BAKED DOVER SOLE ROLLATINI
Baked Dover Sole Rollatini are Dover sole fillets, filled with Italian seasoned breadcrumbs and Parmigiano cheese, then rolled & baked in a lemon-wine sauce!

Steps:
- Preheat your oven to 350 degrees F.
- Mix together the breadcrumb ingredients (breadcrumbs, Parmesan, Italian parsley, lemon zest, oregano). Sprinkle with 4 T. olive oil. Mix to fully combine.
- Rub softened butter over the bottom of 9x13 baking dish, to coat. Place the thin lemon slices onto bottom of pan in a single layer. Add the lemon juice and white wine to pan.
- Lay out the fish on a work surface. Spread the bread crumb mixture over the length of each fillet (reserving a bit of breadcrumb mixture to sprinkle on top of fish before baking).
- Roll each fillet up (with the bread crumb mixture inside), beginning with the short side of the fillet. As you finish rolling each one, insert a toothpick from top to bottom at an angle to hold it securely closed. Place each piece of fish in the baking dish on top of the lemon slices. Sprinkle top of fish with reserved bread crumb mixture (as a garnish). Lightly drizzle tops of fish with 2 T. olive oil. Spread capers in the pan in the open spaces between pieces of fish.
- Place pan in lower part of oven and bake for approximately 20 minutes, or until the fish is cooked through. Remove pan from oven. REMEMBER TO REMOVE TOOTHPICKS, then place fish onto individual serving plates using a spatula. Serve, and enjoy!

DOVER SOLE A LA MEUNIERE
Steps:
- Preheat oven to 350 degrees F. Lightly dredge Dover sole in seasoned flour. Heat 1 1/2-ounces of olive oil in a medium pan until it begins to smoke. Saute sole until golden brown on each side (about 1 to 2 minutes per side). Finish in oven for 4 minutes. Debone sole.
- Sauce: Add 2 ounces of whole butter to a small fry pan and heat until the butter gets brown. Add white wine, lemon, parsley salt and pepper. Pour over sole.
DILLY DOVER SOLE
This is a mild flavor fish that takes little time to cook and prep which makes it a great fast & healthy meal! I like to serve it with a side of rice and veggies.

Steps:
- Preheat Oven to 350.
- Spray a cookie sheet or large baking pan with nonstick cooking spray.
- Rinse fish off in cold water & lay on pan or cookie sheet, blot dry with paper towel.
- Combine the olive oil and lemon juice in a small bowl.
- Combine the dill, garlic powder & onion powder in another small bowl. (Fresh parsley and dill can be used in place of the dried).
- Brush the oil & lemon mixture on each piece of fish, using a pastry brush.
- Lightly sprinkle the herb mixture over each piece of fish.
- Bake for 6-8 minutes. It is done when it lightly flakes when you touch it slightly with a fork.
- Serve and Enjoy!
DOVER SOLE MEUNIERE
Dover sole is one of my favorite dishes. It reminds me most of New York City and the iconic restaurants that have served this dish, especially during festive times around the holidays. I enjoy the presentation of the fish, which is generally done at the table; the energy and nostalgia of this process speaks to me of the holidays in Manhattan.

Steps:
- Preheat the oven to 400 degrees F.
- Place the flour in a shallow dish large enough for the whole fish. Season the flour with salt and pepper. Dredge the fish to lightly coat and set aside.
- In a saute pan large enough to fit the whole fish, heat the clarified butter over medium-high heat. When the fat begins to lightly smoke, place the fish in the pan and cook, without moving, until browned, about 4 minutes. Turn the fish over and repeat on the other side. Transfer the fish to the oven on a sheet tray fitted with a rack. Cook until tender and cooked through at the thickest part of the spine, 8 to 10 minutes.
- Heat the same saute pan with the high-fat butter it butter begins to lightly brown. Add the lemon juice (as much or as little as you like) to stop the cooking. Add the capers and finish with the parsley. Taste the sauce and season if necessary with more pepper but not salt because of the capers.
- Rest the fish, then serve whole with the sauce poured over the top.
PAN-FRIED DOVER SOLE
Steps:
- Spread crushed crackers onto a plate. Pour eggs into a shallow dish.
- Place fish in a 1-gallon plastic bag and add flour; gently shake until completely coated.
- Heat oil in a large, non-stick skillet over medium-high heat.
- Dip each flour-coated piece of fish in the egg, allowing excess to drip back into dish. Press coated fish in the cracker crumbs until evenly coated.
- Fry fish in the hot oil until lightly browned and fish flakes easily with a fork, about 5 minutes per side. Season fish with dill and salt.

- Heat the oven to 200ºC/fan180ºC/gas 6. Butter a non-stick baking tray. Trim away and discard the thin frills from either side of each fish, then cut away the head if you wish. Season the fish lightly on each side with salt and pepper. Set aside.
- For the butter sauce, cut off the ends of the lemon, then slice away the skin, removing all the bitter white pith, too. Using a small, sharp knife, cut out the flesh of the lemon segments and put in a bowl. Remove any pips and cut half the segments into small pieces.
- Put the dry white wine, white wine vinegar, shallots and 6 tbsp water in a saucepan. Bring to the boil, then reduce the heat and simmer vigorously until the liquid has reduced to about 2 tbsp. Add the cream and simmer for a little longer until the liquid has reduced back to 2 tbsp. Set aside.
- Heat a non-stick frying pan large enough to accommodate one fish over a medium heat (see Debbie’s tip). Add half the 50g butter and melt without letting it brown. Dust one of the fish in the seasoned flour and knock off the excess. Increase the heat under the pan to high. When the butter is foaming, lay the floured fish in the pan, top-side down, and cook for 2 minutes or until nicely browned. Carefully turn the fish and cook for 2 minutes on the other side, then transfer to the buttered baking tray. Repeat the process with the second fish. Slide the baking tray into the oven and bake for 7-8 minutes.
