- Preheat oven to 350 degrees F (175 degrees C). Lightly grease one baking sheet.
- Saute vegetables in butter until soft.
- Break up cornbread and the biscuits into a very large mixing bowl. Mix in the sauteed vegetables and seasonings to taste. Add lots of turkey broth until very moist and will hold it's shape when formed. Shape into patties and place on the prepared baking sheet. Bake at 350 degrees F (175 degrees C) until lightly browned.

- Mix all ingredients. Shape into 12 patties, using about 1/3 cup stuffing mixture for each patty. Refrigerate 10 min.

Steps:
- 1. Shape leftover dressing into patties. If dressing is moist, you won't need to add anything--they should shape right up easily. If they are too dry to hold together, beat in an egg or a little milk.
- 2. Coat the patties in flour. Heat butter or oil in a large skillet and add the patties, one at a time. Cook on one side over medium heat, about five or ten minutes. Turn patties once and cook on other side.
- 3. When golden brown, remove to a paper towel to drain. Serve plain or with leftover gravy.

- Preheat the oven to 325 degrees F. Bring broth and fat to a boil in a large saucepan over medium-high heat (or combine broth and fat in a microwave-safe bowl and heat at high power until boiling). Remove from heat (or remove from the microwave). Add stuffing mix, onion and celery. Toss lightly with a fork until all ingredients are moistened. Shape into palm-size patties, about 3 to 4 inches in diameter, indenting the center. Place on an ungreased cookie sheet. Bake for 30 minutes or until brown and crispy. Fill the indentations with hot turkey gravy.

I had some leftover turkey, dressing and gravy and I didn't want the same old boring leftovers. This is what I came up with. This can be doubled very easily. You can even use chicken instead. For the dressing use your favorite. Posted August 29th 2005.

- Mix together turkey, dressing, and enough gravy to hold mixture together. If needed add enough bread crumbs to be able to make patty shaped.
- In a medium sized skillet, heat oil until hot but not smoking.
- Shape turkey mixture into two patties.
- Add to skillet, fry until golden brown, about 5 minutes on each side.
- Remove to serving plate, add rest of warmed up gravy over patties.

POTATO PATTIES | FRIED POTATO CAKES
Steps:
- In a large mixing bowl, mix together the cold mashed potatoes and the egg. Make sure the egg is evenly distributed through the potatoes.
- Add the grated onion, flour, salt, and pepper and use a fork to gently mix in the ingredients.
- Add enough oil to a large fry pan so that it is approximately 1/2" deep and place over medium heat. Allow the oil to come to temperature, about 350°F.
- Scoop scant 1/2 cups of the potato mixture and gently drop them into the hot oil. Do not overcrowd the pan -- cook no more than 3-4 patties at a time. Gently, flatten each mound into a patty shape with a spatula.
- Fry for about 2 1/2 to 3 minutes on the first side, until golden brown. Then, slide the spatula under the patty and turn it over. You'll find enlisting a second utensil makes the flip a bit easier! Then, cook for another 2 to 2 1/2 minutes.
- Transfer the cooked patty to a cooling rack placed over paper towels. Allow to cool slightly, serve, and enjoy!

I got this recipe from a Starkist tuna recipe booklet and it's so good. I think the Ranch dressing and cheese make them extra good.

- Set aside 3/4 cup of the breadcrumbs.
- Combine all ingredients, except oil and reserved breadcrumbs.
- Form 8 patties, coating each side with the reserved bread crumbs.
- Heat appx.
- 1 tbl.
- oil in nonstick skillet over medium heat.
- Cook 4 patties for 4-5 minutes on each side.
- You may need to add additional oil when you're frying them.
- Add more oil and cook remaining 4 tuna patties.
- Serve immediately.

ASIAN SALMON PATTIES
Steps:
- In a large bowl, gently combine salmon, shallots, ginger, egg, red-pepper flakes, 1 teaspoon salt, and 1 teaspoon pepper. Form mixture into eight equal patties, about 1 inch thick, packing each firmly; transfer to a plate. Freeze until just firm, about 20 minutes.
- Heat a large nonstick skillet over medium-high. Cook salmon patties (working in batches, if necessary) until browned on both sides and just opaque throughout, 4 to 6 minutes per side. Serve with lime wedges and sesame mayonnaise.
- Sesame Mayonnaise
- In a small bowl, stir together mayonnaise, scallions, lime juice, and sesame oil. Cover and chill until ready to serve, up to 3 days.
- Chinese Noodles with Sesame Dressing
- Bring a pot of water to a boil. Cook noodles until tender according to package instructions. Drain; rinse under cold water until completely cool. Transfer to a large bowl; toss with vegetable oil.
- In a small bowl, whisk together lime juice, soy sauce, sesame oil, brown sugar, and red-pepper flakes; whisk in cilantro. Pour over noodles; season with salt and pepper, and toss to coat.

- If your leftover stuffing or dressing has big chunks, gently chop into smaller pieces. Course crumb to pea sized should work well.
- Then add in a couple slightly beaten eggs and flour. Start off with the smaller range of measurements. Then add more eggs or flour as needed. The stuffing should hold together in a small ball when the consistency is correct.
- Next, take a small handful of the stuffing mixture (about 1/4 to 1/3 cup) form into a ball and then flatten into a patty.
- In a skillet, pour 2-3 Tbsp of oil and heat over medium. Once the oil is hot enough, place a couple patties into the skillet. Once browned, gently flip and allow the other side to brown.

- The night before making this recipe, you get 2 loaves of white sandwich bread and tear it into very small pieces into 2 of the largest bowls you have so that it can get stale overnight.
- The next day,preheat your oven to 350 degrees. Chop your celery and onion very fine and saute for 5 minutes in 1 whole stick of butter. After the celery and onion are softened, pour the celery, onion, butter mixture over the bread crumbs. Add the pimentos (undrained), sage, salt, black pepper, cheese and chicken broth. After you start combining the ingredients, the bread crumbs will shrink down to where you can combine both large bowls of bread crumbs into one. After you have thoroughly combined it, start shaping the dressing into biscuit sized patties. Spray a cookie sheet with pam and put about 8 dressing patties on the cookie sheet to bake for about 30 minutes. You want it to be a little crispy on the bottom. We usually get about 4 cookie sheets of patties out of this recipe, baking one batch after another until they are all done. So around 32 patties. You could definitely half this recipe, but I dont know why anyone would want to. The leftovers are even better.
