Cook and activist Mable Clarke serves this craveable side dish at the monthly fish fry she started to save the Soapstone Baptist Church in South Carolina. While the cheese crackers may draw you in, it's the baked tomatoes that keep you coming back for more. When she's cooking for hundreds of guests at the fish fry, Clarke uses canned tomatoes and green chiles for this dish. Since you're likely not cooking for 400, we adapted the recipe to use fresh tomatoes.

1 tablespoon extra-virgin olive oil
2 medium onions, very thinly sliced
¼ teaspoon ground pepper
6 cups chopped tomatoes (about 2 pounds)
¼ cup chopped pickled jalapeños
2 cups crushed cheese-flavored crackers, such as Cheez-Its, divided
1 ¼ cups mayonnaise
¾ cup grated sharp Cheddar cheese
¾ cup grated Parmesan cheese
¼ cup chopped fresh basil

Steps:

  • Preheat oven to 375 degrees F. Coat a 9-by-13-inch baking dish with cooking spray.
  • Heat oil in a large skillet over medium heat. Add onions and cook, stirring often, until golden, about 10 minutes. Season with pepper.
  • Combine tomatoes and jalapeños in a large bowl. Spread 1 cup cracker crumbs in the prepared baking dish. Top with half the tomato mixture. Layer on the onions. Top with the remaining tomato mixture. Combine mayonnaise, Cheddar, Parmesan and basil in a medium bowl; spread on top of the casserole. Top with the remaining 1 cup cracker crumbs.
  • Bake until bubbling and the cheese has melted, 50 to 60 minutes. Let cool for 10 minutes before serving.

1 (28 ounce) can diced tomatoes, undrained
1/2 cup green onion, sliced
1/2 green pepper, diced
2 garlic cloves, minced
1 1/4 cups Stove Top stuffing mix, see note
2 tablespoons flat leaf parsley, minced
1 1/2 teaspoons celery salt
1 tablespoon Worcestershire sauce
1/4 teaspoon Tabasco sauce
1 cup dark brown sugar
1 cup sharp cheddar cheese, shredded

Steps:

  • Preheat oven to 350°F.
  • Combine all ingredients and stir well.
  • Pour into 9x9 greased casserole dish.
  • Bake 35-40 minutes until nice and bubbly.
  • Can be prepared ahead of time, covered and refrigerated until baking time. It will take about 10 extra minutes to bake.

DEEP SOUTH TATER TOT CASSEROLE

The original recipe is from Deep South Dish.com. I use a 9x13 casserole dish and add about 2 cups diced ham, a whole pound of smoked sausage (chopped) and a whole cup of cheese (separated).

1 (10 ounce) can cream of mushroom soup or 1 (10 ounce) can chicken soup
1 cup milk
1/2 tablespoon olive oil
1/2 cup of chopped vidalia onions or 1/2 cup other sweet onion
1/4 cup of chopped green bell pepper
1 lb ground beef
1 teaspoon of minced garlic
1/2 lb smoked sausage, chopped (optional)
1 tablespoon fresh basil
1/2 teaspoon dried thyme
1/4-1/2 teaspoon cajun seasoning
kosher salt
freshly cracked black pepper, to taste
1/2 cup shredded cheddar cheese, divided
1 lb frozen tater tots

Steps:

  • Preheat oven to 350 degrees F. Butter or spray a 9 x 9 inch casserole dish with non-stick spray; set aside. Whisk together the cream soup and milk until well blended; set aside.
  • Add olive oil to a large skillet and saute the onion and bell pepper until softened but not browned, about 5 minutes. Stir in the ground beef and brown; drain if needed and return to the skillet. Add the minced garlic, cook and stir another minute. Add in the chopped smoked sausage and cook about 3 minutes. Stir in the basil, thyme, Cajun seasoning; taste and add salt and pepper only as needed. Transfer meat mixture to the prepared casserole dish and sprinkle with 1/4 cup of the cheddar cheese. Evenly pour the soup mixture over the top. Arrange the tater tots on top and bake uncovered at 350 for 45 minutes to 1 hour, or until potatoes are nicely browned and crisp. Sprinkle the remaining 1/4 cup of shredded cheese on top and return to the oven just until cheese is melted.
  • Serve immediately with a green vegetable or a mixed garden salad.

This is a good casserole that can either be served as a main dish or as a side dish. This recipe was given to me by a friend.

Number Of Ingredients 10

6 ounces uncooked egg noodles
1 lb sliced bacon, diced
1/3 cup green pepper, chopped
1/3 cup onion, chopped
1 teaspoon salt
1/2 teaspoon dried marjoram
1/2 teaspoon dried thyme
1/8 teaspoon pepper
1 (28 ounce) can stewed tomatoes
1 cup shredded cheddar cheese (4 ounces)

Steps:

  • Cook noodles according to package directions; drain.
  • In a large skillet, cook bacon over medium heat until crisp.
  • Remove to paper towels to drain, reserving 2 tablespoons drippings.
  • In the drippings, saute green pepper, onion, salt, marjoram, thyme and pepper for 5 minutes.
  • Stir in tomatoes.
  • Bring to a boil.
  • Reduce heat; simmer, uncovered, for 10 minutes.
  • Stir in the noodles.
  • Add half of the bacon.
  • Transfer to a greased 2-qt. baking dish.
  • Top with cheese and remaining bacon.
  • Bake, uncovered, at 350° for 10-15 minutes or until cheese is melted.

FRIED GREEN TOMATO CASSEROLE

6 medium green tomatoes, sliced in rounds
1 Salt and pepper to taste
1 cup Nabisco Ritz Bitz Sandwiches Crackers crumbs, divided
1 cup grated sharp cheddar cheese
6 tablespoons butter, divided

Steps:

  • Layer half the tomatoes in a greased shallow dish. Sprinkle with salt and pepper. Add 1/2 cracker crumbs and 1/2 cheese. Top with 1/2 butter (in small pieces). Layer remaining tomatoes, add seasonings, and cheese. Add remaining crumbs and butter. Bake, covered, at 350° for 30 minutes. Uncover and bake 10 minutes or until brown.
