This moist and tender salmon fillet is marinated in a tangy dill sauce. The attractive entree comes from Karla Sprague of Hilton Head Island, South Carolina.

1 cup Dijon mustard
2/3 cup white wine or chicken broth
1/2 cup packed brown sugar
1/4 cup cider vinegar
3 tablespoons soy sauce
1 cup vegetable oil
1/2 cup minced fresh dill
1 teaspoon pepper
1 salmon fillet (1 inch thick and 3 pounds), cut in half widthwise

Steps:

  • In a small bowl, whisk the mustard, wine, brown sugar, vinegar and soy sauce until well blended. Gradually whisk in oil. Stir in dill and pepper. Place salmon in a shallow glass dish. Pour 2 cups marinade over salmon. Cover and refrigerate for 1 hour. Cover and refrigerate remaining marinade for basting., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Place salmon skin side down on grill. Grill, covered, over medium-hot heat or broil 4 in. from the heat for 5 minutes. Baste with some of the reserved marinade. Grill or broil 7-9 minutes longer or until fish flakes easily with a fork, basting occasionally.

2 tablespoons butter, plus more for dish
1 small onion, minced
Pinch cayenne pepper
1 package frozen spinach, thawed, drained and chopped
1 cup milk
2 eggs
2 cups shredded sharp Cheddar, plus extra for top
4 cups cooked rice
1 teaspoon freshly chopped parsley leaves
1 teaspoon freshly chopped thyme leaves
1 teaspoon chopped basil leaves
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees F. Butter a large casserole dish.
  • In a large pan over medium-high heat, saute onions with 2 tablespoons of butter and cayenne until translucent. Add the spinach and cook for 3 minutes. Set aside.
  • In a large bowl, whisk together milk and eggs.
  • Add the cheese, rice, parsley, thyme, basil and spinach mixture and combine well. Season with salt and pepper.
  • Pour into prepared casserole dish and top with extra shredded cheese. Bake for 30 minutes and serve piping hot.

DILLY CORNED BEEF AND CABBAGE

1 corned beef brisket (2-1/2 to 3-1/2 pounds)
1/4 cup honey
3 teaspoons Dijon style mustard, divided
1 medium head cabbage (3 pounds)
2 tablespoons butter or margarine, melted
1 tablespoon minced fresh dill or 1 teaspoon dill weed

Steps:

  • Place brisket with its seasoning packet in a Dutch oven add enough water to cover. Cover and simmer 2-1/2 hours or until tender. Remove the brisket and place on a broiling pan reserve cooking liquid in Dutch oven. Combine the honey and 1 teaspoon mustard brush half over meat. Broil 4 in. from the heat for 3 minutes. Brush with the remaining honey mixture broil 2 minutes more or until glazed. Meanwhile, cut cabbage into eight wedges simmer in cooking liquid for 10-15 minutes or until tender. 1 (8 ounce) package cream cheese
1 tablespoon prepared horseradish, or to taste
1 teaspoon dill weed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
  • On a lightly floured surface, unroll the crescent roll dough into a rectangle, and press all of the seams together to make a single sheet. Spread horseradish over the top of the block of cream cheese, then sprinkle with enough dried dill to cover. Place the block of cream cheese dill side down in the center of the sheet of dough. Sprinkle the other side with enough dill to cover. Wrap the dough around the cheese like a present, and seal any openings. Place on the prepared baking sheet.

I've never been big on casseroles (if you've had my mom's cooking, you'd understand why), but they are definitely an easy way to use up items that would otherwise be sitting in the pantry forever. This recipe is simple enough; feel free to add or supplement as you see fit!

1 cup elbow macaroni
1 (6 ounce) can salmon, drained
1 (10.75 ounce) can condensed cream of mushroom soup
⅔ cup milk, or to taste
½ cup grated Parmesan cheese
1 teaspoon salt
1 teaspoon ground black pepper
¼ cup French-fried onions

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 9-inch casserole dish.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain.

  • In a bowl, combine ham, bread crumbs, onions, 1 tablespoon fresh dill (or 1 teaspoon dried), milk, egg, mustard and 1/4 teaspoon pepper mix well. Shape into 1-in. balls. 2 cups uncooked macaroni (wholewheat rotini is fantastic)
14 1/2 ounces canned salmon
2 cups shredded monterey jack cheese
2 tablespoons butter
1/4 cup minced onion
1 tablespoon flour
1 cup low-fat milk
1 tablespoon lemon juice
1 tablespoon finely chopped fresh parsley

Steps:

  • Cook macaroni.
  • Drain salmon; break it into bite-size pieces.
  • Make Sauce: Melt butter. Saute onion until transparent. Blend in flour, stirring constantly. Slowly stir milk into saucepan mixture. Cook until smooth and thick, stirring constantly. Add lemon juice and parsley. Mix well.
  • Spoon pasta into sprayed casserole dish. Put salmon on top. Sprinkle with 3/4 cup cheese. Pour sauce over it, and sprinkle with the rest of the cheese.
  • Bake at 375 for 25 min or until hot and lightly browned.
  • NOTE: This doesn't make for a lot of sauce. To keep original proportions, double the butter, onion, flour, milk, lemon juice and parsley.
