Steps:
- Slice the hard boiled eggs in half lengthwise. Remove the yolk to a small bowl with a spoon and place the egg whites on a plate.
- Mash the yolks with a fork and add the mayonnaise, pickle relish, mustard, salt and pepper. Stir everything together until it's creamy.
- Use a spoon to add a portion of the deviled egg mixture back into the hole of each egg white.
- Garnish with a generous amount of bacon bits and top with a sprinkle of chives.

- Put 4 thick-cut bacon slices on a rack set on a baking sheet. Place in a cold oven, set the temperature to 400˚ F and bake 35 to 40 minutes, rotating the pan halfway through. Let cool, then cut each slice into 6 pieces.
- Combine 3 tablespoons mayonnaise, 1 tablespoon yellow mustard, 2 teaspoons relish, 1 teaspoon celery salt, a few dashes of hot sauce and a pinch of pepper in a food processor. Add 2 chopped hard-boiled eggs; puree. Transfer to a piping bag with a star tip.
- Pipe the egg mixture onto each bacon piece and top with paprika and chopped chives.

DEVILED EGG BITES
This recipe has been in my recipe box a long time- I don't remember where I got the recipe showing this photo. I have been collecting recipe for so long , about 56 years. This is a great recipe to serve at Easter brunch. I like this recipe because it is a little different than the regular deviled egg recipes.

- 1. In a medium bowl, combine the first 7 ingredients until creamy. Using the white of the egg and the yolk. Shape into 1-inch balls. Roll in cheese. Cover and chill until serving.
- 2. Note: For Christmas I like to add some parsley to some of the cheese and roll 1/2 the balls in this. The other half I mix a little paprika with the cheese and roll them in this.
SHE-DEVILED EGGS
I like biting into a deviled egg and it bites me back! These measurements are approximate. I actually use more cayenne pepper and horseradish than here, but I needed to get a handle on the amounts for sharing my recipe, and these proportions are good. I have not included the cooking time for boiling the eggs.

- Cut eggs in half lengthwise, carefully removing yolks into a medium-sized bowl,(I use a Pyrex 2-qt glass bowl) and placing the whites onto a serving plate.
- Mash the yolks in the bowl with a fork until they look like coarse cornmeal.
- Mix in dry ingredients first: white pepper, cayenne, salt and ground mustard; next mix in wet ingredients: mayonnaise, relish, yellow mustard and horseradish.
- Stir until well blended. Adjust seasonings to taste; adjust amount of wet ingredients for texture, if necessary.
- Fill egg white halves with yolk mixture, using a teaspoon.
- Sprinkle with sweet paprika and press a single pimento-stuffed green olive into the yolk to make them festive!

- To hard boil the eggs, place the raw eggs at the bottom of a large pot. Pour water in the pot until the water is 1-2 inches over the top of the eggs. Place the pot on the stovetop uncovered and turn the burner to high heat. Bring the water in the pot to a boil. When the water comes to a full boil, cover the pot with a lid and turn off the heat to the burner. Leave the pot on the burner, covered, for 12-14 minutes.
