CREAMED LIMA BEANS
When my DH and I got married he requested Creamed Lima Beans. I had heard of Creamed Corn before but never limas. I soon found out it was a dish his great aunt prepared for him regularly so I dutifully learned to fix it too. She also used this sauce for creamed peas or carrots.

Steps:
- Cook lima beans according to package directions; I use the microwave.
- Melt butter in saucepan, stir in flour and blend well.
- Add milk, about 1/2 cup at a time, and blend with whisk.
- Cook over medium heat until thickened.
- Total amount of milk depends on how thick you prefer the sauce to be.
- Stir in sugar, salt and pepper.
- Add cooked, drained lima beans.

Steps:
- Saute garlic.
- Then cook the bacon until slightly brown on the edges.
- Next mix the bacon, garlic and the rest of the ingredients; cook until beans are hot about 15 minutes.
A WHOLE NEW WAY TO ENJOY LIMA BEANS
Steps:
- Cook the lima beans in boiling salted water as directed on the package. If using canned lima beans, you will not need to add salt.
- Add sugar (if using) to the cooking water.
- Drain the beans well. At this point, the beans are still hot.
- Add the cream and butter to the hot beans. Taste and add salt and pepper as desired.
- Serve beans warm.

ROASTED LIMA BEANS
Steps:
- Place the beans and water in a large saucepan over high heat and bring to a boil. Reduce the heat to low, cover and cook until the beans are just soft, about 1 hour. Remove from the heat. Drain the beans and cool under running water. Drain thoroughly and spread on paper towels to dry.
- Preheat an oven to 425 degrees F. Toss beans with the olive oil and sprinkle with salt, lime juice and cayenne. Spread beans out on a baking sheet and place in oven. Roast until beans begin to brown slightly. Serve warm or room temperature.
SOUTHWEST LIMA BEANS

Steps:
- Preheat oven to 375*F.
- Heat oil in large saucepan over medium-high heat. Add onion, bell pepper and garlic; saute until soft.
- Add olives and lima beans.
- Stir in 1/2 cup cheese.
- Add water to reserved cooking liquid to measure 1 1/4 cups; add to saucepan.
- Place over high heat; bring to boiling.
- Add chili powder, dissolved cornstarch, and to salt to taste; stir till starts to thicken.
- Pour over beans; mix well.
- Place in greased ovenproof casserole dish; cover with foil.
- Bake 45 minutes.
- Uncover, sprinkle with remaining cheese and bake until cheese melts.
CREAMY BAKED LIMA BEANS

Steps:
- Soak Beans overnight, with plenty of water above the beans. They soak it up!
- In the morning, drain the beans, cover with water, add 1 tsp salt and cook until slightly tender -- 20-30 minutes. However, you must watch these babies, because they have a big tendency to boil over!Just bring them to a boil (watching them), then lower the heat --- and still watch them!
- After the beans are cooked, drain again and rinse them under hot water, and place them in a lightly sprayed or greased (oleo) casserole dish.
- Dab Butter over beans; mix "lightly"! or they get squishy.
- Stir in Molasses.
- Finally, pour in sour cream and mix "tenderly".
- Bake at 350 for one hour. (again, keep an eye on them, I don't think I usually bake them for and entire hour).

CHEF JOEY Z'S SLOW COOKER LIMAS (VEGAN)
This is a different way to serve Lima beans. They sort of remind me of Boston baked beans. I used organic Lima beans my husband grew in our garden. The sour cream goes in at the end.

Steps:
- Make sure the Lima beans have been cleaned, rinsed and drained.
- Combine the water, margarine, molasses, mustard, and salt in the bowl of a 2.5 to 3-quart crock pot. Stir all together. Add in the Lima beans and stir again to coat.
- Cover and cook for 8 hours on low or 6 hours on high.
- Stir the beans often during the cooking process. After 8 hours on low check the beans to make sure they are soft. Stir in the sour cream and serve.
