SPICY GARLIC & DILL PICKLED BEANS RECIPE

Steps:
- Prepare your canner and jars.
- Wash and trim vine ends off beans. Remove strings from string bean varieties. Cut beans into jar-length pieces, being sure to leave enough room for a ½ inch of headspace between the top of the beans and the top of the jar.
- In a saucepan, bring salt, water and vinegar to a boil over medium high heat. Heat, stirring until salt has completely dissolved.
- Remove jars from the canner and place one clove of garlic, ¼ teaspoon of dried chilli flakes OR one whole chilli pepper and one head of dill in each hot jar.
- Pack each jar full of beans until you can't pack any more in. Then, cover with hot vinegar brine, leaving a ½ inch of headspace at the top.
- Jostle jars gently to allow any trapped air bubbles to escape. Wipe rims, place lids on top and screw bands down to fingertip tight.
- Process jars in a boiling hot water bath for 10 minutes. Then remove canner lid and wait another five minutes before removing jars. Allow to cool completely before storing in a cool dark place.

CRISP PICKLED GREEN BEANS
This recipe is from my Grandmother's cookbook she made to pass to all her grandchildren. They come out very, very crisp with a wonderful dill flavor. The red pepper flakes give them a nice punch. They are much better than the recipes that call for cooking the beans first.

- Sterilize 6 (1/2 pint) jars with rings and lids and keep hot. Trim green beans to 1/4 inch shorter than your jars.
- In a large saucepan, stir together the vinegar, water and salt. Add garlic and bring to a rolling boil over high heat. In each jar, place 1 sprig of dill and 1/8 teaspoon of red pepper flakes. Pack green beans into the jars so they are standing on their ends.
- Ladle the boiling brine into the jars, filling to within 1/4 inch of the tops. Discard garlic. Seal jars with lids and rings. Place in a hot water bath so they are covered by 1 inch of water. Simmer but do not boil for 10 minutes to process. Cool to room temperature. Test jars for a good seal by pressing on the center of the lid. It should not move. Refrigerate any jars that do not seal properly. Let pickles ferment for 2 to 3 weeks before eating.

DILLED GREEN BEANS AND GARLIC PICKLE
This outstanding condiment was inspired by my son, who at 4 years old asked for a pickle that didn't taste pickly. As he was a charter member of my "Guinea Pig Club", I figured owe him at least that much. After several attempts resulting in truly frightening facial expressions, I eventually got a huge smile. So, for all you 'non-pickle' pickle lovers out there, here's one your going to love.

Steps:
- Wash and trim beans to fit vertically in pickle jar.
- In a medium pot add water, salt and beans and bring to a boil. Boil for 3 minutes.
- Remove beans, and immerse beans into ice water bath.
- Reserve blanching liquid.
- In the pot of water used to blanch beans, add vinegar, dried dill, 2 cloves of garlic and cayenne pepper.
- Return to a boil, reduce heat and simmer covered for 5 minutes.
- Into hot sterilized pickle jars, place 1 clove of garlic and 1 sprig of dill then pack with beans stacked vertically leaving 1/4 inch headspace.
- Ladle hot pickling liquid into packed jars, leaving 1/4 inch headspace and seal.
- Process in boiling water bath for 10 minutes.
- Store in cool dark place.
- Ready in 2 weeks and keeps 12 months.
- Serve chilled, refrigerate after opening.

DILLED GREEN BEANS
This is my expansion of a recipe found on the back of a jug of Heinz distilled white vinegar. Handling and processing still follows USDA pickling guidelines.

Steps:
- If desired, just use 12 black peppercorns, and omit pink and green peppercorns and/or juniper berries.
- This is much prettier, though, and tastes better.
- Sterilize 6 wide-mouth pint canning jars in boiling water in processing pot, which will be used later for processing beans.
- While water is heating, wash beans, trim ends, and cut in 4" lengths.
- Slice onions, lemons, and carrots, and peel garlic.
- Set aside all of the dry spices in 6 small piles, ready go in jars.
- In a 3-quart saucepan, combine vinegar, water, salt, and sugar, and bring to a boil over high heat, reduce heat, and maintain at a low simmer while packing the jars.
- Remove jars from water bath, drain, and place an onion slice, dry spices, and bay leaves in the bottom of each jar.
- Pack green beans, serrano chile, carrot halves, and garlic tightly into jar, place fresh dill on top, tucking in so none touches the rim.
- Top with a lemon slice to hold down dill, and repeat with all remaining jars, leaving ¼ headspace (if ingredients are cut to specifications, it all fits).
- Fill jars with boiling vinegar mixture, leaving ¼ headspace.
- Make sure all of the dill is tucked in, wipe the rims, and immediately seal with sterilized lids and rings.
- Place in hot water bath over high heat, bring to a boil, and process for 10 minutes after water returns to a boil.
- Remove from water bath, and set aside to cool to room temperature.
- Check for seal by pressing down on lids.
- If they are down and dont pop in and out, the seal is good.
- If seal is not good, reprocess with new lids to try for a seal, or store jars that did not seal in refrigerator until used.
- Allow to set for at least 3 weeks before using.
- Makes 6 pints.

- Clean and Cut beans to fit in tall Mason Jars. (one pint).
- Place ingredients 2-5 into each jar.
- Add beans to jar(s) until full.
- Bring to boil ingredients 6-8.
- Pour boiling liquid over beans.
- Tighten lids.
- Process in boiling water for 5 minutes. *Correction: Processing time should be 10-15 min, not 5.*.
- I use what ever amount of beans I have on hand and make the liquid accordingly.

Steps:
- In a medium saucepan combine 1 teaspoons.
- of the salt with the vinegar, sugar, garlic, bay leaves, onions, peppercorns and dill seed.
- Place the pan over moderate heat and bring liquid to a boil.
- Reduce heat to low, cover the pan and simmer for 30 minutes.
- Meanwhile, half fill another medium pan with water and bring to boil over moderate heat.
- Add remaining salt and beans and cook for 3 to 5 minutes.
- Remove the pan from heat and drain beans.
- Place them upright in dry, clean jars.
- Set aside.
- Remove vinegar mixture from heat.
- Strain the mixture over the beans up to the top of jars.
- Seal, and boil in a hot water bath for 10 minutes Store in a dark, cool place.

- These directions are for one jar.
- Adjust to suit the number of jars you will need for your beans.
- Sterilize canning jar (s) and lids (&rubber rings, if you are using old style jars).
- Trim ends off beans.
- Cook in boiling water just until tender (4-8 minutes).
- Drain and pour cold water over beans to chill.
- Drain thoroughly then arrange in (sterilized) jar.
- To each jar add salt, vinegar, sugar, dill, and garlic.
- Add COLD water to fill.
- Seal (screw on lids- with rings, if using old style jars).
- Store jars in a pan or container (brine may bubble over).
- Ready to eat in 7-10 days.
