In my search for a good cream pea recipe, I found many, but none that quite matched what I wanted. So I took to my own creativity and came up with this absolutely fabulous recipe. We love it so much we have this on the side quite often.

Steps:
- In a medium saucepan, combine peas, water, and salt. Bring to a boil, then stir in butter.

CREAMED PEAS
These peas are delicious served on toast! You could make this using half and half cream or 18% table cream although it will not be a creamy. If you are using water, then you might want to add in 1-2 teaspoons chicken bouillon powder to the water when boiling but that is optional. This complete recipe may be doubled.

Steps:
- In a medium saucepan combine the peas with chicken broth or water; and garlic powder (if using) bring to a simmer then add in butter (do not drain the broth or water).
- In a small bowl whisk together whipping cream with flour and sugar until smooth then add to the peas; cook stirring over medium-high heat stirring/whisking constantly until thick and bubbly (about 4 minutes).
- Mix in Parmesan cheese (if using) then season with salt and pepper to taste.

CREAMED PEAS WITH FRIED SHALLOTS

- Toss the shallots with 1/4 cup half-and-half and a large pinch each of salt and black pepper in a small bowl. Set aside to soak 10 minutes.
- Meanwhile, combine the flour, cayenne, 1/2 teaspoon salt and a few grinds of black pepper in a medium bowl. Heat about 1/4-inch vegetable oil in a medium nonstick skillet over medium heat. Working in batches, remove the shallots from the half-and-half, coat with the seasoned flour and fry, stirring, until crisp and golden brown, 4 to 6 minutes. Remove with a slotted spoon to a paper towel-lined baking sheet to drain; sprinkle with salt. Add more oil to the skillet as needed between batches.
- Bring a medium saucepan of salted water to a boil. Add the peas and cook until tender, 5 to 7 minutes; drain. Add the remaining 3/4 cup half-and-half and the cheese to the pan and cook over medium-low heat, stirring, until creamy. Stir in the lemon zest, nutmeg and a few grinds of black pepper. Stir in the peas until well coated; season with salt and black pepper.
- Remove the pan from the heat and stir in the parsley. Transfer to a serving dish and top with the fried shallots.

- In a medium saucepan, melt the butter over medium high heat. Add in the grated onion and saute until the onions are cooked - soft and translucent.
- In a large measuring cup, combine the milk, cream and the cornstarch until smooth.

- Pour your chicken broth, butter and bacon into a skillet and bring to a low boil.
- Now add your peas to a boil in the liquid and stir. Lower heat to medium-high heat.
- In a separate bowl, whisk together cream, flour, and sugar until well blended and without large flour chunks.
- Stir your creamed mixture into the skillet and stir well, coating all of the peas.

- Warm the olive oil in a large pot over medium heat. Add the diced onion and cook until the onion has softened and is turning translucent, about 5 minutes.
- Add the peas and cook stirring frequently about 1 minute.
- Then add vegetable broth (or water), raise the heat, bring to a boil and stir in pasta and salt (I use 1 tsp of salt and then I adjust the seasoning at the end). You might need to add or to reduce the amount of water according to the type of pasta.
- Cover with a lid, reduce the heat and cook your pasta in the starchy water. During the cooking time, you need to stir often until the water is absorbed, otherwise, it will stick to the bottom. The water should barely cover the pasta, but it's fine, add extra water gradually only if needed.
- Cook until ready but firm to the bite. Turn off the heat and stir in freshly grated parmesan cheese until melted. Taste and adjust the seasoning.
- Serve immediately with a drizzle of olive oil, black pepper, and extra parmesan cheese if you like. Enjoy!
