DILLED CABBAGE SOUP

- In a Dutch oven, saute the cabbage, onion and celery in butter for 1 minute. Cover and cook on low for 10 minutes. Set aside 1/2 cup broth. Add potatoes and remaining broth to cabbage mixture. , Whisk flour and reserved broth until smooth; stir into cabbage mixture. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 20 minutes, stirring occasionally. , Stir a small amount of hot broth into sour cream; return all to pan, stirring constantly. Add dill and pepper; heat through (do not boil).

Steps:
- Melt butter in saucepan over medium heat.
- Add onion, celery, cabbage, salt, and pepper.
- Partly cover and cook for 10 minutes over a low heat.
- Add potatoes, chicken stock, and dill.
- Bring to a boil while stirring periodically.
- Boil, partly covered, for 20 minutes.
- Mix the flour with the sour cream in a bowl.
- Add 1/2 cup of the hot soup stock to bowl, mix well, and pour into soup.
- Mix well and serve.
CREAMY CHEESY CABBAGE SOUP
This soup is worthy of carrying a brand name label. It is also a great way to get the kids to eat their veggies!

- In a large saucepan cook vegetables in 2 cups vegetable broth until tender, about 45 minutes. Add dill seed.
- While vegetables are cooking make sauce as follows: Melt butter in medium saucepan; stir in flour and cook 1 minute, stirring constantly. Stir in milk and remaining 2 cups vegetable broth. Cook over medium heat, stirring occasionally until thickened, about 8-10 minutes.
- Add cheese, thyme, and white pepper.
- When cheese has melted, add to vegetable mixture and stir well. Add crumbled bacon and stir again.
- Serve hot and enjoy!
KIELBASA, POTATO AND CABBAGE SOUP

- Heat the oil in a large Dutch oven over medium-high heat, add the kielbasa and brown. Remove the kielbasa to a paper towel-lined plate. Add the potatoes, paprika, coriander, allspice, carrots, celery, garlic, onions and some salt and pepper. Cook, partially covered, 5 to 6 minutes. Then wilt in the cabbage and season with a little nutmeg. Deglaze the pan with the beer. Add the stock and passata, then slide the kielbasa back in the pot and simmer to combine flavors, 15 minutes. Cool and store for a make-ahead meal. Reheat over medium heat. Finish the soup with the creme fraiche, herbs and lemon juice; serve in shallow bowls.

We really love this cabbage served with corned beef or a roasted pork loin. My family just loves this cabbage. The longer the cabbage is cooked, the softer it gets, so make it how you prefer.

- Combine cabbage, onions, caraway seeds, diced tomatoes, carrots, and 1 teaspoon chopped dill.
- Spaetzle: Sift flour and salt into bowl.
- Make a well in the center.
- Combine lukewarm milk and water with eggs and pour into the well.
- Stir in flour, lemon, and remaining dill.
- Beat dough until bubbles start to form.
- Force through colander into boiling salted water.
- When spaetzle noodles float, remove them from the boiling water and cool.

- In a large pan of boiling, salted water, blanch cabbage for 2 minutes and drain.
- Cook bacon in a large saucepan over moderate heat until crisp.
- Add leek and cook, stirring, until softened.
- Stir in flour and cook, stirring, for 3 minutes.
- Add stock in a thin stream, stirring constantly, and stir in cabbage, carrots, potatoes, wine, sugar and caraway.
- Bring to a boil and simmer, covered, until vegetables are tender, 30-40 minutes.
- Puree soup in batches in blender until smooth and return to pan.
- Stir in half and half and simmer, stirring occasionally, for 15 minutes.
