SO EASY SALMON PATTIES



So Easy Salmon Patties image

This recipe is so simple and takes hardly any time at all. An easy go to dish that is nice when served with salad, quinoa, rice, or any veggies. If you need a quick and yummy salmon dinner/lunch, try this out. It would be nice served in a pita pocket with lettuce, tomato, etc as well. If you use plain bread crumbs, mix in a handful of fresh chopped parsley.

12 ounces skinless boneless salmon (sold in 6 oz cans or packets)
1/2 medium onion, chopped
1/2 cup breadcrumbs, seasoned or 1/2 cup breadcrumbs, plain
1/4 cup chopped parsley (optional)
2 eggs, beaten
2 tablespoons unsalted butter
3 tablespoons olive oil
salt
pepper

Steps:

  • Saute onions in 1 TBS olive oil until cooked through but not brown.
  • Drain liquid from the salmon.
  • Combine salmon, sauteed onion, breadcrumbs (parsley if you use plain breadcrumbs), eggs, salt, and pepper.
  • Form mixture into patties.
  • Melt butter and oil in a pan.
  • Brown salmon patties on both sides (about 4-5 minutes per side).
  • Place cooked patties on a paper towl to absorb excess oil.

A excellent fish cake, very similar to the prawn cake I have posted, but of course not as high in cholestrol. You can also try grilling it..if you are concerned about adding on the pounds. Still taste good. I have also tried making them bigger, so that they are like a salmon pattie, and eating it as a burger. YUMMY! If you want to add a little heat to the cake, chop up some spicy hot red chilli and add it to the salmon mixture. From Donna Hay's Cookbook titled "flavours"

500 g salmon fillets, skin removed
1 egg white
3 tablespoons fine cornflour
3 kaffir lime leaves, shredded
1 tablespoon finely chopped ginger
1 teaspoon wasabi
3 tablespoons chopped flat leaf parsley
oil, to shallow fry
1/4 cup lime juice
1/4 cup soya sauce
2 tablespoons brown sugar

Steps:

  • To make the salmon cakes, remove any bones from the salmon and chop into 5mm (1/4 inch) dice.
  • Combine the chopped salmon with the egg white, corn flour, lime leaves, ginger, wasabi paste and chopped parsley.
  • (MIX IT WELL) Heat 1 cm (1/2 inch) of oil in frying pan over medium heat, to shallow fry the cakes.
  • Place 2 tablespoons of the mixture into the hot oil and cook for 35-45 SECONDS each side, or till golden brown in colour.
  • Drain on kitchen towels, and keep warm in a low oven till you finish cooking up the batter.
  • To make the lime dipping sauce, combine all the ingredients.
  • Serve the dipping sauce with the warm salmon cakes.

Halloumi and Couscous Cakes image

Haloumi and couscous cakes flavoured with lemon zest and parsley, and served with a simple refreshing baby spinach salad with slices of smoked salmon, or with your favourite salad. This recipe is from the November/December 2005 issue of the 'donna hay magazine: turn simple into special'. I haven't yet made these cakes; I just bought the magazine today! But for me this recipe had that instant must-be-tried-soon appeal! In posting the recipe, I have separated the cakes from the side salad (I have included details of the salad in the Directions) as I thought it would be more useful for those watching fat content or calories to know the nutritional information for the cakes. In posting the recipe, I have reduced the oil used in cooking the cakes from 2 tablespoons to 11/2 tablespoons. The oil could, of course, be considerably more reduced if the cakes were cooked in the oven on trays. Donna Hay is a well-known and popular Australian chef.

1 cup cooked couscous
180 g halloumi cheese
1 tablespoon lemon zest, finely grated
1/2 cup flat leaf parsley
1 1/2 tablespoons vegetable oil

Steps:

  • Place the couscous, haloumi, lemon zest and parsley in a food processor and process for 1 minute or until the mixture resembles fine breadcrumbs; then shape 1/4 cups of the couscous mixture into round cakes.
  • Heat a non-stick pan over a medium heat; add the oil; cook the cakes in batches for 2-3 minutes each side or until golden; transfer the finished cakes onto a plate lined with absorbent paper towelling, and keep warm while you cook the remaining cakes.
  • SERVING SUGGESTION: Serve the haloumi and couscous cakes with baby spinach leaves and slices of smoked salmon with lemon slices. If you like a dressing on your salad, Donna Hay combines 2 tablespoons of white wine vinegar with 1 tablespoon of olive oil and tosses the smoked salmon slices and baby spinach leaves in the dressing to combine, and serves it with lemon wedges.
  • NOTES: Suggested quantities - in the original recipe - for the side salad: 7 ounces (200g) smoked salmon slices, 21/2 (70g) ounces baby spinach leaves. On Donna Hay's website - http://www.donnahay.com.au/ - is a conversion table and a list of commonly used ingredients - and what they are generally called in Australia and America. In many cases, I think we actually use what she has said is the American name and in some cases, the recipes on Zaar use what she has said is the Australian name! Curious! But some of these "translations" of terms and names could well be useful!

3 (14 3/4 ounce) cans pink salmon
4 large eggs
1 large cups seasoned bread crumbs
1/2 large onion, chopped
1 teaspoon lemon juice
pepper & season salt (optional)

Steps:

  • Pre-heat oven to 350'. Drain juice out of canned salmon. Make sure all off the bones are removed. Go ahead & crumble the salmon up. Add eggs, bread crumbs, onions * lemon juice. Add seasoning to taste. I like to use pepper & season salt. I sometimes use garlic salt & garlic pepper since I love garlic so much. Then just make your patties & place on pan. Place in oven for about 45 minute or until golden brown. Enjoy.
  • Note: You can flip salmon patties to brown on both sides.
