TURNIP GREEN CORNBREAD CASSEROLE
A savory taste of the South! Tender greens and cornbread are always a nice surprise for your guests! Even those who claim to hate greens will love this dish!

Steps:
- Preheat oven to 350 degrees
- Prepare a pan of cornbread (best if the cornbread is made a day or two ahead); crumble into small pieces
- In a large skillet, cook the onion and sausage; drain if there's excess oil
- In a large bowl, combine greens with their juice and the condensed soup
- Fold in cooked sausage and onions, crumbled cornbread; season with Trappey's pepper sauce, salt and pepper; sprinkle in red pepper flakes (optional)
- Transfer to ungreased baking dish and bake uncovered for 30 minutes, or until most of the liquid is absorbed

- Put the ham in a large stockpot over medium heat. Cook until the ham is crispy and the fat is rendered, about 8 minutes. Pour in the apple cider vinegar and scrape the bottom of the pot with a wooden spoon to lift up any brown bits.
- Meanwhile, rip the greens into large pieces to make it easier to fit all of them into the stockpot.
- Add the greens to the pot and season generously with black pepper. Pour in the chicken stock and stir to combine. Bring the greens to a simmer and cover the pot. Reduce the heat to medium low and cook until the greens are tender and the liquid is reduced by half, about 45 minutes. Remove the lid and continue to cook, stirring occasionally, until the liquid is nearly gone, about 10 minutes more. Serve immediately.
MAKE-AHEAD TURNIP CASSEROLE

- Preheat the oven to 375 degrees F (190 degrees C).
- Place turnips into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and return to the pot. Mash turnips; add butter and eggs.
- Combine flour, sugar, baking powder, salt, pepper, and nutmeg in a bowl and stir into turnips. Transfer mixture to a baking dish.
- Combine bread crumbs and melted butter and sprinkle on top of turnip mixture.
- Bake in the preheated oven until light brown on top, about 25 minutes.

- Preheat the oven to 375 degrees F.
- In a large Dutch oven, combine the cream, mascarpone, onion, garlic, nutmeg, smoked paprika, lemon zest, salt and pepper, then bring to a simmer over a medium-low heat, stirring as you go. Simmer gently until the onions and garlic are very soft, about 10 minutes.
- Add all of the kale to the cream mixture, then cover and allow to wilt, about 3 minutes. Stir and cook until the greens are just wilted and coated in the cream mixture.
- Transfer the greens mixture to a 10-inch cast-iron skillet and spread evenly. Top with the Gruyere and panko breadcrumbs. Place the skillet on a baking sheet and bake until bubbly and the cheese is melted, about 30 minutes.

DONNASUE'S CORNBREAD MUSTARD GREEN CASSEROLE
The reason I created this is my friend Dora. When she gives me fresh mustard greens, there was only so much I could do with them. I wanted to make a Southern-style dinner casserole that would celebrate some of the traditional foods that I consider Southern.

- Preheat oven to 375 degrees F (190 degrees C). Spray a 2-quart casserole dish with cooking spray.
- Heat olive oil in a large skillet over medium heat. Cook the mustard greens, onion, and roasted garlic until the onions are translucent and the mustard greens are wilted and reduced, about 10 minutes. Drain greens mixture in a colander if very juicy.
- Mix the corn muffin mix, biscuit mix, eggs, and milk together in a large bowl to make a batter; mix in the Dijon mustard and seasoned tenderizing salt, then gently stir in the cooked greens, ham, and Mexican cheese blend until thoroughly combined. Scrape the mixture into the prepared casserole dish.
- Bake in the preheated oven until browned and a toothpick inserted into the center of the casserole comes out clean, about 50 minutes. If casserole begins to brown too quickly, cover dish with foil partway through the cooking time. Turn off oven, and allow casserole to stand 15 minutes in the hot oven before serving.

- 1. In a small casserole dish melt one stick of margarine in a 350* oven. Crumble a layer of cornbread in margarine and layer of turnip greens (DO NOT DRAIN TURNIP GREENS), a layer of onion, and a layer of cream of chicken soup. Repeat the layers ending with cornbread. Bake for 30 to 35 minutes.
- 2. You can add red pepper flakes if you prefer spicy greens
