DIABETIC FROZEN PEACH YOGURT



Diabetic Frozen Peach Yogurt image

My Husband loves this recipe for frozen yogurt as he is a diabetic. I use low-fat yogurt, you can use regular yogurt for a creamer consistency. Cooking time is freezing time. Recipe is made for electric ice cream freezer.

Number Of Ingredients 4

1 (14 ounce) can peaches in juice (I used my home canned peaches)
2 cups plain yogurt
1/2 teaspoon vanilla
2/3 cup Splenda granular

Steps:

  • Drain peaches reserving 1/2 cup of juice.
  • Puree peaches in blender (I use hand held blender for faster clean up).
  • Add yogurt, (I do this all in a four cup measuring cup) reserved juice, and Splenda; blend with hand blender until combined.
  • Pour into freezer bowl, turn machine ON and let mix until frozen, about 25-30 minutes.
  • If desired, pour frozen yogurt into plastic container and place in freezer until firm, about 2 hours.

3 cups white peaches or 3 cups yellow peaches, peeled and finely chopped
5 (6 ounce) cartons vanilla yogurt
1/4 cup honey

Steps:

  • Place 1 1/2 cups of the peaches in food processor or blender. Add yogurt and honey. Cover and process or blend until smooth. (If using blender, blend mixture half at a time.) Stir in remaining peaches. Pour mixture into 9x9x2-inch freezer-proof container. Cover and freeze about 4 hours or until firm.
  • Break frozen mixture into small chunks and place in chilled large bowl. Beat with electric mixer on low to medium speed until mixture is smooth but not melted. Return mixture to container.
  • Cover and freeze for at least 6 hours or until firm. Let frozen yogurt stand at room temperature for 10 to 20 minutes before serving.

1 (20 ounce) can sliced peaches in juice
1/3 cup sugar
2 cups low-fat vanilla yogurt or 2 cups non-fat vanilla yogurt

Steps:

  • Drain peaches reserving 1/2 cup of the juice (for me, it turned out to be all of the left over juice).
  • Put peaches in a blender and pulse to chop.
  • Add the sugar, yogurt, and juice and blend until smooth.
  • Chill in the refrigerator for a half hour to an hour (depends on how patient you are - I did a half hour and it was fine).
  • Pour into ice cream maker and churn for 25 to 30 minutes.
  • ENJOY!
