PEACH ICE CREAM

Peach Ice Cream image

This easy ice cream is meant to evoke hazy memories of a summer spent luxuriating on a front porch, cold glass in hand, waiting as your ice cream maker does the churning work for a late-afternoon treat. Use the best peaches you can find - the flavor of this depends directly on the fruit. You can also use mangoes or strawberries, or other stone fruits. Use your imagination, but let the ice cream maker do most of the work.

Provided by Julia Reed

Categories     ice creams and sorbets, dessert

Time 1h

Yield About 1 1/2 quarts, 6 to 8 servings

Number Of Ingredients 6

4 pounds ripe peaches
1 1/4 cups sugar (or more, as needed)
1/8 teaspoon salt
2 teaspoons lemon juice
1 quart (4 cups) heavy cream
1 2-inch piece of vanilla bean (or 2 teaspoons vanilla extract)

Steps:

  • Peel peaches over a large bowl to catch the juice. Halve and pit them and chop roughly. Place in the bowl and sprinkle with 1/2 cup of sugar, the salt and lemon juice and let them sit for 30 minutes.
  • While peaches macerate, put cream and remaining sugar in saucepan with vanilla bean or vanilla. Heat over medium-low heat, stirring frequently to keep from scorching, until the sugar is dissolved. Remove from heat and cool. Discard vanilla bean.
  • Pour cream over peaches and mix thoroughly. Taste to see if it needs more sugar. (This will depend on the peaches.) Refrigerate until chilled.
  • Pour the mixture into an ice-cream machine and freeze according to the manufacturer's directions until set but not quite hard. (If serving immediately, freeze harder.) Pack the ice cream into a bowl or mold to completely solidify. When it has hardened, dip mold into hot water or wrap in a hot towel and invert onto a serving platter. Or, simply scoop and serve.

PEACH ICE CREAM

Peach Ice Cream image

I got this recipe from Ben & Jerry's Ice Cream book. It is the reason I own an ice cream maker. Every year we go to Gaffney, SC and pick up a huge basket of peaches. This is the perfect way to use some of them. The cooking time listed includes time to let the peaches sit in the fridge.

Provided by The Giggle Box

Categories     Frozen Desserts

Time 3h20m

Yield 10 serving(s)

Number Of Ingredients 7

2 cups finely chopped ripe peaches
3/4 cup sugar
2 teaspoons lemon juice (the juice from 1/2 a lemon)
2 large eggs
3/4 cup sugar
2 cups heavy cream or 2 cups whipping cream
1 cup milk

Steps:

  • Combine the peaches, lemon juice and 3/4 cup of sugar in a bowl.
  • Cover and refrigerate for 2 hours, stirring every 30 minutes.
  • Remove the peaches from the fridge and drain the juice into another bowl and set aside.
  • Return the peaches to the fridge.
  • Whisk the eggs in a mixing bowl until light and fluffy, 1 to 2 minutes.
  • Slowly whisk in 3/4 cup of sugar until completely blended.
  • Add the cream and milk and whisk to blend and then add the peach juice and mix until completely blended.
  • Pour into your ice cream maker and freeze according to the ice maker's directions.
  • When the ice cream is almost frozen (about 2 minutes before it is done) add the peaches and continue freezing until it is ready.
  • If your ice cream maker is anything like mine, you may need to put the ice cream into a container and let it finish freezing in the freezer.

PEACH ICE CREAM

Peach Ice Cream image

This is my favorite ice cream...even better if you can pick your own peaches Both the cooked peaches and the custard mixture must be cooled to 40 degrees before you churn them, so plan to prepare the custard the night before and refrigerator overnight. Of course fresh peaches are preferred but you can subsitute 2 cups frozen sliced peaches (defrosted) and replace the vodka with peach-flavored liqueur. The ice cream is at its peak when eaten within four hours of churning, although covered, it will keep in the freezer for up to two days. Cooking time indicated includes overnight cooling of the custard. Update: Was in a hurry so skipped the straining process and it was great ... we like the pieces of peach in the ice cream! Recipe from Cook's Illustrated.

Provided by Galley Wench

Categories     Frozen Desserts

Time P1DT30m

Yield 1 quart

Number Of Ingredients 10

3 medium ripe peaches, peeled, pitted, and cut into 1/2-inch pieces (about 2 cups)
1/2 teaspoon fresh lemon juice
1 pinch table salt
1 cup granulated sugar
6 tablespoons granulated sugar
1 1/4 cups whole milk
1 1/3 cups heavy cream
6 large egg yolks
1 teaspoon vanilla extract
2 tablespoons vodka

Steps:

  • Stir peaches, lemon juice, a pinch salt, and 1/2 cup sugar in medium-size nonreactive saucepan to combine; let stand until a pool of syrupy liquid accumulates and peaches soften slightly, 1 to 1 1/2 hours.
  • Position sieve over a medium size bowl which is set in an ice-water bath; set aside.
  • Heat milk, cream, and 1/2 cup sugar in medium-size heavy saucepan over medium heat, stirring occasionally, until steam appears, 5 to 6 minutes.
  • Turn off heat.
  • Meanwhile, whisk yolks and remaining 6 tablespoons sugar in medium bowl until pale yellow.
  • Stir half the warmed milk mixture into beaten yolk mixture until just blended. Return milk-yolk mixture to saucepan of remaining warmed milk mixture.
  • Heat milk-yolk mixture over medium-low heat, stirring constantly with wooden spoon until steam appears, foam subsides, and mixture just begins to thicken or instant-read thermometer registers 180 degrees (mixture must not boil or eggs will curdle).
  • Remove from heat and immediately strain custard into prepared bowl.
  • Cool custard mixture to room temperature, stir in vanilla, then cover and refrigerate until instant-read thermometer registers 40 degrees, at least 2 and up to 24 hours.
  • Meanwhile, heat softened peaches and their liquid, stirring occasionally, over medium-high heat until peaches are tender and flesh has broken down, 3 to 4 minutes.
  • Transfer to bowl, stir in vodka, and refrigerate until cold, at least 4 and up to 24 hours.
  • Strain chilled peaches, reserving liquid. Stir reserved peach liquid into chilled custard mixture; pour into ice cream machine canister and churn, following manufacturer's instructions, until mixture is frozen and resembles soft-serve ice cream, 25 to 30 minutes.
  • Add peaches; continue to churn until combined, about 30 seconds longer. Transfer ice cream to airtight container.
  • Freeze until firm, about 2 hours.

The skin should peel back easily. Cut the peach into slices or large chunks.Set aside about 1/3 cup of peaches diced into small chunks.

  • Start by prepping the peaches. Rinse them, halve them, pit them, quarter them, then chop. Place in a large bowl with the lemon zest, lemon juice, and 50 grams of the sugar. Stir gently, cover with plastic wrap, and place in the fridge overnight.
  • Make the ice cream base by bringing the milk and cream, plus a pinch of salt, to a simmer, stirring now and then. Meanwhile, start whisking the egg yolks with the rest of the sugar. Temper the egg yolks by pouring some of the warm milk mixture in, whisking furiously, then slowly adding the rest (this prevents the eggs from scrambling).
  • Pour the mixture back into the pot and stir constantly, over low heat (I got impatient and put it on medium), with a heat-proof rubber spatula, until the temperature reaches 180 degrees F. Immediately pour into a soup container, let cool a bit, then cover and refrigerate overnight.
  • The next day, pour the custard over the peaches and use a stick blender to blitz for two minutes, until there are only small flecks of peach skin visible in the mix. Press the peach custard through a fine-mesh sieve into a clean container (I used a large measuring cup), squeezing hard to extract as much smooth custard as possible. Discard the peach skin.
