Do Nothing Pineapple Cake Food

PINEAPPLE DO NOTHING CAKE

Steps:

• 1. For the Pineapple Cake, preheat the oven to 350 degrees. Generously spray a 9 x 13 pan with cooking oil.
• 2. Mix the flour and the sugar in a mixing bowl. Add the eggs, vanilla and the can of undrained crushed pineapple and mix until well blended with electric mixer on medium speed.
• 3. Pour the pineapple mixture into the prepared 9 x 13 pan and bake in the preheated 350 degree oven for 35-45 minutes until the cake is lightly browned and a toothpick comes out clean. Be very careful not to overbake.
• 4. For the icing, add butter, sugar and evaporated milk together in a heavy saucepan.
• 5. Bring to a slow boil over medium heat, stirring CONSTANTLY. Once mixture begins to boil, cook until mixture thickens ( about 7 to 10 minutes). When thickened, remove from heat.
• 6. Stir in 1 ½ cups coconut and 1 cup chopped pecans. Pour out onto warm cake and spread over the top.
• 7. Enjoy! This is wonderful either served while still warm or cooled.

MINI PINEAPPLE CAKES

Steps:

• Place an oven rack in the lower 1/3 of the oven. Preheat the oven to 325 degrees F. Butter and flour a mini Bundt pan.
• For the Cakes: Place the pineapple in the bowl of a food processor. Pulse until coarsely chopped. In a 10-inch nonstick skillet, combine the chopped pineapple, 2 tablespoons pineapple juice, sugar, and butter over medium-high heat. Bring the mixture to a boil, stirring occasionally. Cook until the liquid evaporates and the mixture begins to brown, about 10 to 15 minutes. Spoon the pineapple mixture into the prepared pan.
• In a large mixing bowl, combine the egg whites, water, vegetable oil, almond extract, cake mix, and 2/3 cup pineapple juice. Using an electric hand mixer, beat the mixture on medium speed for 2 minutes. Pour the batter over the cooked pineapple. Bake for 28 to 30 minutes until the cakes begin to pull away from the sides of the pan and the tops are golden. Allow the cakes to cool for 15 minutes. Place a piece of parchment paper on top of the cakes. Put a baking sheet, upside-down, on top of the parchment paper. Flip both pans over and allow the cakes to cool completely while still in the Bundt pan, about 1 hour. Unmold the cakes and place on individual serving plates.

Steps:

• Place first 6 ingredients in a bowl & mix until blended with spoon.
• Pour into 13x9 inch cake pan.
• Bake at 350°F 35-40 minutes.
• For Icing: Mix butter, sugar and evaporated milk together and cook over medium heat until a little thickened. (This usually takes about 5 minutes at a boil).
• Remove from heat and add remaining ingredients.
• Pour over hot cake.

Steps:

• Put all ingredients in large bowl and mix with spoon.
• Pour into greased 9x13x2 inch pan. Bake at 350 for 30 to 40 minutes or until center is done.
• Frosting:
• Combine butter, sugar, and milk in small saucepan. Cook for 5 minutes; make sure to stir well. Add nuts and coconut. Stir in well and spoon on cake while cake is hot ....
• DO NOT LET CAKE COOL. FROST WHILE CAKE AND FROSTING IS STILL HOT.

• Mix all cake ingredients together and mix with spoon (not mixer). Pour into 9 x 13 pan. Bake at 350 for 30-40 minutes or until center is done. Topping: Combine butter, sugar, milk in small saucepan. Cook 5 minutes. Add nuts and coconut. Spoon on cake while hot.

2-INGREDIENT PINEAPPLE ANGEL FOOD CAKE

Steps:

• Preheat the oven to 350 degrees F (175 degrees C).
• Combine dry cake mix with crushed pineapple and juice in a large bowl. Beat on low speed for 30 seconds, then beat on medium speed for 1 minute. Pour into an ungreased 10-inch tube pan.
• Bake in the preheated oven until deep golden brown, 40 to 45 minutes. Remove from the oven and immediately turn upside down to cool, about 2 hours.
• Run a knife around the edges and turn cooled cake out onto a serving place. Use a serrated knife to cut into slices.
