SPICY GARLIC & DILL PICKLED BEANS RECIPE



Spicy Garlic & Dill Pickled Beans Recipe image

Number Of Ingredients 7

4½ lbs. green beans, washed, trimmed and cut into jar-length pieces
3 Tbsp. pickling salt
3 cups water
3 cups white vinegar
6 cloves of garlic
1½ tsp. dried chilli flakes (divided) OR 6 fresh or dried chilli peppers
6 fresh heads of dill seed

Steps:

  • Prepare your canner and jars.
  • Wash and trim vine ends off beans. Remove strings from string bean varieties. Cut beans into jar-length pieces, being sure to leave enough room for a ½ inch of headspace between the top of the beans and the top of the jar.
  • In a saucepan, bring salt, water and vinegar to a boil over medium high heat. Heat, stirring until salt has completely dissolved.
  • Remove jars from the canner and place one clove of garlic, ¼ teaspoon of dried chilli flakes OR one whole chilli pepper and one head of dill in each hot jar.
  • Pack each jar full of beans until you can't pack any more in. Then, cover with hot vinegar brine, leaving a ½ inch of headspace at the top.
  • Jostle jars gently to allow any trapped air bubbles to escape. Wipe rims, place lids on top and screw bands down to fingertip tight.
  • Process jars in a boiling hot water bath for 10 minutes. Then remove canner lid and wait another five minutes before removing jars. Allow to cool completely before storing in a cool dark place.

This recipe is from my Grandmother's cookbook she made to pass to all her grandchildren. They come out very, very crisp with a wonderful dill flavor. The red pepper flakes give them a nice punch. They are much better than the recipes that call for cooking the beans first.

2 ½ pounds fresh green beans
2 ½ cups distilled white vinegar
2 cups water
¼ cup salt
1 clove garlic, peeled
1 bunch fresh dill weed
¾ teaspoon red pepper flakes

Steps:

  • Sterilize 6 (1/2 pint) jars with rings and lids and keep hot. Trim green beans to 1/4 inch shorter than your jars.
  • In a large saucepan, stir together the vinegar, water and salt. Add garlic and bring to a rolling boil over high heat. In each jar, place 1 sprig of dill and 1/8 teaspoon of red pepper flakes. Pack green beans into the jars so they are standing on their ends.
  • Ladle the boiling brine into the jars, filling to within 1/4 inch of the tops. Discard garlic. Seal jars with lids and rings. Place in a hot water bath so they are covered by 1 inch of water. Simmer but do not boil for 10 minutes to process. Cool to room temperature. Test jars for a good seal by pressing on the center of the lid. It should not move. Refrigerate any jars that do not seal properly. Let pickles ferment for 2 to 3 weeks before eating.

This outstanding condiment was inspired by my son, who at 4 years old asked for a pickle that didn't taste pickly. As he was a charter member of my "Guinea Pig Club", I figured owe him at least that much. After several attempts resulting in truly frightening facial expressions, I eventually got a huge smile. So, for all you 'non-pickle' pickle lovers out there, here's one your going to love.

2 lbs fresh green beans
1 cup white vinegar
3 cups water
2 tablespoons pickling salt
4 sprigs fresh dill
2 teaspoons dried dill
6 garlic cloves
1 dash cayenne pepper (optional)

Steps:

  • Wash and trim beans to fit vertically in pickle jar.
  • In a medium pot add water, salt and beans and bring to a boil. Boil for 3 minutes.
  • Remove beans, and immerse beans into ice water bath.
  • Reserve blanching liquid.
  • In the pot of water used to blanch beans, add vinegar, dried dill, 2 cloves of garlic and cayenne pepper.
  • Return to a boil, reduce heat and simmer covered for 5 minutes.
  • Into hot sterilized pickle jars, place 1 clove of garlic and 1 sprig of dill then pack with beans stacked vertically leaving 1/4 inch headspace.
  • Ladle hot pickling liquid into packed jars, leaving 1/4 inch headspace and seal.
  • Process in boiling water bath for 10 minutes.
  • Store in cool dark place.
  • Ready in 2 weeks and keeps 12 months.
  • Serve chilled, refrigerate after opening.

This is my expansion of a recipe found on the back of a jug of Heinz distilled white vinegar. Handling and processing still follows USDA pickling guidelines.

4 lbs fresh green beans or 4 lbs yellow beans, about
3 1/2 cups distilled white vinegar
3 cups bottled water
3 tablespoons pickling salt or 3 tablespoons kosher salt
1/4 cup sugar
3 bunches fresh dill, rinsed and stemmed (1/2 bunch per jar)
6 -12 cloves garlic, peeled and halved (1 or 2 per jar)
6 baby carrots, halved lengthwise (2 halves per jar)
6 small serrano chilies, rinsed and stemmed (1 whole chile per jar)
1 medium onion, cut into 6 1/4 inch slices (1 slice per jar)
1 medium lemon, cut in 6 1/8 inch slices and seeded (1 slice per jar)
6 medium bay leaves or 12 small bay leaves (1 or 2 per jar)
36 whole black peppercorns (6 per jar)
18 whole green peppercorns (3 per jar)
18 whole pink peppercorns (3 per jar, pretty) (optional)
6 whole juniper berries (1 per jar) (optional)
1/4 teaspoon mustard seeds
1/4 teaspoon dill seed

Steps:

  • If desired, just use 12 black peppercorns, and omit pink and green peppercorns and/or juniper berries.
  • This is much prettier, though, and tastes better.
  • Sterilize 6 wide-mouth pint canning jars in boiling water in processing pot, which will be used later for processing beans.
  • While water is heating, wash beans, trim ends, and cut in 4" lengths.
  • Slice onions, lemons, and carrots, and peel garlic.
  • Set aside all of the dry spices in 6 small piles, ready go in jars.
  • In a 3-quart saucepan, combine vinegar, water, salt, and sugar, and bring to a boil over high heat, reduce heat, and maintain at a low simmer while packing the jars.
  • Remove jars from water bath, drain, and place an onion slice, dry spices, and bay leaves in the bottom of each jar.
  • Pack green beans, serrano chile, carrot halves, and garlic tightly into jar, place fresh dill on top, tucking in so none touches the rim.
  • Top with a lemon slice to hold down dill, and repeat with all remaining jars, leaving ¼” headspace (if ingredients are cut to specifications, it all fits).
  • Fill jars with boiling vinegar mixture, leaving ¼” headspace.
  • Make sure all of the dill is tucked in, wipe the rims, and immediately seal with sterilized lids and rings.
  • Place in hot water bath over high heat, bring to a boil, and process for 10 minutes after water returns to a boil.
  • Remove from water bath, and set aside to cool to room temperature.
  • Check for seal by pressing down on lids.
  • If they are down and don’t pop in and out, the seal is good.
  • If seal is not good, reprocess with new lids to try for a seal, or store jars that did not seal in refrigerator until used.
  • Allow to set for at least 3 weeks before using.
  • Makes 6 pints.

4 lbs green beans
1/2 teaspoon crushed red pepper flakes, per jar
1/2 teaspoon mustard seeds, per jar
1/2 teaspoon dill seed, per jar
1 whole garlic clove, per jar
5 cups vinegar
5 cups water
1/2 cup salt

Steps:

  • Clean and Cut beans to fit in tall Mason Jars. (one pint).
  • Place ingredients 2-5 into each jar.
  • Add beans to jar(s) until full.
  • Bring to boil ingredients 6-8.
  • Pour boiling liquid over beans.
  • Tighten lids.
  • Process in boiling water for 5 minutes. *Correction: Processing time should be 10-15 min, not 5.*.
  • I use what ever amount of beans I have on hand and make the liquid accordingly.

1 1/2 teaspoons salt
3 3/4 cups white wine vinegar
1/2 cup sugar
4 garlic cloves, peeled
4 bay leaves
2 onions, thinly sliced
6 black peppercorns
2 teaspoons dill seeds
2 lbs fresh green beans, trimmed

Steps:

  • In a medium saucepan combine 1 teaspoons.
  • of the salt with the vinegar, sugar, garlic, bay leaves, onions, peppercorns and dill seed.
  • Place the pan over moderate heat and bring liquid to a boil.
  • Reduce heat to low, cover the pan and simmer for 30 minutes.
  • Meanwhile, half fill another medium pan with water and bring to boil over moderate heat.
  • Add remaining salt and beans and cook for 3 to 5 minutes.
  • Remove the pan from heat and drain beans.
  • Place them upright in dry, clean jars.
  • Set aside.
  • Remove vinegar mixture from heat.
  • Strain the mixture over the beans up to the top of jars.
  • Seal, and boil in a hot water bath for 10 minutes Store in a dark, cool place.

1 tablespoon pickling salt
2 tablespoons vinegar
1/2 teaspoon sugar
1 sprig dill

Steps:

  • These directions are for one jar.
  • Adjust to suit the number of jars you will need for your beans.
  • Sterilize canning jar (s) and lids (&rubber rings, if you are using old style jars).
  • Trim ends off beans.
  • Cook in boiling water just until tender (4-8 minutes).
  • Drain and pour cold water over beans to chill.
  • Drain thoroughly then arrange in (sterilized) jar.

1-3/4 pounds fresh green beans, trimmed
1 teaspoon cayenne pepper
4 garlic cloves, peeled
4 teaspoons dill seed or 4 fresh dill heads
2-1/2 cups water
2-1/2 cups white vinegar
1/4 cup canning salt

Steps:

  • Pack beans into 4 hot 1-pint jars to within 1/2 in. of the top. Add cayenne, garlic and dill seed to jars., In a large saucepan, bring water, vinegar and salt to a boil., Carefully ladle hot liquid over beans, leaving 1/2-in. headspace.
