With a few additional ingredients, transform Kraft Dinner or a box of regular Mac & Cheese into a delicious Cheesy Macaroni Salad. This salad is sure to be a very popular side dish at your dinner table!

2 boxes Macaroni and Cheese (Kraft Dinner)
1/4 cup diced red bell pepper
1/4 cup diced gherkins
1/4 cup diced jarred pickled onions
1 cup mayonnaise
1/4 cup heavy cream
1/2 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • Prepare the macaroni pasta according to the package instructions. Drain and rinse cooked macaroni under cold water. Set aside.
  • In a large mixing bowl, whisk together the two packets of powdered cheese, mayonnaise, heavy cream, salt, and pepper.
  • Add the macaroni, red pepper, gherkins, and onions. Toss to coat well in the cheese sauce.
  • Cover and refrigerate for two hours. Before serving, toss again.

I love a cool pasta salad and fresh peas from my garden on a hot summer day. I also love the addition of the krab, or use canned, drained shrimp. The peas just make this salad "Pop". Don't leave out the hot pepper sauce. Kick back on the deck with a glass of cold iced tea and you're set!

1 cup(s) dry, small macaroni shells
1 cup(s) mayonnaise
1/2 cup(s) dill pickles, chopped
1/4 cup(s) finely diced onions
1 tablespoon(s) dijon mustard
1 teaspoon(s) hot sauce (like louisiana hot sauce)
1 tablespoon(s) lemon juice
pinch salt and pepper to taste
1 cup(s) frozen peas
1 1/2 cup(s) finely cubed cheddar cheese (i used dubliner)
1 cup(s) krab, chopped
dill weed to garnish

Steps:

  • Boil macaroni in salted water to desired doneness. Cool immediately under cold water. Drain well, and set pasta aside.
  • In a mixing bowl, combine the rest of the ingredients and fold in the pasta. Garnish with dill weed. Serve on top of a bed of lettuce with club crackers.
  • Note: This is actually better if you let it sit in the fridge for a few hours.

1/2 cup KRAFT Mayo Homestyle Real Mayonnaise
3 hard-cooked eggs, chopped
1 green pepper, chopped
2 stalks celery, chopped (about 1 cup)
3 green onions, chopped

Steps:

  • Cook Macaroni as directed on package. Meanwhile, mix Cheese Sauce Mix and mayo in large microwaveable bowl until blended. Microwave on HIGH 20 sec.; stir.
  • Rinse macaroni; drain well. Add to mayo mixture; stir to evenly coat.
  • Add remaining ingredients. Refrigerate 1 hour.

1/4 medium red onion, minced
2 teaspoons kosher salt, plus additional for salting water
8 ounces elbow macaroni (about 2 cups)
2 tablespoons milk
2 tablespoons white wine vinegar
1 tablespoon Dijon mustard
Freshly ground black pepper
1/3 cup extra-virgin olive oil
1/3 cup sour cream
6 ounces cooked ham, cut into 1/3-inch cubes
3/4 cup frozen baby peas, thawed (about 4 ounces)
2 ribs celery, with leaves, diced
2 tablespoons chopped fresh dill

Steps:

  • To mellow the minced onion, soak it in cold water while you make the salad.
  • Bring a large pot of cold water to a boil over high heat and salt it generously. Add the macaroni and boil, stirring occasionally, until al dente, about 8 minutes. Drain the macaroni in a colander, put in a serving bowl, and toss with the milk. Allow the macaroni to cool slightly while you make the dressing.
  • For the dressing: Whisk the vinegar, mustard, the 2 teaspoons salt, and black pepper to taste in a large bowl. Gradually whisk in the olive oil, starting with a few drops and then adding the rest in a steady stream to make a smooth, slightly thick dressing. Whisk in the sour cream.

3/4 cup cubed cheddar cheese
1/3 cup finely chopped green onion

1 big onion, peeled and diced
1 dozen egg, hardboiled, peeled and roughly chopped
2 (15 ounce) cans black olives, very well drained

1 1/2-2 cups mayonnaise (NOT Miracle Whip)
2 -3 tablespoons Dijon mustard
salt and pepper

Steps:
