Steps:
- Peel 2 of the cucumbers.
- Slice all 4 cucumbers thin and place in a large bowl.
- Lightly salt and let stand for 1 hour.
- In a small bowl mix together the minced garlic, yogurt, lemon juice, dill, and pepper.
- Mix well.
- Whisk in the olive oil until well incorporated.
- Drain Cucumbers and place in a salad bowl.
- Pour on the salad dressing and toss gently.
- Chill for 1 hour, lightly toss again and serve.

CUCUMBER SALAD WITH DILL AND CHICKPEAS
This cooling and refreshing cucumber chickpea salad is the perfect healthy summer side! It includes cucumbers, tomatoes, chickpeas, dill, yogurt and seasoning. Serve for lunch, dinner, BBQs or as a side.

- Chop peel and chop cucumbers. Then chop tomatoes in half and thinly slice cucumbers. Rinse chickpeas and shake excess water or pat them dry using a paper towel. Add all of the ingredients to a bowl.
- In a small bowl whisk together Greek yogurt, vinegar, lemon juice, garlic powder, salt, pepper and dill until well combined.
- Then pour the dressing over salad and toss the ingrdients until everything is evenly coated. Serve this salad cold.

Steps:
- Thinly slice cucumbers and shallot with a mandolin or knife.
- If shallot is too strong tasting, soak in water with 1 tsp of sugar for about 10 minutes, then drain.
- Add sour cream, lemon juice and zest, dill, olive oil, garlic powder and salt and pepper to a large bowl and mix well with a whisk.
- Add cucumbers and shallot.
- Toss well to combine.
- Chill for at least 1 hour before serving.
