CARAMEL PEARS

Caramel Pears image

Try caramel pears instead of caramel apples this Halloween or fall! We used a shortcut to make our caramel sauce - simply microwave soft caramel candies with some half-and-half and get dipping! Pouring your caramel sauce into a wide mug and dipping your pears directly inside it also saves you the hassle of a messy cleanup afterwards.

Yield 4 caramel pears

Steps:

  • Microwave 10 ounces unwrapped soft caramels with 1 tablespoon half-and-half, stirring every 20 seconds, until smooth. Pour into a wide mug, then quickly dip 4 pears in the caramel, sprinkle with chopped pistachios and let set on a parchment-lined baking sheet.

CARAMEL PEAR CRUMBLE

Caramel Pear Crumble image

This is the first recipe I turn to after my mother shares juicy pears from her orchard. The down-home flavor of the not-too-sweet dessert is a welcomed alternative to apple crisp. Its crumbly topping and hint to caramel keep friends asking for more. -Karen Ann Bland Gove, Kansas

DIVINE CARAMEL PEAR CRISP

Time 1h15m

Number Of Ingredients 17

1/2 cup salted butter
1 1/2 cups packed light brown sugar
1/4 teaspoon salt
1 cup heavy whipping cream
1 tablespoon vanilla
4 pounds about 8 medium ripe pears, peeled, cored and diced (see note)
3 tablespoons fresh lemon juice
3 tablespoons all-purpose flour
1/2 teaspoon cinnamon
1 cup packed light brown sugar
1 cup all-purpose flour
1 cup old-fashioned rolled oats
1 1/2 teaspoons cinnamon
1/2 teaspoon salt
3/4 cup salted butter (cut into pieces)
Vanilla Ice Cream
Caramel Sauce

Steps:

  • For the caramel sauce, in a medium heavy-bottomed saucepan, combine the butter, sugar, salt and cream. Melt over low heat. Once all ingredients are melted and combined, increase the heat to medium and bring the mixture to a boil. Boil for 10 minutes. There's no need to stir but watch the heat - if it seems as though the mixture might be burning on the bottom (which can often happen if you are using a pan that isn't heavy-bottomed), reduce the heat. Remove from the heat and stir in the vanilla. Set aside to cool slightly (the caramel sauce can be made up to a week in advance - if using it in the recipe, warm slightly before adding to the pears).
  • Preheat the oven to 350 degrees F. Lightly grease a 8 1/2-inch by 12-inch pan with cooking spray (I know that's a random size that I happen to have - if you don't have that size, use something close like a 9X13-inch pan).
  • Toss the pears in a large bowl with the lemon juice, flour and cinnamon. Pour 1 cup of the caramel sauce over the pears and stir to combine well. Pour the mixture into the prepared pan.
  • For the topping, in a medium bowl, whisk together the brown sugar, flour, oats, cinnamon, and salt. Toss the pieces of butter in with the ingredients and use a pastry blender, two knives, your fingers, or anything else to cut the butter in until the mixture is crumbly. Spread the topping evenly over the pears.
  • Bake the crisp until the edges are bubbling and the top has deepened in color, 45-50 minutes. Remove from the oven and let cool for about 30 minutes. The crisp can be served warm or at room temperature.
  • Serve with vanilla ice cream and remaining caramel sauce.

  • Make the crisp: Mix the oats, almonds, sugar, cardamom and salt in a large bowl. Add the butter and smash flat with your fingers, rubbing the pieces into the dry ingredients so that the mixture resembles coarse meal with pebbly clumps. Refrigerate until ready to use.
  • Meanwhile, prepare the pears: Heat the oven to 400 degrees. Combine the sugar, butter, lemon juice, cardamom and salt in an 11- or 12-inch ovenproof skillet. Bring to a boil over medium-high heat, stirring to evenly melt the butter and sugar. Arrange the pears artfully in a single layer and cook, flipping once, until lightly browned, about 10 minutes. While cooking, the pan liquid should be dark golden brown. If it’s lighter, turn up the heat; if darker, reduce the heat.
  • Scatter one-third of the crisp mixture evenly over the pears to coat. Scatter the remaining on a parchment-paper-lined baking sheet in an even layer. Put both the skillet and baking sheet in the oven.
  • Bake the crisp bits, stirring once, until dark golden brown, 15 to 20 minutes. Transfer the sheet to a wire rack to cool completely. Continue baking the pears until the top is golden brown, the pears tender and the edges caramelized, 15 to 20 minutes more. Transfer the pear crisp to a rack to cool slightly. Serve warm with ice cream and more of the crunchy bits scattered on top.
