Stir chocolate chips into chocolate batter for a muffin that's twice as nice.

Number Of Ingredients 12

1 1/4 cups all-purpose flour (see Cook's Note)
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 cup bittersweet chocolate chips
3/4 cup milk
1/2 cup packed light brown sugar
4 tablespoons unsalted butter, melted
1 tablespoon vegetable oil
2 teaspoons pure vanilla extract
2 large eggs

Steps:

  • Preheat the oven to 350 degrees F. Line 12 muffin cups with paper liners.
  • Whisk together the flour, cocoa powder, baking powder, baking soda and salt in a large bowl. Stir in the chocolate chips. In a medium bowl, whisk together the milk, brown sugar, butter, oil, vanilla and eggs until smooth.
  • Quickly fold the milk mixture into the flour mixture with a rubber spatula. Divide the batter evenly among the prepared muffin cups. Bake until a toothpick inserted in the center comes out clean, about 25 minutes. Transfer the muffins from the pan to a wire rack to cool.

1/2 cup unsweetened cocoa powder
2 teaspoons baking powder
1/4 teaspoon salt
1 cup granulated sugar
2 eggs
3/4 cup low-fat milk
1/2 cup vegetable oil
2 teaspoons vanilla
1/2 cup semi-sweet chocolate chips
2/3 cup coarsely chopped dried apricot
2 tablespoons granulated sugar

Steps:

  • Preheat oven to 350°F.
  • Grease or put paper liners in 12-cup muffin pan.
  • In a small bowl, mix together flour, cocoa powder, baking powder and salt.
  • In a large bowl, mix together sugar, eggs, milk, oil and vanilla. Mix in dry ingredients just until combined. Fold in chocolate and apricots. Scoop batter into prepared muffin cups.
  • Topping: sprinkle with sugar.
  • Bake in preheated oven for 22 minutes or until a tester inserted into center comes out clean. Let muffins cool in pan on a wire rack for 5 minutes. Transfer to rack and let cool completely.

1 cup chopped dried apricots
1 cup boiling water
1 cup sugar
1/2 cup butter, softened
1 cup sour cream
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon grated orange zest
1/2 cup chopped nuts

Steps:

  • Soak apricots in water for 5 minutes. In a large bowl, cream sugar and butter until fluffy. Add sour cream; mix well. Combine dry ingredients; stir into creamed mixture just until moistened. Drain apricots, discarding liquid. Fold apricots, orange zest and nuts into batter. Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° for 18-20 minutes or until muffins test done. Cool 10 minutes before removing to a wire rack.

1 (16 ounce) can apricot halves, drained
1 3/4 cups all-purpose flour
3/4 cup whole wheat flour
1 1/4 cups sugar
3 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon pumpkin pie spice
2 large beaten eggs
1/2 cup milk
3 tablespoons vegetable oil
1 cup snipped dried apricot

Steps:

  • In the blender or food processor bowl blend or process canned apricot halves until smooth; set aside.
  • In a large bowl combine all-purpose flour, whole wheat flour, sugar, baking powder, salt and pumpkin pie spice.
  • In another bowl combine eggs, the apricot puree, milk and oil.
  • Add to flour mixture, stirring just until combined.
  • Stir in dried apricots.
  • Pour into two greased and floured 8 x 4 inch or 7 1/2 x 3 loaf pans.
  • Bake in a 350°F oven 45 to 50 minutes or until a toothpick inserted near center comes out clean.
  • Cool in pans 10 minutes.
  • Remove from pans. Cool completely.
  • Slice and serve with margarine or butter, if desired.
  • Make ahead tips: Wrap loaves in foil; refrigerate overnight.
  • Or, wrap in foil; place in airtight freezer container or plastic freezer bags; seal, label, and freeze up to 1 month.
