FINGER-LICKING GOOD MINI CREAM PUFFS

- Preheat oven to 400°. In a small saucepan, bring water and butter to a rolling boil over medium heat. Add flour and salt all at once; beat until blended. Cook, stirring vigorously, until a film forms at the bottom of the pan, about 4 minutes. Remove from heat; let stand 10 minutes., Add eggs, one at a time, beating well after each addition until smooth. Continue beating until mixture is smooth and shiny. Drop dough by 1-in. balls 1-1/2 in. apart onto parchment-lined baking sheets. Bake until puffed, very firm and golden brown, 25-30 minutes. Cool on wire racks., Meanwhile, whisk together pudding mix and milk for 2 minutes or until thickened; let stand 5 minutes. Fold in whipped topping. Cut puffs in half. Fill cream puffs with vanilla filling; replace tops. Dust with confectioners' sugar; serve immediately.

DIABETIC CREAM PUFF FILLING
I am not sure where I got this recipe, but it's saved my buns several times. When people call and ask to come over and you haven't got a thing in the world fixed, this will save your buns too. Just mix up a quick batch of cream puffs and this stuff...and they'll think you spend hours! There are variations listed at the bottom.

Steps:
- Prepare the pudding with the milk; cover and chill.
- While the pudding chills, whip the cream with a few drops of vanilla extract. Fold into the pudding.
- Place back into the refrigerator if not using immediately.
- VARIATIONS:.
- Pineapple cream: fold in 1/2 cup drained crushed pineapple.
- Butterscotch cream: sub butterscotch pudding for the vanilla.
- Lemon creme: sub lemon pudding for the vanilla.
- Chocolate cream: sub chocolate pudding for the vanilla.
- White Chocolate: sub in white chocolate pudding for vanilla.
- Cheesecake: sub in cheesecake pudding for vanilla.

DIABETIC MINI CREAM PUFFS

- 1. 1.Prheat oven to 400F. Spray a cookie sheet with Pam. 2.Bring water and salt to full boil. Stir margarine until melted. 3. Add flour, all at once. Stir until mixture forms a ball. Remove from heat and let stand for 5 minutes.
- 2. 5.Add eggs one at a time, stirring thoroughly after each addition until smooth and shiny. 6.Drop dough by teaspoons into baking sheet, forming 24 mounds. Bake 20 minutes or until golden brown. 7.Turn oven off and prick puff on sides with toothpick.
- 3. 8.Return to oven and let stand 10 minutes. Cool completey. 9. With sharp knife, carefully remove the tops of the puffs. 10.Filling: Fold Cool Whip into prepared pudding. Fill each puff and replace top.
- 4. 11. 3 Puffs per serving 12.Each serving supplies 1/2 fat exchange(margarine),1/4 protein exchange (egg), 1/2 bread exchange (flour), 1/8 milk exchange(pudding) and 5 optional calories.

Steps:
- For the Cream Filling:.
- To a medium saucepan whisk together egg yolks, half and half, and coconut milk over medium/low heat.
- Once combined, add in sugar and corn starch, stirring constantly until the mixture thickens and comes to a light boil.
- Remove from heat and mix in the shredded coconut and vanilla extract.
- Cover with plastic wrap and chill at least two hours.
- For the Puffs:.
- Preheat oven to 425°F (220°C).
- To a medium saucepan add the butter, coconut milk, water, and salt over medium heat.
- Allow all the butter to melt and bring the mixture to a boil.
- As soon as the mixture begins to boil, reduce heat to medium-low and add in the flour.
- Using a wooden spoon, mix thoroughly to incorporate the flour. Continue stirring until the dough starts to pull away from the sides and a thin film forms on the bottom of the pan (about three minutes).
- Remove the mixture from heat and transfer to a large mixing bowl. Let the dough cool slightly.
- Add in the eggs, one at a time, being sure to fully incorporate each egg before adding the next.
- Once the dough comes together, transfer it to a piping bag and pipe onto a parchment-paper-lined baking sheet into 1½-inch mounds.
- Smooth out any peaks/ridges cause by piping with a wet fingertip (this will ensure your puffs cook evenly and maintain a nice ball shape).
- Then brush the dough with egg wash and place in preheated oven.
- Bake for 15 minutes at 425°F. Then, without opening the oven, reduce heat to 350° (175°C) and bake for an additional 15 minutes.
- Remove puffs from oven. Using the tip of a knife, cut a small "x" into the bottom of each puff and transfer ("x" side up) to a cooling rack.
- Just before serving (or up to two hours in advance), pipe the cream filling into the cooled puffs. Sprinkle with powdered sugar.
- Enjoy!

- In a large saucepan, bring water and butter to a boil. Add flour all at once, stirring until a smooth ball forms. Remove from the heat; let stand for 5 minutes. - Heat oven to 400°F. In 2 1/2-quart saucepan, heat water and butter to rolling boil. Stir in flour; reduce heat to low. Stir vigorously over low heat about 1 minute or until mixture forms a ball; remove from heat. Beat in eggs, all at once; continue beating until smooth.
- On ungreased cookie sheet, drop dough by slightly less than 1/4 cupfuls about 3 inches apart. Bake 35 to 40 minutes or until puffed and golden. Cool away from draft, about 30 minutes.
- Make one of the fillings (directions below). Cut off top third of each puff and pull out any strands of soft dough. Fill puffs with filling; replace tops. Cover; refrigerate until serving. Store covered in refrigerator. Eggnog Fluff Filling: In large bowl, beat pudding mix, milk, rum extract, nutmeg and ginger with electric mixer on low speed until well blended. Add whipping cream; beat on high speed 1 to 2 minutes or until soft peaks form. Fill puffs. Serve immediately, or cover and refrigerate up to 3 hours. Just before serving, sprinkle with powdered sugar or brush tops with light corn syrup and sprinkle with colored sugar or nonpareils. Peppermint Whipped Cream Filling: In large bowl, beat ingredients with electric mixer on high speed until stiff peaks form. Fill puffs. Serve immediately, or cover and refrigerate up to 4 hours.

Aunt Lucy always had some "specialities" for you to taste, even when you just popped in on her for a visit. I wondered how it was never a fuss or bother to her? I popped in often; oooooo'd and ahhhhhhh'd and she'd give me her recipe. I tried it and you know! it isn't that bothersome and so, when you want something special...here it is, cream puffs a la "Aunt Lucy"!

Steps:
- In a medium size sauce pan, bring water to boil.
- Add melted butter and reheat to boiling point.
- Add flour, stirring rapidly.
- By the time the flour has absorbed the liquid, the batter should leave the sides of the pan when stirred.
- Remove from the heat immediately.
- Briskly beat one egg at a time until all four eggs have been incorporated into the batter completely.
- Spoon 1/2 teaspoon full of the batter onto a well-greased cookie sheet; allowing 1-inch clearance all around each spoonful.
- If you are making large puffs 1 tablespoon of batter, allow 2 to 3-inches between each spoonful.
- Preheat oven to 400 degrees; and bake for 5-7 minutes.
- Reduce the heat to 200 degrees; and bake for 30 minutes.
- They should be a nice golden brown in color.
- Makes 72 small or 16 large cream puffs.
- Cool.
- Split horizontally and fill with your favorite filling.
- For a dessert, fill with pudding or cream or custard,dust with Confectionery sugar or drizzle chocolate syrup on top.
- For an appetizer or dinner party, fill with ham salad, egg salad, chicken or your favorite savory filling.
- Very versatile and they freeze unfilled, very well.
