SLOW COOKED STEAK DIANE CASSEROLE

Slow Cooked Steak Diane Casserole - a great make-ahead meal, perfect for feeding a crowd! Cook in the oven, slow cooker or on the hob.

2 tbsp vegetable oil
1.5 kg (3.3lb) braising beef or casserole beef ((chopped into bitesizechunks))
3 tbsp plain/all-purpose flour ((you can use gluten free plain flour if required))
½ tsp salt
½ tsp freshly ground black pepper
1 large onion ((peeled and chopped))
4 cloves garlic ((peeled and minced))
2 tbsp tomato puree/tomato paste
4 tbsp brandy or whisky
1 tbsp Worcestershire sauce
1 Litre (4 1/4 cups) beef stock ((3 stock cubes plus water is fine, or use homemade stock or bouillon for gluten free))
300 g (10 1/2 oz) chestnut mushrooms, thickly sliced ((thickly sliced))
1 tbsp cornflour cornstarch mixed with 3 tbsp cold water, to make a slurry ((optional))
120 ml (1/2 cup) double (heavy) cream
small bunch fresh parsley roughly chopped

Steps:

  • Preheat the oven to 160C/320F.
  • Heat the oil in a large casserole pan over a high heat.
  • Place the chopped beef in a bowl and sprinkle on the flour, salt and pepper. Toss everything together, then add the beef to to the casserole pan. Cook for 6-8 minutes, turning regularly until browned all over (you can do this in batches if you like, but I find it doesn't impact the look or taste for this recipe to cook it all in one go)
  • Once the meat is browned, turn down the heat to medium and add the onion. Continue to cook for a further 3-4 minutes, stirring regularly until the onion starts to soften.
  • Stir in the garlic and tomato puree, cook for a further minute, then add the brandy/whisky, Worcestershire sauce, beef stock and mushrooms.
  • Stir everything together, being sure to scrape up any bits that may have stuck to the bottom of the pan. Bring to the boil, stir again then place a lid on the pan and place the pan in the oven* to cook for 3 hours, until the beef is tender. Check a few times during the last hour of cooking to ensure casserole doesn't cook dry. Add good splash of boiling water or stock if it starts to look too dry.
  • Once the meat is tender, remove from the oven. If you'd like to thicken the sauce a little, stir in the cornflour slurry.
  • Add the cream and stir, then top with freshly chopped parsley and a sprinkling of black pepper.
  • Serve with mashed potato and green veg such as broccoli, green beans and kale

2 small onions, chopped
1 pound fresh mushrooms
8 skinless, boneless chicken breast halves
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon paprika
2 teaspoons chopped fresh chives
2 teaspoons dried parsley
½ cup chicken broth
¼ cup brandy
2 tablespoons prepared Dijon-style mustard

Steps:

  • Saute onions and mushrooms in a large skillet over medium heat. Remove onion/mushroom mixture from skillet and reserve; add chicken breasts to skillet. Saute for 4 minutes, then turn over and add mushroom mixture on top.
  • In a small bowl mix salt, pepper, paprika, chives and parsley together then sprinkle mixture over chicken. In a medium bowl combine the broth, brandy and mustard and blend together. Pour over chicken, reduce heat to low and simmer for 20 to 25 minutes or until chicken is cooked through (no longer pink inside).

I have been making this for over 10 years and is the most requested recipe I have! This is everyone's favorite chicken dish I make! It's a nice change from "ordinary" chicken! Goes well with steamed broccoli. (Note: This is a "Diane" recipe, therefore has a mustard taste to it!!)

4 large boneless skinless chicken breast halves
1/2 teaspoon salt
1/2 teaspoon fresh coarse ground black pepper
2 tablespoons olive oil
2 tablespoons butter
3 tablespoons chopped chives
1/2 lime, juice of
2 tablespoons brandy
3 tablespoons chopped fresh parsley
2 teaspoons Dijon mustard
1/4 cup chicken broth

Steps:

  • Place chicken breast halves between wax paper and pound slightly with mallet.
  • Sprinkle with salt and pepper.
  • Heat 1 Tbsp each oil and butter in large skillet.
  • Cook chicken over high heat 4 minutes each side.
  • Do not cook longer or they will be dry.
  • Transfer to a warm serving platter.
  • Add chives, lime, brandy, parsley, and mustard to pan, whisking constantly for 15 seconds.
  • Whisk in broth.
  • Stir until sauce is smooth.
  • Whisk in remaining butter and oil.
  • Pour sauce over chicken and serve immediately.

PAUL PRUDHOMME'S CHICKEN DIANE

This was one of my FAVORITE chicken dishes growing up. We didn't have it too often, (for health reasons :) but when we did I knew it was going to be a good night! If you can't find Paul Prudhomme's "Magic Cajun Spice" you can substitute his "Magic Poultry" or even "Magic for Veal or Pork", but the Cajun seasoning gives it a good kick! Also, we much more prefer boneless skinless thighs. In our family's opinion this dish is just not as flavorful with breast meat, but I left the recipe as it was written by Paul Prudhomme.

12 ounces boneless skinless chicken breasts, cut into strips (*)
1/2 lb fresh mushrooms, sliced
6 ounces unsalted butter or 6 ounces margarine
1 tablespoon cajun magic poultry seasoning
2 teaspoons cajun magic poultry seasoning
1/4 cup green onion top, minced
3 tablespoons fresh parsley, minced
1 teaspoon fresh garlic, minced
1 cup chicken stock
6 ounces pasta, dry (We like Fettuccine)
shrimp, may be substituted

Steps:

  • Cook pasta and set aside.
  • Mash 1/3 of the butter or margarine and combine with seasoning and chicken.
  • Heat a skillet over a high fire until it's hot (about 4 minutes).
  • Add chicken pieces and brown them about 2 minutes on the first side and about 1 minute on the other.
  • Add mushrooms and cook 2 minutes.
  • Add green onions, parsley, garlic and stock.
  • Cook 2 more minutes or until the sauce is at a rolling boil.
  • Add remaining butter or margarine (cut into pats), stirring and shaking the pan to incorporate.
  • Cook for 3 minutes and add the cooked pasta.
  • Stir and shake the pan to mix well.
  • Serve immediately.

This base is meant to be divided into 3 portions which can be frozen for up to 3 months. All you have to do then is thaw the base (put it out in the morning) and decide if you want to make Recipe#48837, Recipe#48838 or Recipe#48839 (all recipes posted here on Zaar). In under 20 minutes you can have a fantastic meal for 4 ready, and it will taste like you have been cooking all day! The meat in this comes out so tender and the casseroles are all delicious.

1/4 cup vegetable oil
2 1/2 kg beef chuck steaks, chopped
3 large onions, chopped
2 garlic cloves, crushed
1/4 cup flour
1 1/4 liters beef stock
2 bay leaves

Steps:

  • Heat a large pan.
  • Reserve 1 tablespoon of the oil.
  • Add remaining oil and steak in batches until all the meat is browned.
  • Put the meat aside on a plate.
  • Heat reserved oil and add the onions and garlic.
  • Cook until onions are soft and lightly browned.
  • Stir in the flour and cook, stirring, for about 2 minutes or until browned.
  • Gradually add the stock and bay leaves, stirring to blend.
  • Return the meat and any meat juices on the plate to the pan.
  • Simmer, covered for 1 1/4 hours.
  • Discard bay leaves and divide meat base into 3 equal portions.
  • These can be frozen for up to 3 months and are used as the bases for Red Wine Casserole, Mexican Casserole and Diane Style Casserole.

Treat someone to a classic steak diane for supper and impress with your flambé skills. For the ultimate luxury, we've gone for fillet steak

2 fillet steaks (about 200g each), cut from the centre of the fillet
25g butter
1 thyme sprig
½ tsp cracked black pepper
1 large or 2 small shallots, peeled and finely chopped
3 tbsp brandy
2 tsp Dijion mustard
1 tsp Worcestershire sauce
200ml strong beef stock
3 tbsp crème fraîche
1 tbsp chopped tarragon (optional)

Steps:

  • Generously season the steaks all over with salt, then press them down slightly with the palm of your hand so they're roughly the same thickness. Heat the butter in a heavy-based frying pan over a medium-high heat until foaming, then add the thyme so it crackles and sizzles. Add the steaks and use tongs to turn them every 1 min over the course of 6 mins (for very rare), 8 mins (rare) or 10 mins (medium). This helps build an even crust on both sides. Remove the steaks to a warm plate and leave to rest while you make the sauce.
  • Scatter the pepper over the butter and thyme already in the pan. Toast for 1 min, then stir in the shallots and cook for another minute until they start to soften. Turn the heat up to high and tilt the pan so the side is against the flame (if using a gas hob). Carefully splash in the brandy. Flambé the shallots until the flames have died down.
  • Reduce the heat to medium and stir in the mustard and Worcestershire sauce. Bubble for a minute, then pour in the stock. Bring to the boil and cook for 2 mins until reduced by half. Stir in the crème fraîche and simmer until rich and creamy. Taste and add more salt if needed. Scoop out the thyme sprig, then return the steaks and any juices to the pan, spooning the sauce over the steaks. Sprinkle over the tarragon, if using. Bring the steaks to the table in the pan and serve drizzled with more sauce.

2 cloves garlic, crushed
1 (400 g) can tomatoes
2 tablespoons Worcestershire sauce
1/2 cup cream
1 tablespoon brandy

Steps:

  • Heat oil in a pan.
  • Add garlic, cook one minute.
  • Add undrained chopped tomatoes, sauce, cream, brandy and parsley.
  • Simmer for 8 minutes until sauce is thickened.
