LEMON AND DILL RICE PILAF

This rice pilaf is a great accompaniment to any lunch or dinner. Filled with the Persian flavors and aromatic spices this pilaf goes well with any meat or fish recipes.

1 cup Basmati rice
1/4 cup Dill (chopped)
1 tbs Lemon Juice
2 tsp Butter
1/4 tsp Saffron Strands
3 Green Cardamom Pods
1 Garlic Clove (minced)
1 Bay Leaf
A piece of Cinnamon Stick (1/2 inch)
A piece of Star Anise
2 cups Water
Salt to taste.

Steps:

  • Start with soaking saffron strands in 1 tbsp warm water. Wash and rinse the rice several times.
  • In a wide pan, add butter along with spices and let them crackle.
  • Then add the washed rice and fry for a minute. Make sure not to burn the rice, so keep the heat on low.
  • Follow that by adding water, salt, and lemon juice. Cook the rice.
  • In the meantime, in a bowl mix chopped dill, minced garlic, and salt. Keep it aside.
  • Once the rice is cooked, spread it on a plate or sheet and let it cool for 5 mins.
  • Now in a pot, add the remaining butter and add half of the rice. Top that with chopped dill mixture and saffron water. Finally, add another half of the rice.
  • Cover the pot with an aluminum foil and close it tight with a lid. Cook on a low flame for another 15 minutes.
  • Once done, fluff the rice and serve.

2 tablespoons extra-virgin olive oil
1 small red onion, minced
2 cups long-grain white rice
1/4 pound capellini (angel hair) pasta, broken into 1-inch pieces (about 1 1/2 cups)
2 teaspoons coarse salt
3 cups chicken broth or water
2 tablespoons chopped fresh dill

Steps:

  • Heat oil in a medium saucepan over medium heat. Saute onion until softened, about 4 minutes. Add rice and capellini. Cook, stirring frequently, until slightly golden, about 4 minutes.
  • Add salt and broth; bring to a boil. Cover, reduce heat, and simmer until liquid is absorbed, about 20 minutes. Fluff rice with a fork, and stir in dill.

1/4 white or yellow onion (finely diced)
2 cloves garlic (crushed or minced)
1 cup white rice (uncooked)
2 cups reduced-sodium chicken broth ((or vegetable broth for a vegetarian dish))
pinch kosher salt
freshly ground black pepper (to taste)
1/2 teaspoon dried dill ( or 1 teaspoon fresh dill, chopped)
1 teaspoon dried parsley ((or 1 tablespoon fresh parsley, minced))
1/2 cup frozen peas

Steps:

  • Heat oil over medium heat in a medium pot. Add onion and sauté until tender, about 3 minutes. Add garlic and sauté one minute longer.
  • Stir in rice, and sauté for about 3 minutes, stirring constantly. Add broth, salt, pepper, dill, and parsley. Bring to a low boil, then reduce heat to simmer and cover. Cook 10 minutes.
  • Stir in frozen peas, and simmer an additional 10-12 minutes, or until liquid is absorbed.

1/2 tablespoon olive oil
3/4 cup basmati rice
1 1/2 cups water or 1 1/2 cups broth
1/2 teaspoon salt
1/3 cup walnuts
1/4 cup fresh dill leaves (NOT dried)
1/4 cup raisins or 1/4 cup golden raisin
1 teaspoon lemon zest, grated
1 tablespoon white wine vinegar

Steps:

  • In a saute pan heat up 1 tablespoon olive oil. Saute the basmati rice in the oil for 5 minutes or until light golden brown; stirring constantly.
  • Pour in the broth and add the salt. Cook covered over low heat for about 20 minutes or until water is absorbed and rice is tender.
  • While the rice is cooking, lightly toast the walnuts then chop coarsely. Chop the dill.
  • Fluff the rice with a fork and stir in the walnuts, dill, raisins, lemon zest, vinegar and 1/2 tablespoon olive oil.
  • Serve hot.

1 3/4 cups water
3/4 teaspoon kosher salt
1 tablespoon unsalted butter

1 tablespoon minced fresh scallions, white and green parts

Steps:

  • Combine the rice, 1 3/4 cups water, the salt, and butter in a small heavy-bottomed saucepan. Bring to a boil over high heat; reduce the heat to low, stir once, and simmer, covered tightly, for 15 minutes. (I need to pull the pot half off the burner to keep it from boiling over.) 3 tablespoons unsalted butter, divided
1/2 cup chopped yellow onion
Kosher salt
2 cups pure wild rice (10 to 12 ounces)
1/4 cup finely chopped scallions, white and green parts (2 scallions)
1 1/2 teaspoons freshly ground black pepper

Steps:

  • Melt 2 tablespoons of the butter in a medium saucepan, add the onion, and cook over low heat for 5 to 10 minutes, until translucent. Add 5 cups of water, 2 teaspoons of salt, and the wild rice. Bring to a boil, reduce the heat to very low, and simmer, covered, for 50 minutes to 1 hour, until the rice is tender. Drain well.
  • Place the drained rice in a bowl, add the remaining tablespoon of butter, the scallions, 1 1/2 teaspoons salt, and the pepper. Taste for seasonings and serve hot.

I found the basis for this recipe years ago and have revised it over the years. Try this tasty rice with fish or chicken. I prefer to use a good quality long grain rice, especially Jasmine, but any rice will do.

1 cup long grain rice
1/2 cup onion, finely chopped
2 tablespoons extra virgin olive oil
1 tablespoon dried dill
1/2 lemon, juice of
1/2 lemon, zest of, finely grated
1 teaspoon salt
fresh ground pepper (3 grindings)
2 cups water (scant)

Steps:

  • Heat the olive oil in a saucepan.
  • Saute the chopped onion for 1 minute.
  • Add rice and "parch" over low heat, by stirring until the rice turns white again. Do not let the rice brown.
  • Add the rest to the ingredients and bring to boil.
  • Lower heat and cover with a tight fitting lid. Cook until all of the liquid is absorbed.
  • Fluff well with a fork, replace the lid and let sit for 5 minutes.
  • Note: The rice turn translucent when mixed with the oil. Sauteing the rice greatly reduces foaming during cooking.

300g basmati rice
50g butter , plus extra to serve
1 onion , finely chopped
1 garlic clove , crushed
500ml vegetable stock
400g podded and skinned broad bean (about 1.6kg unpodded)
small pack of dill , chopped

Steps:

  • Rinse the rice until the water runs clear, then soak in warm water for 5 mins and drain well. Heat the butter in a saucepan and add the onion and garlic. Sizzle everything for 8-10 mins until softened, but not coloured. Stir though the rice and pour over the stock. Cover, bring to the boil, then turn down heat to a minimum and cook the rice very slowly for 10 mins.
  • Lift the lid, and quickly scatter over the podded beans, then replace the lid. Turn up the heat and simmer for 5 mins until all the liquid is absorbed. Add the dill, give the rice a good stir and serve with extra butter melting through.
