PANNA COTTA

Panna Cotta image

Panna cotta, a molded chilled dessert popular throughout Italy, is easy to make and can be prepared in advance. It looks and tastes wonderful with ripe red fruits such as raspberries, strawberries, or sweet cherries.

1 envelope unflavored gelatin (about 1 tablespoon)
2 tablespoons cold water
2 cups heavy cream
1 cup half and half

LIMONCELLO PANNA COTTA WITH PUFFED WILD RICE AND FRESH STRAWBERRIES

Limoncello panna cotta with Puffed Wild Rice and fresh Strawberries image

Provided by Delia

Categories     Dessert

Number Of Ingredients 9

650ml / 21.1 fl. oz cream
500 ml / 17 fl. oz milk
163 gr / 5.7 oz sugar
50 gr 1.7 oz lemon juice
13 gr 0.45 oz gelatin
125 ml 4.22 fl oz Limoncello
50 ml 1.6 fl oz lemon flavored vodka (optional)
pinch lemon zest (optional)
non-stick spray

Steps:

  • Mix in one pot the cream+sugar+milk and heat it up until in gets to 70 C . If you don't have a kitchen thermometer, make sure you warm the mixture up until it's almost hot. DO NOT BOIL! It will split the cream and you will get some sort of weird looking cheese.(Trust me, I've done that haha).
  • Mix the Limoncello and lemon juice and vodka (if using) in a pot and heat it up. You can either leave it on high heat until the alcohol boils out or you can light it with the lighter and burn the alcohol out faster. Make sure you stay away from the pot when you do this couse' I know you still need your eyebrows :D .
  • Let the Limoncello mixture cool down a bit and add it to the cream mixture
  • Put a few spoons of water in a small bowl and sprinkle the gelatin on top or if you're using sheets, soak them in really cold water. Add it to the pannacotta mixture and whisk slowly until the gelatin is completely dissolved
  • Prepare your tray/ molds. You can use any kind of silicon mold or glass, but make sure you spray a thin layer of nonstick spray on them. The thinner the layer, the less residue you will see on top of your dessert once it's set.
  • Pour your pannacotta in shapes and let it set for minimum 2 hours or overnight if you have the patience.

STRAWBERRY PANNA COTTA

Strawberry panna cotta image

Serve this creamy set Italian dessert with a top layer of fresh strawberry sauce and our homemade salted almond snaps on the side

Provided by Cassie Best

Categories     Dessert

Time 55m

Number Of Ingredients 8

3 gelatine leaves
450ml double cream
200ml whole milk
100g white caster sugar
1 vanilla pod
400g strawberry , hulled and halved, or quartered if very large
1 ½ tsp cornflour
50g white caster sugar

Steps:

  • For the panna cotta, put the gelatine leaves in a small bowl of cold water to soften - this will take about 5 mins. Meanwhile, pour the cream, milk and sugar into a pan, split the vanilla pod, scrape out the seeds and add, along with the pod, to the cream mixture. Heat gently until hot, but not bubbling. Remove the gelatine leaves from the water, squeeze out any excess liquid then add, one at a time, to the hot cream. Stir until dissolved. Leave to stand for 20-30 mins until cooled - the vanilla pods should be suspended in the liquid by this point. Strain the mixture through a sieve into 6 serving glasses, then chill for at least 3 hrs.
  • Toss the strawberries with the cornflour and sugar in a saucepan. Place over a medium heat and cook for 4-5 mins, until the released juices thicken and the strawberries soften. Set aside to cool. Once completely cooled, top the set panna cottas with the strawberry mixture. Chill until ready to serve.

LEMON PANNA COTTA WITH BLACKBERRIES & HONEY MADELEINES

Lemon panna cotta with blackberries & honey madeleines image

Creamy panna cotta, plump British blackberries and warm honey madeleines make a special dessert with very little effort

Provided by Gordon Ramsay

Categories     Dessert, Dinner

Time 6h

Number Of Ingredients 14

3 leaves of gelatine (see tip at bottom of page)
600ml double cream
150ml milk
200g caster sugar
zest and juice 2 lemons
zest 1 lime
3 medium eggs
80g caster sugar
1 tbsp honey
80g plain flour for dusting
40g ground almonds
75g unsalted butter , melted, plus extra for the tin
200g blackberries (about 40 in total)
3 tbsp crème de mûre liqueur or cassis (optional)

Steps:

  • For the panna cotta, put 6 small pudding moulds (about 120ml each) on a baking tray. Soak the gelatine leaves in a bowl of very cold water (see tip, below) and set aside.
  • Put the cream, milk and sugar into a large pan and bring slowly to the boil. When the cream is boiling, add the lemon juice and the lemon and lime zest and whisk well. Simmer for a few mins until reduced slightly, then turn off the heat.
  • Scoop the softened gelatine out of the water and squeeze off any excess water. Stir into the hot cream, leave until just warm, then strain the cream into a jug. Carefully pour the mix into the moulds and place in the fridge for at least 5 hrs until completely set - overnight is ideal.
  • To make the madeleines, beat the eggs with the sugar and honey until light and airy. Whisk in the flour and ground almonds until completely incorporated, then gradually whisk in the cooled, melted butter. The batter can be made several hrs in advance.
  • To bake the madeleines, heat oven to 190C/170C fan/gas 5. Generously butter, then flour, the madeleine or bun tins. Spoon the batter into the tins and bake for 10-12 mins, depending on the size of the tins.
  • When the madeleines are golden and baked all the way through, remove from the oven and leave to cool for 2 mins. Tip out of the tin and bake another batch, if you need to. Drizzle the blackberries with liqueur, if using.
  • To unmould the panna cottas, run the tip of a knife around the edge of the mould. Dip the mould briefly into hot water until the filling just comes away from the sides. Use your fingers to gently loosen the panna cotta away from the edges of the mould. When you are confident that it will turn out, reverse the mould onto a serving plate and gently lift off, releasing the contents.
  • To plate up, unmould a panna cotta in the middle of each plate, pouring over any melted mix from the mould. Arrange blackberries around half of the panna cotta. Place a few madeleines on the opposite side of the plate. Spoon over a little of the blackberry juices from the bowl and serve straight away.

VANILLA PANNA COTTA WITH CARAMELISED ORANGE

Vanilla panna cotta with caramelised orange image

Take the stress out of entertaining with this sophisticated, make-ahead dessert

Provided by James Martin

Categories     Dessert, Dinner

Time 6h

Number Of Ingredients 9

6 gelatine leaves
125ml milk
zest 2 oranges
2 vanilla pods , split
140g golden caster sugar
1.2l double cream
250g caster sugar
5 tbsp Grand Marnier
5 oranges , zested and segmented, any juice retained

Steps:

  • Place the gelatine and milk in a pan, then leave it to one side to soak. Meanwhile, place the orange zest, vanilla pods and sugar in a pan. Add 800ml of the cream, then bring to the boil. Simmer until the mixture is reduced by one-third. While the cream is reducing, remove the gelatine from the milk, set aside, then warm the milk. When it is warm, add the soaked gelatine and stir until completely dissolved. Add to the warm cream, pass through a sieve, then leave to cool.
  • Lightly whip the remaining cream, then fold into the setting mixture. Pour the mixture into a 1-litre pudding bowl, then place in the fridge to set for at least 5 hrs.
  • While the panna cotta is setting, make the sauce for the orange salad. Tip the sugar into a non-stick pan, then place on the heat to cook down to a caramel. Pour in the Grand Marnier and orange juice - this will make the caramel harden, so just simmer on a low heat, stirring, until it's dissolved to a syrupy consistency. Remove from the heat.
  • Take the panna cotta out of the fridge, slide a knife around the edge of the bowl and dip very briefly in hot water to loosen. Tip the panna cotta into the middle of a plate, then arrange the orange segments around it. Spoon the orangey sauce over the panna cotta and oranges, then scatter over the zest.
