CARAMELIZED ONION DIP

Make the perfect chip dip by cooking the onions until they are golden and delicious.

3 tablespoons extra-virgin olive oil
2 onions, diced
1 tablespoon fresh thyme leaves, coarsely chopped
1 1/4 cups sour cream
1/2 cup mayonnaise
1 tablespoon Worcestershire sauce
Kosher salt and freshly ground black pepper
1 tablespoon chopped fresh chives, for serving
Potato chips, for serving

Steps:

  • Heat the oil in a large skillet over medium heat. Add the onions and thyme and cook, stirring occasionally, until the onions are very soft and brown, about 20 minutes, reducing the heat to medium-low if the onions brown too quickly. Set aside to cool to room temperature.
  • Meanwhile, stir together the sour cream, mayonnaise and Worcestershire sauce and season with salt and pepper. Add the onion mixture and stir until well combined. Cover and chill for at least 1 hour or up to overnight. The dip can be made up to 3 days ahead and refrigerated in an airtight container. When ready to serve, scatter the chives over the top and serve with potato chips.

This is a dressed up version -- no onion soup mix here. From Erin Bailey of La Pomme de Pin by way of the Chicago Tribune. Needs a good twelve hours in the fridge for the flavors to ripen and then it should be brought to room temperature before serving (thus the long prep time).

1 tablespoon olive oil
1 tablespoon unsalted butter
2 yellow onions, peeled, sliced
2 red onions, peeled, sliced
1 teaspoon salt
fresh ground pepper
2 tablespoons balsamic vinegar
1 cup goat cheese
1 cup creme fraiche
1 tablespoon fresh thyme, chopped

Steps:

  • Heat the oil and butter in a large skillet. Add the onions, 1/2 teaspoons of the salt and pepper to taste; cook, stirring occasionally, until onions are caramelized, 20-30 minutes.
  • Add the balsamic vinegar, stirring up browned bits from the bottom of the skillet.
  • Combine the onions with the goat cheese, creme fraiche, thyme, the remaining 1/2 teaspoons of the salt and pepper to taste in a medium bowl.
  • Stir, allowing the warm onions to help melt the goat cheese.
  • Cover; refrigerate at least 2 but preferably 12 hours.
  • Let stand before serving to slightly soften and take the chill off.

1 1/2 cups diced onions
1/4 teaspoon kosher salt
1 1/2 cups sour cream
3/4 cup mayonnaise
1/4 teaspoon garlic powder
1/4 teaspoon ground white pepper
1/2 teaspoon kosher salt

Steps:

  • In a saute pan over medium heat add oil, heat and add onions and salt. Cook the onions until they are caramelized, about 20 minutes. Remove from heat and set aside to cool. Mix the rest of the ingredients, and then add the cooled onions. Refrigerate and stir again before serving.

ROASTED ONION DIP

1 red onion, roughly chopped
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
One 8-ounce package cream cheese, room temperature
1/2 cup sour cream
1/4 cup finely grated Parmesan
2 tablespoons mayonnaise
1 teaspoon Worcestershire sauce
2 tablespoon thinly sliced chives, plus a pinch for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Add the onions to a foil-lined baking sheet, drizzle with olive oil and sprinkle with salt and pepper. Toss everything together. Transfer to the oven and roast for 35 minutes, or until the onions are tender and golden. Set aside to cool completely.
  • In a stand mixer fitted with a paddle attachment, combine the cream cheese, sour cream, Parmesan, mayonnaise, Worcestershire, chives and the roasted onions. Beat until light and fluffy and well-combined. Scrape the mixture into a serving bowl using a rubber spatula. Sprinkle the remaining chives over the top and serve.

EVERYTHING ONION DIP

This onion dip is made with everything onions and is everything you'd ever want in an onion dip. Yellow, red, and green onions join savory shallots, flavorful chives, and the key ingredient, dried onion, which makes it taste like the French onion dip of your childhood. You can serve this dip with anything and everything, but if you have to pick, serve it with some sturdy, top-shelf potato chips for any big game or party. And if you're lucky enough to have leftovers, it makes the best baked potato topping!

1 medium yellow onion
2 tablespoons olive oil
1 teaspoon kosher salt, or more to taste
½ cup minced shallots
½ cup diced red onions
½ teaspoon granulated garlic
1 tablespoon minced dried onion
¾ cup mayonnaise
2 cups sour cream
¼ teaspoon freshly ground black pepper
⅛ teaspoon cayenne pepper
⅓ cup thinly sliced green onions, or more to taste
¼ cup thinly sliced fresh chives, or more to taste

Steps:

  • Cut both ends off the yellow onion and cut evenly into 2 halves. Remove and discard skin. Place onion halves on a cutting board with cut-sides down. Make vertical slices against the grain, then turn and slice across the cuts to chop. Chop again if you'd like smaller pieces. You should have about 2 cups chopped onion.
  • Heat olive oil in a large skillet over high heat. Transfer onion and salt into the hot oil. Cook until onions are deep brown in color, 7 to 8 minutes. Add shallots and red onions; stir and saute until they start to soften and sweeten, 3 to 4 minutes. Turn off the heat and stir in garlic and dried onion. Set aside to cool completely, about 20 minutes.
  • Combine mayonnaise, sour cream, pepper, cayenne, and cooled onion mixture; mix until thoroughly combined. Cover and chill in the refrigerator for 4 to 12 hours, or overnight.
  • Remove dip from the refrigerator and stir in green onions and chives. Taste and adjust seasoning. Transfer dip into a serving bowl and garnish with more green onions and chives to serve.
