5 pounds Yukon Gold potatoes, cubed
2 (3 ounce) packages cream cheese
8 ounces sour cream
½ cup milk
2 teaspoons onion salt
ground black pepper to taste

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Place potatoes in a large pot of lightly salted water. Bring to a boil, and cook until tender, about 15 minutes. Drain, and mash.
  • In a large bowl, mix mashed potatoes, cream cheese, sour cream, milk, onion salt, and pepper. Transfer to a large casserole dish.
  • Cover, and bake for 50 minutes in the preheated oven.

9 large potatoes, peeled
1 (8 ounce) container sour cream
1 (6 ounce) package cream cheese
1 teaspoon onion salt
½ teaspoon garlic powder
1 dash ground black pepper
½ cup shredded Cheddar cheese
1 pinch dried parsley flakes, or to taste
1 pinch paprika, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a casserole dish.
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes.
  • Drain potatoes; reserve water for mashing, if necessary. Add sour cream, cream cheese, onion salt, garlic powder, and pepper; beat until creamy. Pour into the prepared dish. Cover with Cheddar cheese, parsley, and paprika.
  • Bake, uncovered, until cheese is bubbly, about 35 minutes.

10 potatoes (about 3 1/2 lbs)
1/2 lb cream cheese
1/4 cup butter
1 cup chopped green onion
1 cup sour cream
1/2 cup minced fresh parsley
1 pinch dried marjoram
salt and pepper
1/2 cup coarse fresh breadcrumb

Steps:

  • In a large pot of boiling water, cook potatoes for 20 minutes or until tender but not mushy.
  • Drain and let cool slightly, peel.
  • With a potato masher, mash until smooth, do not use an electric mixer, blend in cream cheese and butter until melted.
  • Mix in onions, sour cream, parsley, marjoram, and salt and pepper to taste.
  • Transfer to 8 inch (2 L) baking dish, smooth top.
  • Sprinkle with crumbs, (Casserole can be prepared to this point, covered and refrigerated for up to 2 days or frozen for up to 1 week. Let thaw in refrigerator for 24 hours. Add 10 minutes to baking time.) Bake in 400 degree oven for about 20 minutes or until heated through and top is lightly golden.

1/2 cup whipping cream (heavy)
1/2 cup butter or 1/2 cup margarine
1 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Scrub potatoes.
  • Leave skins on, if desired, or peel thinly and remove eyes.
  • Cut into large pieces.
  • Heat 1 inch water (salted if desired) to boiling in 3-quart saucepan; add potato pieces.
  • Cover and heat to boiling; reduce heat.
  • Cook covered 20 to 25 minutes or until tender; drain.
  • Shake pan gently over low heat to dry potatoes.
  • Heat milk, whipping cream, butter, salt and pepper in 1-quart saucepan over medium-low heat, stirring occasionally, until butter is melted.
  • Measure out 1/4 cup of the milk mixture; cover and refrigerate.
  • Add remaining milk mixture in small amounts to potatoes in medium bowl, mashing with potato masher or electric mixer after each addition.
  • (Amount of milk needed to make potatoes smooth and fluffy depends on kind of potatoes used.) Beat vigorously until potatoes are light and fluffy.
  • Spray 2-quart casserole with cooking spray.
  • Spoon potatoes into casserole.

5 pounds potatoes, peeled and cubed
8 strips bacon
⅔ cup chopped green or red bell pepper
½ cup chopped onion, or more to taste
¾ cup hot milk
6 tablespoons butter, plus more for greasing
1 teaspoon salt
½ teaspoon ground black pepper, or to taste
1 (10 ounce) package sharp Cheddar cheese, cut into chunks
3 large eggs

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter 2 large casserole dishes.
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 10 to 15 minutes. Drain and transfer to a large bowl.
  • While the potatoes are cooking, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until browned and crispy, 10 to 12 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle. Leave 2 tablespoons bacon drippings in the skillet and discard the rest.

8 oz. cream cheese. 1 tsp. onion salt. Peel, boil and mash potatoes with remaining ingredients. Place mixture in greased casserole. Dot with butter and cover. May be refrigerated up to two days. To serve: Bake at 350 degrees for 15 minutes, or longer if necessary. Remove cover and bake additional 15 minutes. Serves 12.
