CHOCOLATE RIVER OVER DRUNKEN BERRIES

- Soak berries in liqueur for 20 minutes.
- Melt chocolate with cream and salt over low heat until smooth and combined.
- Remove berries to 2 dessert bowls with slotted spoon. Drown drunken berries in chocolate river, top with mounds of whipped cream and garnish with orange zest and chocolate shavings.

- Rinse and drain strawberries, then pour them into a large bowl or container.
- Pour the bubbly wine over the strawberries, adding enough so that they're submerged. Cover and let the strawberries soak in the fridge for at least 1 hour, or overnight.
- Pour cane sugar into a bowl or onto a plate.
- Remove the strawberries from the fridge. One by one, pat the strawberries dry, coat in the organic cane sugar, and place on a serving plate.
- Enjoy immediately! The berries will get soggy if they sit for a couple of hours.
DRUNKEN BERRIES
Beautiful summer dessert using fresh berries and a splash of pear liqueur. Enjoy a la carte or a la mode. Exceptionally lovely on the Fourth of July. Serve berries by themselves or over vanilla gelato, with a small amount of excess liquid - but it should not be a berry soup.

- Combine sugar with water in a saucepan over medium-high heat, stirring until the sugar has dissolved and the mixture comes to a boil. Reduce heat to low and simmer for 5 minutes; remove from heat and let stand 5 more minutes.
- Stir pear liqueur into the syrup and refrigerate for 1 hour.
- Gently combine strawberries, blueberries, and blackberries in a large bowl and pour syrup over the berries to coat. Allow berries to stand for about 3 hours to absorb flavors. Mixture can stand up to 3 days if desired.

- Combine the red wine, star anise, cinnamon stick, cloves, brown sugar and salt in a medium saucepan and bring to a boil over medium heat. Reduce the heat to medium-low and simmer for 15 minutes. Strain into a medium bowl. Add the berries and stir to combine. Cover and refrigerate until chilled, 2 hours.
- To serve, spoon some of the berries and mulled wine into a coupe glass. Top with a scoop of frozen yogurt and garnish with some freshly grated cinnamon.

- Measure the cassis into the base of a large serving bowl and stir in the strawberries. Pile the raspberries and blueberries on top and scatter over the sugar, but don't mix yet.
- Cover the bowl with cling film. Just before serving gently toss the berries and serve with a big jug of cream.

- Put the berries in a large heatproof bowl. Warm 200ml of the vin santo/marsala with 100ml water and the 100g sugar in a pan until the sugar has melted, then turn up the heat and bubble to form a thick syrup (about 15 minutes). Pour it over the berries and set aside for 5 minutes.
- Put the panettone into a 3 litre trifle dish. Using a slotted spoon, lift the fruit out of the syrup onto the panettone, spooning over some syrup (see Make Ahead). Chill.
- For the zabaglione cream, put the egg yolks in a large heatproof bowl with 75g of the caster sugar and the 100ml vin santo. Set the bowl over a pan of gently simmering water (don’t let the water touch the bowl) and whisk with an electric mixer for 10-15 minutes until the mixture is very thick and pale, and leaves a ribbon-like trail when you lift the whisk. Keep at it – it needs to be really thick. Remove from the heat, whisk for a few more minutes until it starts to cool, then leave to cool to room temperature.
- Put the remaining vin santo and sugar, the cream and mascarpone in a mixing bowl and whip to medium peaks. Using a balloon whisk, fold into the egg yolk mixture – it should be thick. If it’s too runny, whip 2-3 of the reserved whites to stiff peaks, then fold in.
