DORSET APPLE CAKE

Steps:
- Heat the oven to 180C/160C fan/gas 4. Butter and line a deep 20cm cake tin with baking parchment.
- Mix the flour and cinnamon together in a large bowl. Add the butter and rub into the flour using your fingers, until it resembles fine breadcrumbs. Stir in the light brown sugar. Beat in the egg followed by 6-8 tbsp of milk - add it gradually until you have a smooth, thick batter.
- Add the apples and sultanas and mix to combine. Scrape the batter into the prepared tin and gently level out. Sprinkle over the demerara sugar, if using, and bake for 30-40 mins or until golden and a skewer inserted into the middle comes out clean.
- Allow to cool in the tin for 15 mins and then carefully turn out onto a wire rack to cool further. Best served still warm with a little custard.

- Preheat the oven to 350°F/175°C. Line the bottom of an 8-inch (20-cm) x 3-inch tall springform pan with parchment paper and lightly oil the sides of the pan. Set aside.
- In a large bowl, sift together the flour, baking powder, cinnamon and salt. Set aside.
- In a separate large bowl, using an electric mixer on medium speed, cream together the butter and sugars until smooth and lighter in color, about 5 minutes. Beat in the eggs, milk and vanilla extract.
- Add the wet ingredients into the dry ingredients, and mix until just combined.
- Add two-thirds of the batter into the prepared pan, and using a spatula, spread the batter until it's even. Evenly layer on half of the apple pieces. Add in the remaining batter, and using a spatula, carefully spread the batter until it's even. Evenly layer on the remaining apples. Evenly sprinkle the demerara sugar over the apples. Place in the middle of the oven and bake for 1 hour and 15 minutes, until a toothpick comes out clean when inserted into the middle of the cake.
- Allow the cake to cool in the pan for 5 minutes before removing the cake and transferring it to a cooling rack.
- Dust with powdered sugar once the cake has cooled.

- For the cake: Preheat the oven to 325 degrees F. Mix together the softened butter with 2 tablespoons of the flour to make a paste. In a 10-inch Bundt pan, paint on the flour and butter paste with a pastry brush until the pan is well coated.
- Using an electric mixer, beat the sugar, oil and eggs until smooth. Add the orange juice and vanilla extract and mix well. In another bowl, sift together the baking soda, cinnamon, salt and remaining 3 cups flour. Add the flour mixture to the sugar mixture and continue to beat well. Stir in the apples and walnuts.
- Pour the batter into the pan and bake until a toothpick inserted in the cake comes out clean, about 1 hour 30 minutes. Remove the cake from the oven and let it cool in the pan for 15 minutes. Turn the cake out onto a cake plate.
- For the glaze: Combine the sugar, butter, buttermilk and baking soda in a large saucepan and bring to a boil. Boil the mixture until it thickens slightly and begins to turn a light brown, 5 to 10 minutes. Remove from the heat.
- Using a toothpick, punch 15 to 20 holes in the top of the cake and pour the glaze over the cake. Let the cake set and cool before serving. Store the cake in an airtight cake carrier in the refrigerator for up to 2 weeks.

- Preheat oven to 325°F Grease 10" tube pan, combine 3 Tablespoons sugar with 1 teaspoon cinnamon, coat pan with sugar mixture.
- Mix flour, soda, salt, nutmeg, and cinnamon; set aside. Beat oil and sugar until blended. Beat in eggs, one at a time, and then stir in apples and vanilla. Add flour mixture until blended; stir in pecans and raisins.
- Transfer to pan and then drop and shake the pan to release bubbles.
- Bake 1 1/2 hours - 1 3/4 hours until toothpick comes out clean. Cool on rack 15 minutes, remove from pan and glaze.

- Stir in baking powder.
- In a separate bowl, stir sugar into the chopped apples and raisins.
- Add egg and milk and mix gently to a firm sticky dough, add sugared apple pieces & raisins and mix again.
- Scrape into greased or buttered 8x8inch cake pan. Wet hands and press mixture into pan.

The best apple cake recipe I have come across, this was from delicious Food Magazine. All the family love it. It is a beautiful moist cake and is great on its own or as a pudding with a little cream, custard or ice-cream.

- Pre-heat the oven to 180oc/fan 160oc, gas4.
- Grease a deep 24cm (9") springform cake tin and line with parchment paper.
- Peel and core apples and cut into 1cm pieces and toss in lemon juice.
- In a bowl, beat sugar, butter and lemon zest until pale and fluffy. Beat in the eggs one at a time, adding a little flour with each addition to keep the mixture smooth.
- Sift the remaining flour and the baking powder into the bowl and fold in with the ground almonds. stir in the apple pieces into the mixture.
- Spoon into the tin and level top, sprinkle with the demerara sugar.
- Bake for one hour. (skewer should come out clean).
