Categories     side-dish

Time 35m

Yield 4 servings

Number Of Ingredients 7

1 tablespoon olive oil
2 tablespoons unsalted butter
4 cloves garlic, grated or minced
1 pound fresh green beans, ends trimmed
Kosher salt and freshly cracked black pepper
1/2 cup chicken stock
Juice from 1/2 lemon

Steps:

  • Heat the oil and 1 tablespoon butter in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute. Add the green beans, then season with salt and pepper and stir to combine.
  • Add the stock, then bring to a simmer and cover the skillet. Cook until the green beans are bright green and just slightly tender, about 5 minutes. Uncover the skillet and cook until the liquid evaporates and the green beans are tender, 10 minutes more. Stir in the lemon juice and remaining tablespoon butter and season with additional salt and pepper.

STIR-FRIED GREEN BEANS WITH PORK AND CHILES

Stir-Fried Green Beans With Pork and Chiles image

In this fast, piquant weeknight meal, ground pork and green beans are stir-fried with plenty of ginger, garlic and chiles, and seasoned with soy sauce and coriander seeds. A big splash of rice-wine vinegar right at the end adds a hit of acidity, which balances the pork's richness. Serve this over rice or rice noodles to help absorb all the salty, spicy sauce. Slices of fresh tomato add a sweet juiciness that works well here. But if you don't have a ripe tomato, feel free to leave it out.

Time 20m

Yield 4 servings

Number Of Ingredients 14

2 tablespoons neutral oil, such as peanut, sunflower or grapeseed, plus more if needed
1 pound ground pork
1 teaspoon kosher salt
8 ounces green beans, cut into 1/2-inch lengths
2 red chiles, seeded or not, thinly sliced
1 tablespoon freshly grated ginger
5 garlic cloves, minced
1 teaspoon coriander seeds, lightly cracked with a mortar and pestle or with the side of a knife
1/4 cup cilantro leaves and tender stems, chopped, plus more for serving
3 tablespoons rice-wine vinegar, plus more for serving
4 teaspoons soy sauce, plus more to taste
1/2 teaspoon sugar
Cooked white rice or rice noodles, for serving
Sliced tomato, for serving (optional)

Steps:

  • Heat a 12-inch skillet or wok over medium-high heat for 1 minute, then add the oil and let heat for another 30 seconds - it should be hot but not smoking. Stir in pork and 3/4 teaspoon salt, and cook, breaking up meat with a spoon, until browned and crisp, 6 to 9 minutes. Transfer to a plate.
  • Return pan to heat and add more oil if it looks dry. Stir in green beans, cook until they are crisp, tender and bright green, 1 to 3 minutes. Stir in chiles, ginger, garlic, coriander seeds and remaining 1/4 teaspoon salt. Cook, stirring frequently, until fragrant, about 1 minute longer.
  • Return pork to skillet, along with chopped cilantro, vinegar, soy sauce and sugar. Stir briefly to combine, then scrape into a serving platter.
  • Sprinkle more vinegar and soy sauce on top to taste, then top with more chopped cilantro. Serve with rice, and sliced tomato, if you like.

SAUTEED GREEN BEANS WITH SOY, SHALLOTS, GINGER, GARLIC AND CHILE

Sauteed Green Beans with Soy, Shallots, Ginger, Garlic and Chile image

Provided by Tyler Florence

Categories     side-dish

Time 20m

Yield 4 to 6 servings

Number Of Ingredients 8

2 scallions, for garnish
1 pound green beans
2 tablespoons peanut or sesame oil
1 small shallot, finely chopped
3 teaspoons minced garlic
2 teaspoons grated fresh ginger
1/2 medium red chile, like jalapeno, thinly sliced
2 tablespoons soy sauce

Steps:

  • Prepare the scallion garnish: Finely slice the scallions on an angle and drop them into a large bowl with ice and water - this will make the scallion threads curl up nicely so they look like ribbons. Set aside.
  • Wash green beans under cold running water. Cut off the root ends and discard. Bring a large pot of salted water to a boil over medium-high heat. Add the beans and blanch until bright green, about 2 minutes. Shock in ice water then drain in a colander.
  • Heat a large wok over high heat. Add the peanut oil, then add the shallots, garlic, ginger and chile. Stir the mixture around so it fries in the oil and gets fragrant, about 30 seconds. Add the green beans and toss a couple of times to coat everything evenly. Saute for a couple of minutes so the beans get a little caramelization. Add the soy sauce and cook for 1 to 2 more minutes; the beans should still be nice and crisp. Transfer to a large platter and garnish with drained scallion curls.

DRAMATICALLY SEARED GREEN BEANS WITH GARLIC AND CHILE

DRAMATICALLY SEARED GREEN BEANS WITH GARLIC AND CHILE image

Number Of Ingredients 5

2 tablespoons canola oil or peanut oil
1 pound whole green beans, trimmed
Salt
1 tablespoon minced or crushed garlic
Red pepper flakes

Steps:

  • Place a large, deep skillet or wok over medium heat. After about two minutes, add the oil, and swirl to coat the pan. Turn the heat to high, and wait another 30 seconds or so, then add the green beans and a big pinch of salt. Cook over high heat, shaking the pan and/or using tongs to turn and move the beans so they cook quickly and evenly. After about 3 minutes, take a taste test and see if the beans are done to your liking. They should be relatively crunchy, but you get to decide. If you like them cooked a little more, keep going until they're your kind of tender. Sprinkle in the garlic and some red pepper flakes, and cook for just a minute longer. Serve hot, warm, or at room temperature.

PAN FRIED GREEN BEANS

Pan Fried Green Beans image

These green beans were the side dish my grandmother served most often because we all love them. They are done but not mushy like canned beans.

Provided by Shearyah Hawkins

Categories     Side Dish     Vegetables     Green Beans

Time 30m

Yield 5

Number Of Ingredients 5

1 ½ pounds fresh green beans, trimmed and snapped
garlic powder to taste
onion powder to taste
salt and pepper to taste
3 tablespoons olive oil

Steps:

  • In a stainless steel pot over medium-high heat, combine green beans, garlic powder, onion powder, salt and pepper. Cook, covered, until the beans begin to sweat. Remove lid and stir occasionally until beans are tender.
  • When the beans and spices have begun to 'burn' on the bottom of the pan, which will lend a grilled flavor, stir in the olive oil and turn off heat. Cover, and let stand a few minutes. Scrape the bottom of the pan to incorporate the 'burnt' spices. Beans should have a dark, caramel color, but not black.

  • Partially cooking the green beans either one of two ways: blanching or steaming. To Blanch: Bring a pot of water to a boil; then drop in the green beans. Allow to cook 1-2 minutes; then remove them with a slotted spoon or drain them in a colander and rinse under cold water to stop them from cooking. To Steam: Add water to the bottom of a double boiler; then add the green beans to the top perforated portion. Put the lid on the pot and bring the water to a boil. Once the water is boiling, allow the beans to steam 1-2 minutes until they turn a bright green; then remove from the heat and run under cold water to stop them from cooking.
  • Add the green beans and scallions along with the prepared sauce and cook for 3-4 minutes until the sauce thickens and the green beans are coated. Remove the green beans, place them in a serving bowl and garnish with extra red pepper flakes, if desired.
