3 cups all-purpose flour
½ teaspoon salt
2 ½ teaspoons baking powder
2 cups white sugar
1 cup vegetable oil
4 eggs, beaten
¼ cup orange juice
2 teaspoons vanilla extract
3 apples - peeled, cored and sliced
2 teaspoons ground cinnamon
5 teaspoons white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 10 inch tube pan. Combine the ground cinnamon and 5 teaspoons of the sugar together and set aside.
  • In a large mixing bowl, combine the flour, salt, baking powder and 2 cups of the sugar. Stir in the vegetable oil, beaten eggs, orange juice and vanilla. Mix well.
  • Pour 1/2 of the batter into the prepared pan. Top with 1/2 of the sliced apples and sprinkle with 1/2 of the cinnamon sugar mixture. Pour the remaining batter over the top and layer the remaining sliced apples and cinnamon sugar.
  • Bake at 350 degrees F (175 degrees C) for 70 to 90 minutes.

3 cups unsifted all-purpose flour
2 1/2 cups sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 cup oil
2 1/2 teaspoons real vanilla
4 large eggs, unbeaten
1/2 cup orange juice, freshly squeezed
4 large apples, peeled, and sliced
4 teaspoons cinnamon
5 tablespoons sugar, separated (**keep from the other sugar**)

Steps:

  • Beat together until smooth--flour, 2 1/2 cups of sugar, baking powder, salt, vanilla, oil, eggs, and juice. Then in a separate bowl, mix apples, cinnamon, and sugar.
  • Layer the batter and apples in a greased tube pan.
  • **pour some batter--then layer it with apples--then switch back and forth until it is all used up**.
  • Bake in oven at 350° for 1 1/2 hours to 1 3/4 hours.

2 cups sugar
1 cup vegetable oil
4 eggs
¼ cup orange or pineapple juice
2 ½ teaspoons vanilla
3 teaspoons baking powder
1 teaspoon salt
3-4 apples, peeled, cored, and sliced into 1/2" slices

Steps:

  • Preheat oven to 350ºF. Grease and flour a 10" tube or 12 cup Bundt pan.In a mixing bowl, combine the cinnamon and sugar and add apple slices. Toss to coat. Set aside.In a large mixing bowl, sift together the flour, baking powder, and salt, then add sugar, oil, eggs, juice, and vanilla and beat until smooth. Batter will be very stiff.Spoon a third of the batter into the bottom of the pan. The batter will be thick so once you spoon it in, give it a slight "shimmy" to create an even layer. Arrange half the sliced apples on top, then add another third of the batter, the remaining apples, and top with the last third of the batter. Use your best rubber spatula to get all the good batter from the bowl so none goes to waste! Apples won't be completely covered.Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour 15 minutes. Cool in the pan for 20 minutes before inverting onto a serving platter. Then let it cool completely.You can top the cake with a simple powdered sugar-and-orange juice glaze, a dusting of powdered sugar, or serve it as-is! Slice and enjoy!

This recipe is a bit different because the apples are grated instead of chopped or sliced and there is pineapple juice instead of the traditional orange juice. For a richer cake, I use butter instead of oil, but it tastes wonderful both ways. Enjoy!

4 -5 large apples, peeled and grated
1/2 cup sugar
4 teaspoons cinnamon
3 cups flour
2 cups sugar
1 cup vegetable oil
3 teaspoons baking powder
4 eggs
1/4 cup pineapple juice
2 1/2 teaspoons vanilla extract
1 teaspoon salt
1 cup chopped walnuts or 1 cup pecans, optional

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Mix filling ingredients together and set aside.
  • Place all batter ingredients (except nuts, if using) into a large bowl and beat until smooth.
  • Fold in nuts if using.
  • Pour half of batter into greased tube or bundt pan.
  • Place half of filling mixture over batter; add the rest of batter over that.
  • Spread remaining filling over top.
  • Bake for 1 hour and 20 minutes or until cake tests done.
  • Cool in pan until warm and then turn out onto wire rack.

Yield Makes 1 Cake

Number Of Ingredients 12

3 cups unbleached all-purpose flour
2 tablespoons wheat germ (optional)
1/2 teaspoon salt
1 tablespoon baking powder
6 small Rome, Granny Smith, Yellow Delicious, or other low-moisture apples
Juice of 1/2 lemon
4 large eggs
1 cup vegetable oil
2 cups sugar
1 tablespoon vanilla extract
1/2 cup orange juice
1 teaspoon cinnamon

Steps:

  • Preheat the oven to 350°. Grease and flour a 9-inch springform pan.
  • Mix the flour, wheat germ, salt, and baking powder in a bowl and set aside.
  • Peel, core, and slice the apples into eighths and place in another bowl. Sprinkle with lemon juice.
  • In a third bowl, beat the eggs until foamy. Add the vegetable oil and 1 3/4 cups of the sugar; beat well. Stir in the vanilla.
  • To the egg mixture; alternately add the dry ingredients and the orange juice. Pour half the batter into the prepared pan. Cover with half the sliced apples.
  • In a small bowl, mix the remaining 1/4 cup sugar with the cinnamon and sprinkle half over the apples. Cover with the remaining batter.
  • Starting at the outside of the pan, neatly place the remaining apple slices in overlapping concentric circles. Sprinkle with the remaining cinnamon sugar mixture.
  • Put some aluminum foil on the bottom of the oven in case the batter leaks. Bake the cake on the middle rack for 1 1/4 hours, or until a toothpick inserted in the center comes out clean. Cool on a rack before you carefully remove the cake from the pan.

Steps:

  • In a bowl, combine flour, 2 cups sugar, baking powder and salt. Combine eggs, oil, orange juice and vanilla; add to flour mixture and mix well. , In a bowl, toss apples with cinnamon and remaining sugar. Spread a third of the batter into a greased 10-in. tube pan. Top with half the apples. Repeat layers. Carefully spread remaining batter over apples. , Bake at 350° for 55-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 15 minutes before removing from pan to a wire rack; cool. Dust with confectioners' sugar.
