MEATLOAF RECIPE
Recipe video above. Meatloaf is so much more than a giant hunk of ground beef in a loaf shape. It should ooze with flavour, be moist and tender yet not crumble apart when sliced. And the caramelised glaze is the crowning glory!

Steps:
- Preheat oven to 180C/350F. Oil or spray a loaf tin. (Note 3)
- Glaze: Mix together in a small bowl. Set aside.
- Meatloaf: Place breadcrumbs in a very large bowl. Grate over onion. Mix so the breadcrumbs are all wet. (Note 4)
- Add remaining ingredients. Mix well using your hands. Form into a loaf shape, pinching together then smoothing over creases and cracks (helps prevent cracks during baking).
- Transfer into loaf tin. Brush generously with glaze, using about 1/2.
- Bake for 45 minutes. Remove from oven and brush with most of the remaining glaze. If there is excess fat pooling, scoop/pour it off.
- Bake for a further 30 minutes. Remove from oven.
- Stand for 10 minutes before turning out and cutting into thick slices. You will probably get a bit of crumbling just on the edges of the first couple of slices, this is normal and indicative of the tenderness of the meatloaf (zero crumble indicates firm packed harder meatloaf which isn't as enjoyable!).
- Ideal served with a dollop of ketchup, creamy mashed potatoes and steamed vegetables.

BACON AND DOUBLE CHEESEBURGER MEATLOAF
WOW!! I found this on another website, made it, and it was WONDERFUL. I just had to share it. I have doubled the ingredients as you will want left overs. I know everyone one says the same thing, but this IS the Best meatloaf I have ever had.. I served it with Steak Fries, and green beans. You have got to try this one!!!!! I did change the prep a little from the original......

Steps:
- Heat oven to 350 degrees. In a medium pan, cook bacon just until limp. Remove from pan and set aside. Remove most of the grease and saute the onions just until soft, cool, and set aside.
- In a small bowl, mix the eggs, mayo, pickles, onions, dry mustard, salt, & pepper, just to combine. Place meat and bread crumbs in a large bowl, and mix in the egg mixture. Mix well. With your hand, score the meat into 3 equal sections, just eyeball it if you want. Take one section of the meat mixture and shape it into an oval about 1 inch thick. This is the bottom layer of the meat loaf. Place 3 slices of the cheese on top of this loaf making sure that they are not hanging over the edge of the meat loaf. You don't want it to melt and run out. Take the next 1/3 section of meat, place it on top of the cheese layer and mold it to the same size as the bottom layer. Lay the last 3 slices of cheese on this layer contuning to keep the cheese away from the edges. Place the rest of the mixture on the top and shape to the rest of the meat loaf. Smooth the sides of the loaf with a little water on your fingers so that you can't see that it was done in layers, and to make sure the cheese won't ooze out when it melts. It may seem like alot of fuss, but it is WELL worth the little extra effort. Spread the ketcup or chili sauce over the top, then place the bacon strips across the meatloaf sideways instead of the length, covering the entire loaf. Bake for 1 hour, or until it reaches an internal temp of 160. Remove from oven and tent with foil for about 10 minutes to set. When you slice this, you will be able to see the 2 cheese layers. This sets up nicely and will be great for leftover sandwiches -- .

DOUBLE CHEESE MEATLOAF
I found this on the web years ago, but unfortunately, I don't remember where. This has a ketchup glaze, but if you reduce the amount of ketchup and increase the brown mustard (which is what I do) you can't tell. This is excellent, and really doesn't have a lot of filler. I also increase the cheese. Sometimes I make this in my muffin tins. I generally serve this with mashed potatoes and dinner rolls, and my two picky sons both like it.

I have to say my favorite cook by far is Alton Brown I love the way he uses science to develop his recipes. This is another winner it is asked for constantly, I use it as written I do double the glaze it is that good you can't put it all on the loaf as it will not cook correctly but what you don't use just heat and use it as...

Steps:
- 1. Heat oven to 325 degrees
- 2. In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is of a fine texture. Place this mixture into a large bowl.
- 3. Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed.
- 4. Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat.
- 5. Pack this mixture into a 10-inch loaf pan to mold the shape of the meatloaf. I go around the edges to loosen the loaf with a butter knife or an offset spatula, then turn it over and give it a good smack on to a parchment paper-lined baking sheet in the center of the pan the pan should lift very easily I use a Teflon pan so be careful when you are running the knife to loosen if you do. Insert a temperature probe at a 45 degree angle into the top of the loaf personally I run mine thru the small end of the loaf right in the middle that way I know if the middle is done not sure why Alton suggest the top. Avoid touching the bottom of the tray with the probe. Set the probe for 155 degrees.
- 6. Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes, again I double mine but dont try and put it all on the loaf it can be used as a dipping sauce
