alternately with the buttermilk. Mix in the extracts and zests, and fold in the prunes.
  • Bake for one hour, until the cake pulls away from the pan, and a toothpick inserted into the cake comes out clean.
  • To Make Brandy Soaked Prunes.
  • Empty a 16 ounce container of prunes into a clean, sealable glass jar and pour brandy over the top until it covers them by about an inch. Allow prunes to macerate at least one day before making cake. Kept in a cool, dark place, the prunes will keep for months.
