2 cups raw mixed nuts and seeds
Cinnamon
Coarse salt
1/3 cup raw sesame seeds

Steps:

  • In a food processor, pulse dried fruit; transfer to a bowl.
  • Pulse nuts and seeds until finely chopped and add to dried fruit with a dash of cinnamon and a pinch of salt.
  • Knead together and form 1-inch balls; roll each ball in sesame seeds.

1 cup PLANTERS Cashews
1 cup thin pretzel sticks
1 cup dried apricots
3/4 cup BAKER'S Rich Milk Chocolate Chunks
1/2 cup dried cranberries
2 Tbsp. each chia seed and ground flax seed
3 Tbsp. each maple syrup and milk

Steps:

  • Process oats, nuts and pretzels in food processor until finely ground.
  • Add all remaining ingredients except syrup and milk; process until blended. Add syrup and milk; pulse just until blended.
  • Roll into 24 (1-1/2-inch) balls.

A quick easy breakfast or snack that the kids love! Packed with protein and full of antioxidant-rich dried fruit and healthy nuts and seeds, these bites will be sure to please. I didn't follow the directions, of course, but ground up all the almonds and oats. It still came out great! I also ran out of rolled oats, so added oat bran. I think next time I'll also grind the sunflower seeds. Use any combination of dried fruits - any will be great! I also did not roll the balls in the almond/oat mixture, but just included it in the ball mix.

2 tablespoons sliced almonds, toasted
1 3/4 cups quick-cooking oats
1/3 cup dried apple, finely chopped
1/3 cup dried apricot, finely chopped
1/3 cup cranberries or 1/3 cup blueberries
2 tablespoons raw sunflower seeds
2 tablespoons unsweetened flaked coconut
1/2 teaspoon cinnamon
1/2 cup peanut butter (or any nut butter)
1/4 cup honey
1/2 teaspoon vanilla extract or 1/2 teaspoon almond extract

Steps:

  • Place almonds and 1/4 cup oats in bowl of food processor, process to fine crumbs.
  • In a large bowl, combine remaining oats, dried fruits, sunflower seeds, coconut and cinnamon.
  • Add peanut butter, honey and extract: combine well until mixture begins to stick together.
  • Use moist hands to form mixture into 1 inch balls, coat lightly with almond-oat mix.
  • Place in an airtight container, separating layer with parchment paper or plastic wrap.
  • Refrigerate at least 4 hours or overnight to allow oats to absorb moisture.

I found this recipe in a magazine years ago and use a different combination of nuts and fruits every time I make it, but dried apricots and pistachio nuts work well here. You might need to adjust the baking and drying times, depending on your oven. Enjoy!

7 tablespoons flour
5 tablespoons sugar
1 teaspoon baking powder
1 pinch ground cloves
1 teaspoon cinnamon
3 eggs
400 g mixed nuts and dried fruit (cut up but not too small)

Steps:

  • Sift the dry ingredients into a bowl.
  • Add eggs, nuts and fruit.
  • Mix well.
  • Put into a greased loaf pan and bake on 180 degrees for about 40 minutes.
  • Cool and turn out of pan.
  • Slice loaf as thinly as possible and layer on large oven tray.
  • Reduce oven to low temperature and place tray in oven to dry out biscotti for approximately another 40 minutes.

  • Portion mixture and roll into energy balls with hands. (I used a 1-Tbsp cookie scoop to help with portioning! I recommend pressing the mixture into a firm, level scoop before releasing it from the cookie scoop, and then shaping into a sphere with hands.)
