Delicious grilled steaks in a rich, savory marinade.

½ cup olive oil
½ cup soy sauce
2 tablespoons lemon juice
5 cloves garlic (minced (2-3 tablespoons))
2 tablespoons Worcestershire sauce
1-2 tablespoons honey
1 teaspoon garlic powder
½ teaspoon onion powder
2 pounds New York Strip steaks

Steps:

  • Whisk together all of the ingredients for the marinade, except for the meat, in a small bowl.
  • Place the meat in a large zip-top bag and massage the marinade into the meat. Seal the bag, making sure to get out as much air as possible. (Alternatively you could place the meat in the marinade in an airtight container - just be sure to flip it a few times so the meat gets the marinade on both sides).
  • Store in the refrigerator for at least 6 hours or up to 5 days. Or keep in the freezer for up to 12 months.
  • Set meat on the counter for 20-30 minutes to come to room temperature before grilling.

3/4 cup salad oil
1/3 cup sliced dill pickles
3/4 cup dill pickle liquid
1 clove minced garlic
3 pounds top round beef or London broil or any favorite steak for grilling

Steps:

  • Combine all of the above in plastic bag; add meat and turn to coat. Set bag on plate in refrigerator and marinate overnight, turning meat once or twice. Remove meat to grill, reserving marinade. Grill steak 6 inches above hot coals about 15 minutes for medium; brush with marinade when turning over. Cut meat diagonally across grain in very thin slices. NOTE: Pickle juice is a great meat tenderizer!

4 skinless chicken thighs
1 ½ cups dill pickle juice
1 tablespoon olive oil
½ teaspoon seasoned salt
½ teaspoon paprika
½ teaspoon freeze-dried dill
¼ teaspoon ground black pepper

Steps:

  • Place chicken thighs in a gallon-sized resealable bag. Pour pickle juice over the chicken. Seal bag and refrigerate for 4 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Whisk olive oil, seasoned salt, paprika, dill, and pepper together. Remove chicken from pickle juice; discard the juice. Brush all sides of the chicken with the seasoned oil.
  • Grill chicken for 6 minutes. Flip and grill until no longer pink in the center, about 6 minutes more.

11 cups water
5 cups white vinegar
1 cup canning salt
12 pounds pickling cucumbers, quartered or halved lengthwise
9 dill sprigs or heads
18 garlic cloves
18 dried hot chilies

Steps:

  • In a stockpot, bring water, vinegar and salt to a boil; boil 10 minutes. Pack cucumbers into nine hot quart jars within 1/2 in. of top. Place one dill head, two garlic cloves and two peppers in each jar. , Carefully ladle hot mixture into jars, leaving 1/2-in. headspace. . Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 15 minutes. Remove jars and cool.

Grilling might just be the best way to cook up a skirt steak. The intense heat gives the succulent and flavorful cut a rich char that's smoky and crisp at the edges. The trick is to get the fire hot enough and dry off any marinade before placing the meat on the grill. This will give you the deepest sear. Here, the meat is marinated in a garlicky herb paste flecked with pickled pepperoncini chiles. Other pickled peppers will work, too, so feel free to substitute pickled jalapeños if that's what you've got. Or use a fresh jalapeño and a dash of pickle juice to get a similar hot and vinegary punch. Lastly, be sure not to overcook the meat. Rare to medium rare guarantees tender beef.

3 scallions, white and green parts, thinly sliced, more for garnish
2 tablespoons lemon thyme leaves, more for garnish

2 tablespoons coarsely chopped peperoncini (1 to 2 peppers), pickled jalapeño or other pickled peppers
2 1/2 teaspoons kosher salt
Finely grated zest of 1 lemon
Juice of half a lemon
1/4 cup extra-virgin olive oil
2 1/2 pounds skirt steak

Steps:

  • In a blender or food processor, combine basil, scallions, lemon thyme, garlic, peperoncini, salt and lemon zest and juice. Pour olive oil over mixture; blend until it turns to paste.
  • Using paper towels, pat steak dry and place in a large bowl; slather paste mixture all over meat. Cover and refrigerate at least 30 minutes or overnight.
  • Light the grill or heat the broiler with the rack as close to the heat source as possible. Use a paper towel to pat steak dry. (You can leave some of the paste, but for the best sear, the meat should be dry when it hits the grill.) Grill meat over direct heat until char lines appear, and meat is done to taste, 3 to 5 minutes per side, or broil until charred, 2 to 5 minutes per side. Let rest for 5 minutes before slicing against the grain and serving, garnished with herbs and scallions.

Steps:

  • Arrange pork chops in a shallow dish. Cover with pickle juice. Marinate in refrigerator at least one hour, but I recommend from 8 to 24 hours.
  • Preheat an outdoor grill for medium-high heat, and lightly oil grate.

2 1 1/4-inch-thick tuna steaks
¼ cup spicy brown mustard
1 teaspoon mustard powder
3 tablespoons white sugar
2 tablespoons white wine vinegar
⅓ cup olive oil
3 tablespoons dried dill

Steps:

  • Combine the lemon juice with 1/2 cup olive oil in a sealable plastic bag; seal and shake. Add the tuna steaks and store in refrigerator to marinate while the grill preheats.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Whisk the brown mustard, mustard powder, sugar, vinegar, and 1/3 cup olive oil together in a bowl; stir in the dill.
