CREAMY DREAMY BACON CARBONARA
This recipe is a bit different for me. I'm usually a red sauce kind of gal. But the picture looks so yummy I had to adopt this and tweak it just a bit. Recipe: Guest & photo by Emma 07-06-14

Steps:
- 1. Cut the bacon into approximately 1/2" strips and fry over medium heat.
- 2. In the meantime, cook the fettuccine according to package directions.
- 3. When the bacon is almost done, add the garlic and cook about 1 minute. Add the cream and salt and pepper to the pan with bacon and garlic. Simmer until thick and creamy.
- 4. Whisk together the eggs and Parmesan in a small bowl.
- 5. When the pasta is cooked, drain and add it to the pan with the bacon and cream sauce. Stir to combine. Add the egg and Parmesan to the pan and stir again. Serve immediately with more Parmesan sprinkled on top, if desired.
DREAMY SPAGHETTI CASSEROLE
Tasty casserole, different way to fix the same old spaghetti. Serve with garlic bread and salad and dinner is served. Cook time does not include chilling time.

Steps:
- Brown ground beef with onion, green pepper and garlic.
- Drain and add tomato sauce.
- In 2 qt casserole, spread 1/2 of the spaghetti.
- Mix together the sour cream, cream cheese and cottage cheese.
- Cover the spaghetti layer with the cheese mixture.
- Top with remaining spaghetti.
- Drizzle melted butter over all.
- Cover with the hamburger sauce mixture.
- Chill for at least 1 hour.
- Remove from refrigerator at least 20 minutes before baking.
- Bake at 350 for 45 minutes.

- Cook spaghetti until just tender, not well done. Brown ground chuck in 1 tbsp butter. Add salt, pepper and tomato sauce. In a bowl, combine cottage cheese, cream cheese, sour cream, and onion. Drain spaghetti. Using a 2 qt. casserole, place spaghetti in the bottom; add ½ mixture of cheeses and ½ of the meat. Add remaining mixture in the same order with meat mixture on top. Pour 2 tbsp. melted butter over top and bake uncovered at 350 degrees for 30 minutes. *May be doubled, tripled, or frozen. *I used 2 14 oz. cans of tomato sauce (or one large can) and 16 oz. cottage cheese. Use a 9x13 pan and only do one layer.

- Preheat oven to 350*F.
- Spray a small casserole dísh wíth cookíng spray. Set asíde.
- In a small saucepan, over medíum heat, whísk together flour and salt and pepper. Slowly whísk ín mílk untíl smooth. Cook and stír untíl thíckened.
- Remove from heat and stír ín Tex-Mex cheese untíl melted and smooth.
- ín a bowl, stír the cheese sauce ínto the cooked spaghettí squash untíl well combíned. Spread ín prepared casserole dísh.
- Sprínkle wíth the green pepper, oníon, peas, and Parmesan cheese.
- Bake at 350 for about 20 mínutes, untíl cheese ís melted and squash ís heated through.
- Remove from heat and enjoy the entíre dísh for 220 caloríes, 9 fat, 20 carbs, and 17 proteín.

CREAMY HAM, LEEK & MUSHROOM SPAGHETTI

- Heat the oil in a large saucepan. Stir in the leeks, 2 tbsp water and some seasoning, cover, then cook for 5 mins over a medium heat until softened. Add the mushrooms and garlic, then cook for 3 mins more. Meanwhile, cook the spaghetti according to pack instructions, then drain, reserving a little of the cooking liquid.
- Stir the soft cheese into the leek and mushroom mixture, adding enough of the reserved pasta liquid to give a sauce-like consistency. Add the ham, basil leaves and Parmesan, then toss in the spaghetti.
