2 cups shredded cooked chicken
2 cups chopped English cucumbers
2 cups grape tomatoes, cut in half
1/2 cup chopped red onions
1/2 cup crumbled feta cheese
1/4 cup chopped fresh dill
3/4 cup KRAFT Greek Vinaigrette Dressing
2 cups cooked whole wheat couscous
3 cups tightly packed baby spinach leaves

Steps:

  • Combine all ingredients except couscous and spinach.
  • Spoon couscous into large bowl.
  • Top with spinach and chicken mixture.

A basic chicken salad recipe with red bell peppers and feta cheese. Try using tomato-basil feta for added flavor!

3 cups diced cooked chicken
2 large stalks celery, diced
1 red bell pepper, seeded and diced
½ red onion, diced
6 tablespoons mayonnaise
6 tablespoons sour cream
1 (4 ounce) package feta cheese, crumbled
2 teaspoons dried dill weed
1 pinch salt and pepper to taste

Steps:

  • In a serving bowl, mix together the chicken, celery, and red onion. In a separate bowl, stir together the mayonnaise, sour cream, feta cheese, and dill. Pour over the chicken mixture, and stir to blend. Taste, and season with salt and pepper as needed. Serve immediately, or refrigerate until serving.

1 tablespoon olive oil, divided
1 medium onion, chopped
10 ounces spinach, fresh
1 teaspoon lemon, zest of
1/4 cup feta cheese, crumbled
1 teaspoon table salt, divided
1/2 teaspoon black pepper, divided
1 lb boneless skinless chicken breast

Steps:

  • In a large nonstick skillet heat 1 teaspoon oil; sauté onion until golden, 5 minutes.
  • Wilt spinach (steam spinach or heat damp spinach over medium heat in nonstick pan); stir in zest, feta, 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Set aside.
  • Divide spinach mixture between chicken breasts.
  • Roll up and secure with toothpicks.
  • Sprinkle with remaining salt and pepper.
  • In same skillet, heat remaining oil over medium-high heat.
  • Cook chicken, turning occasionally, until golden brown and cooked through, about 10 minutes.
  • Remove toothpicks.

1/4 cup all-purpose flour
1/2 teaspoon garlic salt
1/4 teaspoon pepper
8 bone-in chicken thighs (3 pounds), skin removed if desired
1 tablespoon olive oil
4 garlic cloves, thinly sliced
1 tablespoon grated lemon zest
1 teaspoon dried thyme
1/2 teaspoon dried rosemary, crushed
1 can (14 ounces) water-packed quartered artichoke hearts, drained
1/2 cup pimiento-stuffed olives
1 bay leaf
1-1/2 cups orange juice
3/4 cup chicken broth
2 tablespoons honey
GREMOLATA:
1/4 cup minced fresh basil
1 teaspoon grated lemon zest
1 garlic clove, minced

Steps:

  • In a shallow bowl, mix flour, garlic salt and pepper. Dip chicken thighs in flour mixture to coat both sides; shake off excess. In a large skillet, heat oil over medium heat. In batches, brown chicken on both sides. Transfer to a 4-qt. slow cooker., Sprinkle garlic, lemon zest, thyme and rosemary over chicken. Top with artichoke hearts, olives and bay leaf. In a bowl, mix orange juice, broth and honey; pour over top. Cook, covered, on low 4-5 hours or until chicken is tender. Remove bay leaf., Reserve 4 chicken thighs for Double-Duty Chicken & Feta Spinach Salad; cover and refrigerate. To serve remaining chicken, mix gremolata ingredients in a small bowl. 1 10.5-ounce jar marinated feta cheese cubes in oil with herbs and spices
2 tablespoons chopped fresh oregano
2 tablespoons red wine vinegar
4 skinless boneless chicken breast halves
1 large red onion, peeled, cut through root end into 1/2-inch wedges
1 5-ounce package baby spinach leaves
1 pound tomatoes (preferably heirloom) in assorted colors, cut into wedges
1 9-ounce container teardrop tomatoes
1/2 cup halved pitted Kalamata olives

Steps:

  • Prepare barbecue (medium-high heat). Drain oil from feta into glass measuring cup. Whisk in oregano. Transfer 1/2 cup oil mixture to small bowl; whisk in 2 tablespoons vinegar. Season dressing with salt and pepper (reserve remaining oil mixture for brushing).
  • Brush chicken and onion wedges with reserved oil mixture; sprinkle with salt and pepper. Grill chicken until cooked through, 7 to 8 minutes per side, and onion until tender, 3 to 4 minutes per side. Transfer to cutting board; let rest 5 minutes.
  • Meanwhile, arrange spinach on large platter. Combine all tomatoes, olives, and feta in large bowl. Toss with enough dressing to coat generously. Season with salt and pepper. Arrange on platter with spinach.
  • Thinly slice chicken; arrange chicken and onion wedges on platter. Drizzle chicken and spinach with more dressing and serve.

My spin on an Atheno's recipe. I added the chicken cuz I gotta have a little meat! Very rich and yummy dish. Shells are easier to fill when their cool rather than hot and cooked to just al dente. Serve with salad and garlic bread! Enjoy!

1 (10 ounce) package frozen chopped spinach, thawed, well drained
3/4 cup chicken, shredded (I use rotisserie chicken for more flavor!)
1 cup ricotta cheese
4 garlic cloves, minced
1 teaspoon dried oregano
1/2 teaspoon black pepper
1 (8 ounce) package feta cheese, crumbled and divided
20 large shell macaroni, cooked to al dente, drained
2 tablespoons butter
26 ounces spaghetti sauce

Steps:

  • Toss hot, cooked pasta with butter. Let pasta cool while making the filling.
  • In a large bowl combine spinach, chicken, ricotta, 3/4 of the feta, garlic, oregano, and pepper.
  • Pour 1/4 jar of spaghetti sauce into a greased 2 quart casserole dish and spread around to coat bottom of dish.
  • Stuff shells with mixture and place on top of sauce in casserole dish.
  • Spoon remaining sauce over shells. Top with remaining feta.
  • Bake at 350 degrees for 20 minutes or until heated through.
