1 (9-pound) store bought bone-in spiral ham
3/4 cup water
1/2 cup maple syrup
1/2 cup dark brown sugar
2 tablespoons whole-grain Dijon mustard
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Pumpernickel bread
Assorted mustards
Pickled shallots
Cornichons
Assorted cheeses

Steps:

  • Preheat oven to 300 degrees F.
  • Place ham in a roasting pan and pour about 3/4 cup water into the bottom of pan. Cover with aluminum foil and bake for 1 hour and 40 minutes or until heated through, soft and tender.
  • Make the glaze:
  • Whisk all ingredients together in a saucepan until smooth and heat over medium-low to medium heat until simmering. Simmer for 2 minutes and remove from heat.
  • When ham is heated through, remove the aluminum foil, and pour or brush the glaze over the top to cover completely. Raise oven temperature to 400 degrees F.
  • Return the ham to the oven and cook, uncovered, for 20 minutes or until glaze is caramelized and bubbly. Let rest for 10 minutes before slicing. Serve with desired fixings.

1 can (8 oz.) crushed pineapple in juice, drained
1/2 cup packed brown sugar
1/4 cup GREY POUPON Dijon Mustard

Steps:

  • Heat oven to 325ºF.
  • Place ham in shallow pan. Bake 1 hour. After about 45 min., bring remaining ingredients to boil in saucepan; simmer on medium-low heat 5 min., stirring occasionally.
  • Spoon 1/2 cup pineapple glaze over ham; bake 40 min. or until ham is heated through (160ºF). Keep remaining glaze warm.
  • Slice ham. Serve topped with remaining glaze.

2 cups fresh cranberries
1/4 cup water
1/4 cup honey
2 tablespoons dijon mustard
1/4 cup apple cider vinegar
1/2 cup brown sugar
1/2 teaspoon cayenne pepper
5-6 pound cooked ham (I used a sliced spiral ham)

Steps:

  • Combine cranberries, water, and honey in a medium saucepan. Set over medium heat.
  • Stir occasionally for about 4-5 minutes, until most of the cranberries have popped.
  • Add dijon mustard, vinegar, brown sugar, and cayenne pepper.
  • Continue to cook for another 3-5 minutes until the sauce has thickened some and is syrupy. Remove from heat.
  • If you have an immersion blender, use it to puree the sauce. (If you don't, transfer the mixture to a regular blender. Leave the top of the blender vented (to allow steam to escape) and cover with a towel. Blend it up until smooth.)
  • Preheat your oven to 325 degrees F. Prepare a roasting pan with a roasting rack so that the ham doesn't cook in it's own juices (you want a nice crispy bottom, no soggy ham bottoms please.)
  • Place the ham on the roasting rack and use a sharp serrated knife to score the ham diagonally.
  • Use a brush to coat the ham all over with the cranberry sauce. (You will repeat this process once more about 20 minutes before the ham is done.)
  • Place the pan in the oven and roast for 1 and 1/2 to 2 and 1/4 hours, or until a thermometer registers 135 degrees F. (About 20-25 minutes per pound). (You don't need to worry about the temperature too much since the ham is already cooked. You just want to make sure it's hot all the way through.
  • 20 minutes before you think it will be done, brush with sauce one more time.
  • Serve the ham with the remaining glaze (Warm it up in the microwave or on the stove since it will be cool by now.)

1 whole smoked ham (about 2.5 pounds (a city ham or Prague ham))
3/4 cup real maple syrup
1/4 cup brown sugar
1/4 cup dijon mustard
1 tablespoon Worcestershire sauce
2 tablespoons balsamic vinegar
2 cloves garlic (finely minced)
4 small shallots (finely minced (optional))
2 tablespoons olive oil
1/2 tablespoon fresh chopped rosemary ((or 1 teaspoon dried))
1/2 tbsp fresh chopped thyme ((or 1/2 teaspoon dried))

Steps:

  • Preheat your oven to 325 degrees Fahrenheit and prepare a large baking dish by spraying it with non-stick cooking spray.
  • Remove the skin from the ham, leaving as much of the fat on as possible.
  • Add the ham to the baking dish and score the top (fat side up) with a sharp knife in a diagonal cross pattern (instructions in blog post above).
  • In a medium bowl, whisk together the maple syrup, the dijon mustard, the Worcestershire sauce, balsamic vinegar, garlic, shallots (if using), olive oil, rosemary and thyme until the glaze is smooth and everything is incorporated.
  • Pour the glaze over the ham, brushing the glaze into the cracks on the top of the ham.
  • Roast for 45-55 minutes, or until the internal temperature of the ham reaches 145 degrees Fahrenheit (or 63 degrees Celsius). Use a meat thermometer or an instant read meat thermometer to ensure the ham isn't over-cooked or under-cooked.
  • Baste the ham 3 times through cooking (after 15-20 minutes) by drizzling the glaze from the bottom of the pan over the ham while it roasts.
  • Let the ham rest covered with aluminum foil for 5-10 minutes before slicing and serving.

1 (12 ounce) package frozen unsweetened raspberries, thawed
1 (16 ounce) jar red currant jelly
1 (8 ounce) jar Dijon mustard
1 (10 -13 lb) precooked bone-in whole ham
1 1/2 cups firmly packed light brown sugar
1 cup water
kale leaf, to garnish
flat leaf parsley, to garnish

Steps:

  • Preheat the oven to 350°.
  • Purée the berries with their juices in a blender or food processor, and pass the purée through a fine-mesh sieve. You should have about 1 cup purée.
  • Stir together the raspberry purée, red currant jelly, and Dijon mustard in a saucepan over medium heat until the jelly dissolves. Boost the heat to high and bring mixture to a boil. Cook, stirring constantly, for 1 minute. Remove from the heat and set aside to use as a glaze. You should have just about 3 cups.
  • Place the ham, fatty side up, in a roasting pan. Peel off the skin and trim off most of the fat. Score the remaining fat in a diamond pattern. Rub the brown sugar over the surface.
  • Roast the ham for 30 minutes. Remove from the oven and pour the water over the ham. Spoon 1 cup of the glaze over the ham, and return it to the oven. Bake for 2 1/2 hours longer, basting every 15-20 minutes with the pan juices and adding 1/3 cup of the raspberry glaze in the process until it is all used up.
  • Line a large platter with the kale and parsley and place ham on it. Carve at the table.
