1/2 cup butter or margarine, melted
1 large onion, finely chopped (1 cup)
1 package (16 oz) herb-seasoned stuffing mix crumbs
2 medium red apples, chopped (2 cups)
1 1/2 cups dried cherries
1 cup chopped pecans
2 1/2 cups Progresso™ chicken broth (from 32-oz carton)

Steps:

  • Heat oven to 325°F. Grease 13x9-inch (3-quart) glass baking dish with shortening or cooking spray. In 8-inch skillet, melt butter over medium heat. Add onion; cook 4 to 6 minutes, stirring occasionally, until tender.
  • In large bowl, thoroughly mix cooked onion and remaining ingredients. Use 4 cups of the stuffing to fill body cavities of 12-pound turkey (do not pack stuffing because it will expand during roasting). Place remaining stuffing in baking dish. Cover with foil; refrigerate until ready to bake.
  • Roast stuffed turkey as directed in recipe. Bake stuffing in baking dish with turkey for the last 40 to 50 minutes of baking time or until thoroughly heated (165°F).

1 tablespoon chopped fresh sage
Kosher salt and freshly ground pepper
3 cups low-sodium chicken broth
2 large eggs
1/4 cup chopped fresh parsley
16 cups 1/2-inch stale brioche cubes (about 1 1/2 pounds)
1 cup dried cherries

Steps:

  • Preheat the oven to 375 degrees F and butter a 3-quart baking dish. Melt 8 tablespoons (1 stick) butter in a large pot or Dutch oven over medium-high heat. Add the celery, leeks, apples, chestnuts, thyme, sage, 1 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the vegetables are tender, about 5 minutes. Add the chicken broth and bring to a simmer, then remove from the heat and set aside.
  • Whisk the eggs and 3 tablespoons parsley in a large bowl. Add the bread cubes, dried cherries and the vegetable mixture; stir to combine. Transfer the stuffing to the prepared baking dish. WILD RICE, DRIED CHERRY, AND ALMOND STUFFING



Wild Rice, Dried Cherry, and Almond Stuffing image

1 cup dried cherries (about 4 ounces)
2/3 cup tawny or ruby port
2 cups (11 ounces) wild rice, rinsed
2 tablespoons butter (plus 3 tablespoons butter if making ahead)
3 medium celery ribs, finely chopped, plus 1/3 cup finely chopped celery leaves
1/2 cup minced shallots
1 cup (4 ounces) toasted slivered almonds
4 teaspoons chopped fresh sage or 2 teaspoons dried
3/4 teaspoon salt
1/2 teaspoon freshly milled black pepper
1/4 cup homemade turkey stock or reduced-sodium chicken broth

Steps:

  • In a small bowl, mix the dried cherries and port and let stand while preparing the stuffing.
  • Bring a large pot of lightly salted water to a boil over high heat. Add the wild rice and reduce the heat to medium. Cook until the wild rice is tender and most of the grains have burst, 45 to 60 minutes. Drain well and rinse under cold running water. Place the rice in a large bowl.
  • In a large skillet, melt the butter over medium heat. Add the chopped celery and cook until crisp-tender, about 5 minutes. Add the shallots and celery leaves and cook until softened, about 2 minutes. Add the cherries and their soaking liquid. Boil until the port has almost completely evaporated, about 3 minutes. Stir the mixture into the wild rice, along with the almonds, sage, salt and pepper. (The stuffing can be prepared up to 1 day ahead, stored in self-sealing plastic bags and refrigerated. To reheat the stuffing, melt 3 tablespoons unsalted butter over medium heat in a large skillet or Dutch oven. Add the stuffing and cook, stirring often, until warmed.
  • Use to stuff the turkey. Place any remaining dressing in a buttered baking dish, cool, cover, and refrigerate. To reheat, drizzle with about 1/4 cup broth and bake in a preheated 350 degree oven for about 20 minutes.

Juice of 1/2 lemon
2 tablespoons sugar
1/3 cup dried tart cherries
1 cup old fashioned rolled oats (NOT instant)
1/2 cup all purpose flour
1/4 cup sugar
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 cup neutral flavored oil, such as canola or grapeseed
1/4 cup pure maple syrup
1/4 cup raw chopped pecans

Steps:

  • Preheat the oven to 350 F. Oil a deep 8 x 10-inch (or similarly sized) baking dish.
  • In a large bowl, toss the apples with the lemon juice, sugar, and dried cherries. Transfer to the baking dish.
  • In another bowl, whisk together the oats, flour, sugar, cinnamon, and ginger. Add the oil and maple syrup, and stir until the oat mixture is moistened. Stir in the pecans.
  • Sprinkle the topping evenly over the apples. Bake the crisp in the preheated oven for 45 to 50 minutes, or until the fruit filling is bubbly and the crisp topping is golden brown and crunchy. 3/4 cup fresh flat-leaf parsley, chopped

Steps:

  • Melt the butter in a skillet over medium heat.
  • Cook the celery and onions until translucent; about 5-7 minutes.
  • In a large bowl combine the celery and onions with the bread, cherries, sausage, parsley, salt and pepper.
  • Add the broth and stir well until combined.
  • Loosely stuff the mixture into your turkey just before roasting.

6 cups unseasoned cubed bread (stuffing)
1 lb bulk pork sausage
1/2 cup butter
2 chopped onions
4 stalks of chopped celery
2 1/2 tablespoons of crumbled sage leaves
1 1/2 teaspoons crumbled thyme leaves
1 cup dried cherries (purchase them dried...I couldn't find them so I used Craisins (dried cranberries cherry flavored)
1 cup toasted and chopped walnuts
1 cup chicken broth
salt and pepper

Steps:

  • In skillet, sauté the sausage, until brown.
  • Drain grease and transfer to bread bowl.
  • In same skillet, melt stick of butter, sauté all of the vegetables for 10 minutes until soft.
  • Remove vegetables and place in bowl.
  • Combine the sausage, vegetables, cherries, bread cubes and rest of ingredients EXCEPT the chicken broth.
  • Add just enough chicken broth to moisten the bread mixture.
  • You do not want it soaking wet.
  • If packing the turkey, stuff the neck and cavity loosely with stuffing, folding the neck skin under and fastening with skewer.
  • If not, lightly pack stuffing into a large, shallow baking dish.
  • If you bake the stuffing inside the bird, roast the bird at 325 degrees for 15 minutes per pound or until the temperature of the bird reaches 170 degrees and the juices run clear when the thigh is pierced with fork.
  • Let turkey rest at least 20 minutes before carving.
  • If you bake in separate dish, drizzle the stuffing with alittle bit of stock.
  • Cover and bake at 325° for 20 to 30 minutes.
  • Uncover and back for an additional 10 minutes.

1 pound bulk sausage meat (usually sold in a tube)
1 stick (1/2 cup) unsalted butter, cut into tablespoon pieces
3 medium onions, chopped
4 large celery ribs, chopped
3 garlic cloves, minced
1/2 teaspoon allspice
Salt
Freshly ground black pepper
3/4 cup dried tart (Morello) cherries (4 ounces; see Cooks' note:s)
4 large eggs
1 1/2 cups turkey stock or reduced-sodium chicken broth
1 cup heavy cream
3/4 cup coarsely chopped flat-leaf parsley

Steps:

  • Heat oven to 350°F with rack in middle. Generously butter baking dish.
  • Roast pecans in a pie or cake pan until fragrant and insides are pale golden, 8 to 10 minutes. Let cool, then coarsely chop.
  • Divide bread between 2 large baking sheets and bake, switching position of sheets halfway through baking, until golden, 15 to 25 minutes.
  • Meanwhile, heat oil in a 12-inch heavy skillet over medium-high heat until it shimmers, then cook sausage, stirring and breaking up lumps, until browned, about 5 minutes. Transfer sausage to a very large bowl.

  • Preheat the oven to 250 degrees F (120 degrees C).
  • Slice bread and discard ends. Arrange bread slices on the rack of the preheated oven.

1 teaspoon salt

1 large onion, finely chopped (1 cup)
1 package (16 oz) herb-seasoned stuffing mix
2 medium red apples, chopped (2 cups)
1 1/2 cups dried cherries
1 cup chopped pecans
2 1/2 cups Progresso™ chicken broth (from 32-oz container)
1/2 cup cherry preserves or jam
1/4 cup ruby port or chicken broth

Steps:

  • Heat oven to 325°F. Grease 13x9-inch (3-quart) glass baking dish with shortening or cooking spray; set aside. Remove and discard neck and giblets from turkey. Rinse turkey inside and out with cold water; pat dry with paper towels. In small bowl, mix sage, salt and pepper; rub into turkey skin.
  • In 8-inch skillet, melt butter over medium heat. Add onion; cook 4 to 6 minutes, stirring occasionally, until tender. In large bowl, thoroughly mix cooked onion and remaining stuffing ingredients.
  • Turn turkey breast side down. Fill neck cavity lightly with 1 cup of the stuffing (do not pack stuffing because it will expand during roasting). Fasten neck skin of turkey to back with skewer.
  • Turn turkey breast side up. Fold wings across back of turkey so tips are touching. Fill body cavity lightly with 3 cups of the stuffing (do not pack stuffing because it will expand during roasting). Place remaining stuffing in baking dish. Cover with foil; refrigerate until ready to bake. Tuck legs under band of skin at tail (if present), or tie together with heavy string.
  • On rack in shallow roasting pan, place turkey, breast side up. Insert ovenproof meat thermometer so tip is in thickest part of inside thigh and does not touch bone.
  • Cover turkey loosely with foil or roaster cover; roast 3 hours. Meanwhile, in small bowl, mix glaze ingredients; set aside.
  • Uncover turkey and place foil-covered baking dish with stuffing in oven. Roast 45 minutes to 1 hour 30 minutes longer, brushing turkey with glaze frequently, until thermometer reads 165°F and drumsticks move easily when lifted or twisted. Thermometer inserted in center of stuffing in turkey should read 165°F. Remove baking dish with stuffing from oven after 40 to 50 minutes of baking time or when thoroughly heated (165°F).
  • Place turkey on warm platter; cover with foil to keep warm. Let stand about 15 minutes for easiest carving. Cover and refrigerate any remaining turkey and stuffing separately.

5 cups seasoned stuffing cubes
3/4 cup golden raisins
3/4 cup chicken broth
1 can (14-1/2 ounces) pitted tart cherries, drained
1 turkey (10 to 12 pounds)
2 tablespoons vegetable oil

Steps:

  • In a saucepan, saute celery and onion in butter until tender. Stir in thyme and poultry seasoning. In a large bowl, combine stuffing, raisins and celery mixture. Add broth and cherries; toss to mix., Loosely stuff turkey just before baking. Skewer openings; tie drumsticks together. Place the turkey, breast side up, on a rack in a roasting pan. Brush with oil. , Bake, uncovered, at 325° for 4 to 4-1/2 hours or until a thermometer reads 180° for the turkey and 165° for the stuffing. Baste occasionally with pan drippings. Cover loosely with foil if turkey browns too quickly. , Cover and let stand for 20 minutes before removing the stuffing and carving the turkey. If desired, thicken pan drippings for gravy.

Pork and tart dried cherries make a great meal for a cool fall evening. Prepare your salad or other side while this casserole finishes in the oven.

1 Pink Lady apple, cored and finely chopped
1 cup low-sodium chicken broth
1 cup dried tart cherries
⅔ cup chopped English walnuts
1 (6 ounce) package herb-seasoned dry bread stuffing mix
½ cup finely diced celery
½ cup finely diced onion
3 tablespoons melted butter
6 3/4-inch thick boneless pork loin chops
1 tablespoon olive oil
½ teaspoon salt, or to taste
¼ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 2 1/2-quart casserole dish.
  • Mix apple, chicken broth, cherries, walnuts, stuffing mix, celery, onion, and melted butter together in a large bowl; transfer to the prepared casserole dish.
  • Season pork chops with salt and black pepper.
  • Heat olive oil in a large, non-stick skillet over medium-high heat. Cook pork chops in hot oil until browned on one side, 2 to 3 minutes. Arrange the chops atop the stuffing mixture with the browned side facing up; press into the stuffing. Cover dish with aluminum foil.
  • Bake in preheated oven for 25 minutes. Remove aluminum foil and continue baking until pork chops are cooked through, about 10 to 15 minutes more. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
