This colorful traditional salad is one of my mother-in-law's favorites. It's fun to eat because of its crunchy texture, and the raisins give it a slightly sweet flavor. Plus, the dish is easy to prepare. -Denise Baumert, Dalhart, Texas

4 cups shredded carrots
3/4 to 1-1/2 cups raisins
1/4 cup mayonnaise
2 tablespoons sugar
2 to 3 tablespoons 2% milk

Steps:

  • Mix the first 4 ingredients. Stir in enough milk to reach desired consistency. Refrigerate until serving.

¼ cup mayonnaise
1 tablespoon honey
1 tablespoon water
1 teaspoon lemon juice
¼ teaspoon salt
4 cups shredded carrots
1 cup raisins

Steps:

  • In a large bowl, combine mayo with honey, water, lemon juice, and salt. Whisk everything together until well combined.
  • Add the carrots and the raisins to the sauce, and toss well. Cover with plastic wrap, and refrigerate for 30 minutes or until serving.
