FROZEN BANANA DAIQUIRI
Frozen banana daiquiris are the ultimate island drink. Made with banana liqueur, brown sugar, lime juice, frozen bananas, and rum. You'll instantly feel like you're transported to St. Thomas.

Steps:
- Add cocktail ingredients into the blender: Add the dark rum, banana liqueur, lime juice, brown sugar, banana chunks, and ice into the blender.
- Blend the cocktail: Blend the ingredients on high until the mixture is smooth and no chunks of banana or ice remain.
- Taste and adjust cocktail flavoring: Taste the daiquiri for sweetness and add more brown sugar, if desired. If the daiquiri is too thick, like the consistency of pudding, add more rum to thin out the daiquiri a bit. You want the daiquiri to have the consistency of a slushie or loose smoothie.
- Garnish and serve cocktail: Pour the daiquiri into a hurricane glass and garnish with a maraschino cherry. Enjoy while frozen.

Steps:
- Peel and mash bananas.
- Combine with the vodka, sugar syrup and vanilla in sterilized, wide-mouth jar.
- Cap the jar and shake gently to mix.
- Let stand in a cool, dark place for 1 week.
- Strain and filter the liquid.
- Transfer clear liqueur to a sterilized bottle.
- Note: To make sugar syrup, bring 1 cup sugar and 1/2 cup water to a boil.
- Simmer, occasionally scraping down the sides of the pan, until the sugar is dissolved, about 5 minutes.
DOLLY'S BANANA LIQUEUR
Costa Rica is one of the original Banana Republics, which probably explains the many types of bananas growing on our property. And of course, they all ripen at the same time! This is ONE more way to use up those pesky bananas... I used Guaro as the alcohol because it's the cheapest clear liquor here, but you could probably substitute vodka, rum or cachaca and achieve similar results!

Steps:
- Peel and thinly slice bananas. Place in a large glass jar with lid.
- Add the guaro and the turbinado sugar, mix until sugar is dissolved.
- Place jar in refrigerator (might not be necessary in a non-tropical country) for a week, stirring every few days.
- Strain and discard banana pieces. Strain again through a double layer of cheesecloth. If there are still particulates, you can strain through cheesecloth again.
- Pour into bottles and store in the refrigerator.
