HASH BROWN MAC AND CHEESE CUPS



Hash Brown Mac and Cheese Cups image

Have some shredded hash browns in the freezer? You could bake them and serve them with ketchup, or you could break out your muffin tin and turn them into something a little more creative: Crispy mac and cheese-stuffed hash brown cups. Crisp savory potatoes cradle mac and cheese that's topped off with buttery breadcrumbs.

Number Of Ingredients 13

Nonstick cooking spray
One 20-ounce bag frozen shredded hash browns, thawed (about 3 cups)
4 ounces small elbow macaroni (about 1 cup)
3 tablespoons unsalted butter
1 tablespoon all-purpose flour
1/2 cup milk
1/2 teaspoon kosher salt
1/4 teaspoon cayenne pepper
Pinch ground nutmeg
1 cup freshly grated Gruyere cheese (about 4 ounces)
1/4 cup freshly grated Cheddar (about 1 ounce)
1/2 cup panko bread crumbs
1 tablespoon finely sliced chives

Steps:

  • Preheat the oven to 400 degrees F. Grease a 12-cup muffin tin with nonstick spray.
  • Divide the hash browns between the muffin tin cups and firmly press into the base and up the sides of each to create a cup shape. Bake until golden around the edges, 25 to 30 minutes.
  • Meanwhile, cook the macaroni in a large pot of salted boiling water according to package instructions. Drain and set aside.
  • Melt 2 tablespoons of the butter in a medium saucepan over medium heat. Whisk in the flour and cook for 1 minute. Add the milk and whisk constantly until the milk thickens slightly, about 2 minutes. Reduce the heat to low and add the salt, cayenne and nutmeg. Slowly fold in the Gruyere and Cheddar and stir until the cheeses are melted, about 2 minutes. Stir in the macaroni.
  • Divide the macaroni among the hash brown cups. Bake until the tops of the cups are golden brown, 10 to 15 minutes.
  • Meanwhile, melt the remaining 1 tablespoon butter and combine with the breadcrumbs.
  • Remove the mac and cheese from the oven, top with the breadcrumbs and bake until the breadcrumbs are golden brown, about 5 more minutes. Top with chives.

Doughnut pans take up a lot of kitchen real estate for something that gets used, say, twice a year. Still, we love 'em, which is why we dreamed up another great way to put a doughnut pan to work: For baked eggs in the perfect shape to pop on a bagel.

Nonstick cooking spray, for the pan
5 large eggs
Kosher salt and freshly ground black pepper
4 strips crispy cooked bacon, crumbled
1/2 teaspoon finely chopped fresh chives
6 mini bagels
6 slices American cheese, torn into quarters
1 tablespoon unsalted butter, at room temperature
Ketchup, for serving

Steps:

  • Preheat the oven to 300 degrees F. Lightly coat a 6-cavity nonstick doughnut pan with nonstick spray.
  • Crack the eggs into a large liquid measuring cup and whisk until no streaks remain; sprinkle with salt. Divide the eggs among the cavities of the doughnut pan and top with the bacon and chives. Carefully place the pan on a sheet tray and bake until the eggs are set and slightly puffed up, 8 to 10 minutes. Cool slightly, then remove the eggs from the doughnut pan.
  • Meanwhile, split open the bagels. Top the bottom halves with American cheese pieces and transfer to a sheet tray. Spread the top halves with butter and place them butter-side down on the sheet tray. Bake until the cheese is melted and the buttered bagels are starting to turn golden brown, about 4 minutes.
  • Top the cheese half of a bagel with an egg ring and drizzle on some ketchup. Season with salt and pepper and cover with the butter half of the bagel. Repeat with the remaining bagels, egg rings and ketchup to make 5 more sandwiches.

BAKED ONION RINGS

1 large sweet onion, sliced into 1/2-inch rounds
1 cup nonfat buttermilk
1/4 cup cornstarch
1/3 cup all purpose flour
3/4 cup yellow cornmeal
1/4 finely grated Parmesan cheese
1 Tablespoon Miss Brown's House Seasoning (recipe follows)
Olive oil cooking spray
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 425 degrees F. Line two baking sheets with parchment paper. Lightly spray the parchment paper with olive oil cooking spray.
  • Stir together the buttermilk and cornstarch in a shallow bowl.
  • Stir together the flour, cornmeal, Parmesan cheese and House seasoning in a baking dish.
  • Coat the onion slices by placing each slice into the buttermilk mixture allow excess to drip before coating in the seasoned cornmeal. Then place the coated rings in a single layer on the baking sheets. Repeat until all onion rings are coated. Give the onion rings a light spray with non-stick baking spray. Bake until golden brown, about 20-25 minutes flipping once halfway through and serve hot.
  • Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl.

16 ounces shredded cheddar cheese, about 4 cups

1 lb elbow macaroni, cooked al dente according to package instructions
8 slices bacon, cooked and crumbled
2 large eggs, lightly beaten
1 tablespoon kosher salt
1 tablespoon black pepper
1/3 cup breadcrumbs, plus additional for coating
1/2 cup half-and-half
2 cups shredded cheddar cheese
2 slices bacon, cooked and crumbled
1/2 bunch chives, chopped

Steps:

  • Mac 'n' Cheese:.
  • Preheat oven to 375 degrees. Grease a 12 cup bundt pan with nonstick cooking spray. Coat pan with bread crumbs as if flouring the pan.
  • In a dutch oven melt butter over medium high heat. Once the butter has melted whisk in the flour to form a roux. Gradually whisk in milk until there are no lumps. Whisk in both cheeses.
  • Once the mixture is smooth turn off the heat and stir in the cooked pasta and bacon. Season with salt and pepper.
  • Stirring quickly add the eggs being sure not to let them scramble.
  • Spoon the mixture in the prepared bundt pan. Use a spatula to press the pasta down to create an even layer. Sprinkle the bread crumbs over the top and bake for 40-45 minutes until golden brown.
  • Allow to cool for 15 minutes. Use a rubber spatula to loosen the sides of the pan before removing.
  • Serve with cheese sauce and garnish with crumbled bacon and chives.

12 cups (3 quarts) vegetable oil
2 1/4 cups all-purpose flour, plus more for dusting
1 1/2 cups finely shredded sharp Cheddar cheese
1/2 cup roughly chopped scallions
1/4 cup sugar
1 teaspoon baking powder
1 teaspoon kosher salt, plus more for sprinkling
1/4 teaspoon baking soda
3/4 cup buttermilk
1/2 cup sour cream
1 large egg, beaten

Steps:

  • Heat the oil to 365 to 375 degrees F in a cast-iron Dutch oven over medium heat.
  • In a large bowl, mix together the flour, cheese, scallions, sugar, baking powder, salt and baking soda. In a smaller bowl, whisk together the buttermilk, sour cream and egg. Pour the wet ingredients into the dry and mix to combine, making sure there are no dry bits left.
  • Turn the dough out onto a floured surface and lightly coat with flour. Pat the dough into a 1-inch disc. Then, using a large glass dipped into flour, cut out rounds for the doughnuts. Press the dough back together to cut out another doughnut or 2. Dip your finger into the flour, then press it into the center of each doughnut while it is on the floured surface to create a hole. Move your finger around in the hole to make it larger. Turn the doughnut over and repeat on the other side to make sure the hole is clear and large.
  • When the oil is ready, place the doughnuts into the oil carefully and fry for 3 to 4 minutes per side. The doughnuts are thick and take time to cook all the way through. You can flip them every minute to keep them from browning too much on each side. Transfer the doughnuts to a paper towel-lined baking sheet and sprinkle with a little salt. Serve immediately.

1 pound elbow macaroni
2 cups half-and-half
8 ounces cream cheese, at room temperature

1 teaspoon hot sauce, or more to taste
2 cups panko breadcrumbs
6 tablespoons unsalted butter, melted

Steps:

  • Position a rack in the upper third of the oven and preheat to 450 degrees F. Bring a large pot of salted water to a boil. Add the macaroni, and cook according to package directions until al dente. Drain the macaroni, reserving 1 1/2 cups of the pasta water. Set aside.
  • Heat the half-and-half, cream cheese, and reserved pasta water in a large pot over medium heat, stirring until the cream cheese is completely melted and the mixture just comes to a simmer. Remove from heat and add the Cheddar, Monterey Jack, Dijon mustard, and hot sauce, whisking until the cheeses are melted and the sauce is smooth.
  • Add the macaroni to the pot and stir to combine. (It will look very loose, but the pasta will absorb some of the sauce as it bakes.) Season to taste with salt if desired. Spread the macaroni mixture on an 18-by-13-inch sheet pan.
  • Toss the panko, butter and 1/2 teaspoon salt together in a medium bowl and sprinkle evenly over the pasta. Bake until the cheese is bubbly and the bread crumbs are brown and crisp, rotating halfway through, 20 to 25 minutes.

4 slices prosciutto, sliced

Steps:

  • Follow the cooking directions on the box of Mac and Cheese.
  • Preheat oven to 350 degrees F.
  • Pour the cooked Mac and Cheese into a food processor.
  • Add egg, the mix in the processor until it reaches a mushy consistency.
  • Spray a donut pan with non-stick spray and fill each cavity with the Mac and Cheese mixture, be sure that each mold is full, all the way up to the top.
  • Bake for 20 minutes; then allow the donuts to cool to room temperature.
  • Heat fry oil to 350 degrees F in a fryer or deep skillet.
  • Remove the donut from the pan and fry for approximately 2 minutes on each side, or until each side is lightly golden-brown.
  • Drape several slices of proscuitto over a portion of each donut and garnish with 2 chive stems.
