Steps:
- Place the potatoes and onion into a bowl, and stir in eggs, salt, and flour as needed to make the mixture hold together. With wet hands, scoop up about 1/3 cup of the mixture per patty, and form into flat round or oval shapes.
- Heat the vegetable oil in a large skillet over medium heat until it shimmers, and gently place the patties into the hot oil. Fry until the bottoms are golden brown and crisp, 5 to 8 minutes, then flip with a spatula and fry the other side until golden.
- Line a colander or strainer with 2 paper towels, and drain the cooked latkes in the colander. Serve hot.

Steps:
- Add sliced potatoes to a large saucepan. Cover with cold water, about an inch above the tops of the potatoes. Bring to a boil over MED-HIGH heat. Covering the pan helps this happen faster, but pay attention that it doesn't boil over!!
- Once boiling, add 1 1/2 tsp kosher salt and stir. Boil, for 10-15 minutes, until potatoes are fork tender. Watch out for the foam on top of the water, it can boil over if you're not careful. Adjust the heat so that the potatoes are still boiling, but not so hot that they're roaring.
- Drain potatoes in a colander, then return potatoes to the same hot pot you boiled them in. Add vinegar and stir to combine. Let sit a minute or two, then return to the colander to cool slightly.
- While potatoes are cooling, add dressing ingredients plus remaining 1 tsp kosher salt to a large mixing bowl. Whisk together and set aside.
- Chop eggs, red onion, celery and pickles. Add cooked potatoes to the dressing in the mixing bowl and top with chopped eggs, onion, celery, pickles and crumbled bacon.
- Gently stir it all together, until well combined. Cover tightly and refrigerate until cold, at least 3-4 hours.

MAMA'S OLD FASHIONED POTATO SALAD - DEE DEE'S
This is the way my mother and my grandmother always made their potato salad. A really nice side dish to go with BBQ! Not bad with fried chicken or for the holiday meals either. I'm sure this basic recipe has be around forever. It's tried and true in our household and the only way our family eats potato salad. Hope you enjoy!

Steps:
- 1. Peel potatoes and cut into 1 inch cubes; place in a 5 quart pot, cover with water (I add some salt to water); boil for approximately 7 to 8 minutes (time may vary so check for firmness around 5 to 6 minutes, don't over cook and don't under cook, you don't want mashed potato salad and you don't want under cooked potatoes; drain and rinse in cold water; drain well.
- 2. While potatoes are draining and cooling off; combine chopped onion and eggs; set aside.
- 3. In a separate bowl, combine pickles, celery, salt and pepper, mustard and mayonnaise.
- 4. Once potatoes are cooled; add chopped onion and eggs; fold together gently; add mayonnaise mixture and combine gently with other ingredients; if salad seems like you don't need all the mayonnaise mixture; don't use it all, if salad seems to dry, add additional mayonnaise.
- 5. Garnish top with sliced boiled eggs and sprinkle with paprika if desired.
- 6. NOTE: This was an excellent choice for a side to go with https://www.justapinch.com/recipe/diane-smith/sweet-jalapeno-bourbon-ribs-dee-dees/pork and https://www.justapinch.com/recipe/diane-smith/sweet-cheese-biscuits-dee-dees/biscuits.

MR. DELL'S ORIGINAL POTATO CASSEROLE
I adapted this recipe from the back of a package of Mr. Dell's shredded hash brown potatoes. This recipe is always requested for Thanksgiving, Christmas and Easter. The best part is, if there are any leftovers, they make a great breakfast side dish the morning after.

Steps:
- Preheat oven to 375 degrees.
- Melt 1/4 cup butter or margarine and pour into a 9X13 inch baking dish, then add 5 cups of the shredded hash brown potatoes, no need to thaw.
- In a separate bowl, mix soup (in a pinch, I've used cream of celery and cream of mushroom and it turned out fine), sour cream, milk, and green onions, then pour 1/2 of this mixture over the hash browns. Spread the mixture around over the hashbrowns evenly using a spatula. Salt and pepper to taste.
- Sprinkle one cup grated cheese on top.
- Add the remainder of the hash brown potatoes and pour the remaining soup mixture on top, again, spread out evenly using a spatula. Salt and pepper to taste.
- Sprinkle remaining cheese on top.
- Bake for 55 minutes.
- **If at the end of the 55 minutes baking time the top hasn't browned to your liking, set the oven to broil and it will quickly brown the top of the cheese to a crispy golden brown.
- When done, let set up for 5-10 minutes before cutting into servings.

Steps:
- Boil cubed potatoes until tender. Drain and let cool. When cool, place in a large bowl. Add the chopped onion and dill pickle relish to the potatoes.
- Separate the boiled eggs yolks from the white. Chop up the egg whites and place in with the potatoes. Place the boiled egg yolks in a medium size bowl and mash them with a fork until fine.
- Add the cup of mayo to the bowl with the egg yolks. Next, add the ranch dressing powder to the bowl. I recommend a small hand mixer or a small hand blender to mix the powder, mayo and egg yolks. If it is too thick, I add a little dill pickle juice. Mix until creamy. Add to the large bowl of potatoes, onions, and dill pickle relish and mix well.
- Place in a covered dish and put in the fridge. Serve when chilled.

Estimated Reading Time 5 mins
- Hamburgers. Hamburgers are one of the first things that come to mind when you think about backyard parties. After all, who can say no to a juicy and meaty beef patty sandwiched in between toasted buns?
- Chicken. It doesn’t matter if it’s fried, grilled, or barbecued, chicken pairs wonderfully with potato salad. There’s just something about chicken and potatoes that makes them taste great together.
- Steak. Steak is not the most affordable of meats, so you’ll need to pair it with something hearty and delicious. Potato salad fits the bill perfectly.
- Bratwurst. Bratwurst are always a hit at backyard parties, and for good reason. They’re just plain delicious, especially when dipped in a variety of condiments.
- Barbecue Ribs. Out of all the cookout entrees, ribs are my favorite. Just the thought of sweet and savory succulent ribs is making me drool. But you know what makes my mouth water even more?
- Baked Ham. Ham has a distinct sweet and smoky goodness that’s reminiscent of fancy cold cuts. There’s nothing wrong with munching ham on its own, but it’s not really filling, is it?
- Grilled Fish. While pork, beef, and chicken usually rule backyard parties, let’s not forget about seafood. Grilled fish also deserves the spotlight! Whether it’s tilapia, salmon, halibut, or trout, fish makes a great party entrée.
- Grilled Shrimp. Another seafood that tastes wonderful with potato salad is grilled shrimp. The plump and juicy shrimp has such a clean flavor, so it works really well with the creamy side.
- Baked Beans. Aside from entrees, there are plenty of side dishes that also pair well with potato salad. You want flavors that will complement, not clash.
- Corn on the Cob. Corn on the cob is a must in every cookout! It’s refreshing, delicious, and so fun to eat! Its crunchiness also pairs well with tender potato salad.
