This recipe came from Whitefish, Montana and was given to me years ago by a dear friend. It had been passed down from her family for generations. I love the fragrance and flavor of lemons. This is by far the easiest and best tasting lemon bar I have come across. I have made it for bake sales, gifts, and simply to serve, and I always have requests for the recipe.

Number Of Ingredients 14

2 cups flour
1 cup butter, softened
1/2 cup powdered sugar
4 eggs
6 tablespoons lemon juice (fresh or bottled)
1 lemon, juice and zest of
6 tablespoons flour
2 cups granulated sugar
1 teaspoon baking powder
2 cups finely shredded coconut
1/2 cup butter, softened
2 tablespoons lemon juice (fresh or bottled)
1 teaspoon vanilla
3 cups powdered sugar (or more if needed to create spreading consistency)

Steps:

  • For Crust: In medium sized bowl, stir together flour and powdered sugar.
  • Cut in butter with pastry blender or the tines of two forks. Press into greased 10x15x1 pan. Bake in 350 degree oven for 10-15 minutes.
  • For Filling: Beat together eggs, lemon juice, zest and juice of fresh lemon, flour, sugar, baking powder and coconut. Mix well and pour over hot crust. Return pan to oven and bake uncovered for 25 minutes or until golden brown. Cool completely on wire rack.
  • For Frosting: Beat together butter, lemon juice, vanilla and powdered sugar. Spread over filling when cool.
  • Cut into bars & serve. Store covered.

It's tough to top a classic lemon bar, but we've done it! We kept the tender, buttery crust and bright filling of the original, and made a few improvements. For our luscious lemon layer, we employed a unique double-cooking method. Simmering first on the stovetop like lemon curd allows us to add butter, which balances the tart and sweet elements and adds a richer, smoother texture.

Nonstick cooking spray
1 3/4 cup all-purpose flour (see Cook's Note)
1/4 cup cornstarch
1/4 cup confectioners' sugar
1/2 teaspoon kosher salt
2 sticks (1 cup) cold unsalted butter, cut into small pieces
4 large eggs
2 large egg yolks
1 3/4 cup sugar
1/3 cup all-purpose flour
1/4 teaspoon kosher salt
1 cup fresh lemon juice (from 6 to 8 lemons)
1 teaspoon finely grated lemon zest
1 stick (8 tablespoons) cold unsalted butter, cut into small pieces
1 tablespoon confectioners' sugar, for dusting

Steps:

  • Preheat the oven to 350 degrees F. Line a 9-by-13-inch baking pan with foil, leaving an overhang on 2 sides; spray lightly with nonstick cooking spray. Set aside.
  • For the crust: Add the flour, cornstarch, confectioners' sugar and salt to the bowl of a food processor and pulse 10 times until combined. Add the cold butter and pulse until the mixture looks like coarse sand, about 30 times. (The dough will not come together in one mass.) Sprinkle the mixture evenly in the prepared pan and lightly pat it down. Bake, rotating the pan halfway through, until golden brown around the edges, 20 to 25 minutes.
  • For the filling: Combine the eggs, yolks, sugar, flour, salt and lemon juice in a medium saucepan. Whisk continuously over medium heat, occasionally scraping down the sides and edges of the pan with a rubber spatula, until simmering and thickened, 4 to 5 minutes. Remove from the heat and whisk in the lemon zest and butter until combined.
  • Lower the oven temperature to 300 degrees F. Pour the filling over the crust and bake until just set, 12 to 15 minutes.
  • Place on a wire rack to cool to room temperature, then refrigerate until cold, about 2 hours.
  • Use the foil overhang to lift the bars from the pan. Remove the foil and slice into squares. Dust with confectioners' sugar just before serving.

These bright and zingy lemon bars are easy to make and so delicious!

3 cups all-purpose flour (360g, divided 2 1/2 cups for crust and 1/2 cup for filling)
2/3 cups powdered sugar (66g, for the shortbread, plus more for dusting)
1/2 tsp salt
12 tbsp unsalted butter (melted, 170g)
3 tbsp lemon zest (zest of three lemons)
3 cups sugar (600g)
8 eggs (large, room temperature)
1 cup lemon juice (fresh, 240mL)

Steps:

  • Heat oven to 350F and line a 9x13 baking dish with parchment paper.
  • Whisk together 2 1/2 cups of flour (300g) with the powdered sugar and salt, then pour in the melted butter and mix until combined. You can also do this using a stand mixer with a paddle attachment. If you'd like a dash of vanilla can be added in with the butter at this step.
  • Sprinkle the dough into your lined pan and press down into a flat layer. Bake at 350F for about 20 minutes or until a light golden color.
  • While the crust is baking add the sugar to a food processor and add the zest of three lemons. Pulse until the zest is fully incorporated and sugar is a light yellow color. If you don't have a processor just mince the zest and mix with the sugar in a bag or bowl.
  • Add the sugar and remaining half cup of flour to a large bowl and mix well. You can sift together however and zesty sugar bits will need to get dumped out of the sifter as they might clog things up and not go through.
  • Pour in the lemon juice and add the eggs then mix very well until completely combined.
  • Pour the filling onto the warm crust then transfer to oven and bake for about 25 minutes, turning halfway through the bake. Remove from oven and allow to cool for an hour before chilling in the refrigerator for two hours.
  • Dust with powdered sugar and cut into bars using a clean, sharp, damp knife. Clean and re-wet the knife after each cut.

3 Tbsp fresh lemon juice
zest of a lemon

Steps:

  • 1. for the lemon bar crust: In a bowl mix the crust ingredients until crumbly. And then press onto a 8x8 inch pan. Bake at 350 for 20 minutes.
  • 2. In a large bowl beat eggs sling with juice, zest, flour, sugar and baking powder pour the lemon filling on top of crust. Return to oven for 20-25 minutes until set. Dust with powered sugar while it's out of the oven let cool. Cut into squares and enjoy

FILLING
2 large eggs, lightly beaten
1 cup packed brown sugar
1 teaspoon vanilla extract
2 tablespoons all-purpose flour
1/2 teaspoon salt
1 cup sweetened shredded coconut
1 cup chopped walnuts

Steps:

  • In a small bowl, combine flour and brown sugar; cut in butter until crumbly. Pat into a 13x9-in. baking pan. Bake at 350° for 10 minutes. , Meanwhile, in a bowl, beat eggs and brown sugar; stir in vanilla. Combine flour and salt; add to egg mixture. Fold in coconut and walnuts. Spread over baked crust. Return to oven and bake 20-25 minutes longer or until golden brown. Cool on a wire rack.

⅓ cup butter
1 cup all-purpose flour
2 tablespoons white sugar
2 eggs, beaten
½ cup packed brown sugar
¾ cup flaked coconut
½ cup chopped walnuts
¼ teaspoon salt
¼ teaspoon baking powder
½ teaspoon vanilla extract
2 teaspoons lemon zest
2 tablespoons lemon juice
1 cup sifted confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees).
  • In a medium bowl, stir together the 2 tablespoons of sugar with the 1 cup of flour. Cut in the 1/3 cup of butter until mixture is coarse crumbs. Press firmly into the bottom of a 9x9 inch baking pan. Bake for 10 to 15 minutes in the preheated oven. Set aside to cool.
  • In the same bowl, stir together the sugar, salt, and baking powder. Add the eggs and vanilla, mix well. Stir in the coconut and chopped nuts until everything is coated. Spread the mixture evenly over the baked crust. Return to the oven to bake for an additional 25 to 30 minutes.
  • To make the icing, combine the lemon zest, lemon juice and confectioners' sugar. Beat until smooth. Pour and spread over the top of the bars as soon as they come out of the oven. Cool for 15 minutes before cutting into bars.
