Deli Tuna Melts from a Toaster Oven image

Serve with extra dill pickles and perhaps coleslaw.

2 large slices rуе or other favorite bread
1 6-oz can tuna (drained and flaked)
1 green onion (chopped)
¾ cups Cheddar cheese (grated)
3 tbsp mayonnaise or unflavored Greek yogurt (or more)
2 tbsp dill pickle (chopped )
2 tbsp celery (chopped )

Steps:

  • Arrange bread slices on oven pan (lined with foil or parchment paper for easy cleanup). Toast lightly in preheated 400 °F (200 °С) toaster oven for 5 minutes.
  • Meanwhile, in a bowl, combine tuna, green onion, 1/2 cup (125 mL) cheese, mayonnaise, pickle and celery. Mix thoroughly, adding more mayonnaise to taste, if desired.
  • Spread tuna mixture evenly over partially toasted bread slices. Sprinkle with remaining 1/4 cup (50 mL) cheese.
  • Bake in toaster oven for 8 minutes, or until cheese is melted and tuna melts are hot. Cut each in half.

2 English muffins, split, or 4 slices sourdough, rye, or whole wheat bread
2 tablespoons prepared mayonnaise (optional)
1 recipe Tuna Salad, recipe follows
1 cup shredded sharp farmhouse Cheddar cheese
Two 6-ounce cans white meat tuna packed in water, drained
2 tablespoons minced celery
2 tablespoons minced red onion, soaked in cold water for 5 minutes and drained
1 teaspoon minced flat-leaf parsley
1/3 cup prepared mayonnaise
1 tablespoon whole grain mustard
Freshly ground black pepper,
Freshly squeezed lemon juice, to taste (optional)

Steps:

  • Preheat the broiler and set the rack about 4 to 5 inches from the heat source.
  • Spread the bread out on a baking sheet and toast. Spread the toasted muffins or bread with the mayonnaise, if using. Top with the Tuna Salad and then the shredded cheese. Place the baking sheet under the broiler and heat for 3 to 5 minutes, until the cheese has melted. Serve immediately.
  • In a small mixing bowl break up the tuna with a fork. Toss with the celery, onion, and parsley. Add the mayonnaise, mustard, and season with pepper to taste. Stir to combine. Add lemon juice, if using.

Best Tuna Melts Ever image

This tuna melt recipe is made from my tuna salad recipe. It is lower in fat and absolutely delicious. The key is to toast the bread first! (And the spices help). It is my own creation, and I do not usually use a recipe - I am sharing this with you now, in hopes that you'll love it as much as my friends & I do! YUM! NOTE: You can use premium tuna or not - I usually use the cheaper stuff for the tuna melts & save the Albacore for the pasta salads.

1 (6 ounce) can canned tuna
2 tablespoons reduced-fat mayonnaise
2 tablespoons yellow mustard
1 dill pickle, diced
1/4 small onion, finely diced
salt & pepper
1/4 teaspoon Chinese five spice powder
1 small tomatoes, finely sliced
1/4 cup grated cheese, of your choice
2 slices bread

Steps:

  • Preheat oven to 400°F.
  • In a small bowl, add the mayo, mustard, salt, pepper & spice. Mix with a fork.
  • Finely dice the onion & dill pickle, and add to the bowl.
  • Add the tuna, well drained, to the mixture.
  • With a fork, mix well, ensuring the tuna is saturated with mayo & mustard, and the pickles & onion are evenly distributed. Adjust spice as necessary.
  • Slice the tomato into very thin slices, removing seeds. Place slices on a paper towel to absorb moisture (you don't want soggy bread).
  • Toast bread, slightly lighter than you prefer.
  • Divide tuna salad mixture in half, and scoop on top of the toast. Spread the mixture evenly.
  • Place tomato slices on top of tuna mixture.
  • Sprinkle grated cheese on to toast.
  • Place toast onto a cookie sheet.
  • Bake for 5 - 10 minutes, until cheese is bubbly.
  • Enjoy!

1 lime, juice of
1 tablespoon chopped fresh cilantro
1 tablespoon minced onion
1 avocado, chopped
1 plum tomato, chopped
minced jalapeno, to taste-we use 2 because we like things hot
8 slices monterey jack cheese
4 bagels, sliced

Steps:

  • Drain tuna from the cans.
  • Gently toss the tuna, lime juice, cilantro, onion, avocado, tomato and jalapeno in a bowl.
  • Spoon the salad on top of the bagels halves and top with a slice of cheese.
  • Tast in toaster oven until the cheese melts.

Jazz up your tuna melt with a raisins and celery. Sharp cheddar is essential, as is horseradish. Yogurt instead of mayo makes it tangy-er and lighter.

6 ounces solid white tuna packed in water (one can)
2 stalks celery
2 tablespoons raisins (one small box)
1 tablespoon horseradish cream
1 tablespoon country-style dijon mustard (the kind with the whole mustard seeds)
2 tablespoons whole fat unsweetened plain yogurt
1/4 cup cheddar cheese
1 slice wheat bread

Steps:

  • Put the bread in the toaster and toast medium.
  • Meanwhile, cut the celery into small pieces and mix it in a bowl with the tuna, raisins, horseradish, mustard, and yogurt.
  • The horseradish and mustard should both be added to taste: it's up to you how much you want to add. I like a lot so I usually put in a few big spoonfuls of each.
  • Then, after the horseradish and mustard, add enough yogurt in to make it all stick together.
  • You can use mayo if you prefer, but the yogurt tastes better with the raisins.
  • Microwave everything in the bowl (maybe 1 min - just enough to warm it so the toaster oven doesn't have to do all the work).
  • Arrange the tuna mix on a piece of pre-toasted bread.
  • You can also use pita or half a green bell pepper instead of bread.
  • I make a little dome shape.
  • Place 2-3 slices of cheddar on the top of the dome of tuna.
  • Put it all back in the toaster oven (or regular oven) and cook until the cheese is melted.
