This bread is low fat, tart, and not very sweet. You may want to increase sugar if you like sweet breads.

CRANBERRY ORANGE BREAD FOR DIABETICS
I found this in the Fall TOH Cooking for 2. It looks perfect for my DH. Since it makes 4 mini loaves, I can also freeze extras to eat later.

Steps:
- In a large bowl, combine the flour, sugar or Splenda, baking powder, salt and baking soda.
- In a small bowl, beat the egg, orange juice and butter. Stir into dry ingredients just until moistened.
- Fold in cranberries and walnuts.
- Transfer to four 4-1/2-in.x2-1/2-in.x1-1/2in. loaf pans coated with nonstick cooking spray.
- Bake at 350 degrees for 25-28 minutes or until a toothpick comes out clean.
- Cool for 10 minutes before removing from pans to wire racks.
- Bread may be frozen for up to 3 months.

Steps:
- Combine the flours, sugar, baking powder, and orange rind in a mixing bowl. Add the remaining ingredients and stir to blend well.
- Pour into a greased 9x5 inch load pan. Bake at 350F for 45 to 50 minutes. Cool for 6 minutes before removing from the pan.
- Cool thoroughly on a wire rack. Store in a plastic bag or aluminum foil for at least one day before slicing.

- Preheat oven to 350°F.
- In large bowl, combine oats, brown sugar, cinnamon and salt. Add dried cranberries and chopped pecans.
- In small bowl, whisk together the milk, egg, vanilla and orange zest. Add the milk mixture to the oat mixture and stir until combined.
- Pour into 4-6 small souffle or brulee dishes or one larger baking dish (such as an 8x8-inch dish). (You may want to lightly spray baking dish with cooking spray.).
- Bake 20-30 minutes (small baking dishes) or 30-40 minutes (large baking dish), or until slightly firm to touch. (Baking time will vary depending on the diameter of your baking dishes.).
- Sprinkle with sugar (optional: use torch to create a brulee topping). Garnish with toasted pecans.

CRANBERRY NUT BREAD
Cranberries freeze admirably, just as you purchase them in plastic bags. With several extra bags of the bright scarlet berries obtained now when they are available and tucked into the freezer you will have the raw materials for a change of pace condiment to serve with roasted poultry or meats at other times of the year, or for quick breads or pies.

- Preheat oven to 350 degrees. Greasing 9-by-5-by-3-inch baking pan.
- Sift flour, sugar, baking powder, baking soda and salt into a large bowl. Using a pastry blender or two knives, cut in butter until the mixture resembles corn meal.
- Beat egg until thick and light. Stir in orange juice and rind. Lightly stir this mixture into the flour mixture just until the ingredients are blended. Fold in cranberries and nuts.
- Pour batter into prepared pan and bake for 1 hour and 15 minutes, until the bread is golden brown and springs back when lightly touched.
- Cool on a rack, wrap in foil and hold overnight before slicing.
