1/2 pound cod fillet
2 tablespoons all-purpose flour
2 to 3 tablespoons cornstarch
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
1/8 teaspoon dried oregano
1/8 teaspoon dried thyme
1/3 cup club soda
Oil for deep-frying
1/4 cup orange marmalade
1 to 2 tablespoons prepared horseradish

Steps:

  • Rinse fillets in cold water; pat dry. In a large shallow dish toss flour and fish, 1 piece at a time. Combine next 9 ingredients. , In a cast-iron or other heavy skillet, heat 1 in. of oil. Dip floured fillets in cornstarch batter; fry over medium heat until fish just begins to flake easily with a fork, 2-3 minutes on each side. Combine marmalade and horseradish; serve with fish.

1 cup flour
3 tablespoons cornstarch
1 tablespoon baking powder
1 teaspoon salt
1 cup beer
1 tablespoon dill
1 dash pepper
2-4 High Liner Simply Fish Haddock Filets
1/2 cup flour
2 tablespoons cornstarch

Steps:

  • Combine the batter ingredients and mix until smooth.
  • Preheat 2-3 inches of oil in a heavysauce pan to 375 degrees F.
  • Combine the "flouring" ingredients together in a small bowl.
  • Dredge the filets through the flour, then the batter until covered with a thick coat of batter.
  • Cook two at a time in the hot oil, for approximately 4 minutes per side or until a medium golden brown.
  • Remove and drain on paper towels.
  • Serve and enjoy.

50g cornflour
1 tsp baking powder
turmeric
75ml lager beer
75ml sparkling water
about 1 litre sunflower oil, for frying
400g fillet sustainable cod, hake or haddock, halved
750g potatoes, Maris Piper or Desiree, peeled and sliced into thick chips
2 tbsp plain flour
2 tbsp sunflower oil
50g plain flour
50g cornflour
1 tsp baking powder
turmeric
75ml lager beer
75ml sparkling water
about 1 litre sunflower oil, for frying
400g fillet sustainable cod, hake or haddock, halved
750g potatoes, Maris Piper or Desiree, peeled and sliced into thick chips
2 tbsp plain flour
2 tbsp sunflower oil

Steps:

  • Combine the flour, cornflour, baking powder and turmeric in a large bowl, season, then spoon 1 tbsp onto a plate and set aside. Gradually pour the beer and water into the bowl, stirring with a wooden spoon until you have a smooth, lump-free batter. Leave to rest for 30 mins while you prepare the chips.
  • Heat oven to 200C/fan 180C/gas 6. Boil a large pan of water, then add the chipped potatoes and boil for 2-3 mins until the outsides are just tender but not soft. drain well, then tip onto a large baking tray with the flour, oil and some salt. Gently toss together until all the potatoes are evenly coated and the flour is no longer dusty. Roast for 30 mins, turning occasionally, until the chips are golden and crisp.
  • To cook the fish, heat the 1 litre oil in a deep saucepan until a drop of batter sizzles and crisps up straight away. Pat the fish dry with kitchen paper, then toss it in the reserved turmeric flour mix. Shake off any excess, then dip into the batter. Carefully lower each fillet into the hot oil and fry for 6-8 mins - depending on the thickness of the fish - until golden and crisp. Using a large slotted spoon, lift out the fish, drain on kitchen paper, then sprinkle with salt. Serve with the hot chips and Homemade tomato sauce (see 'goes well with').

Kibbeling: Deep Fried Battered Fish Pieces

600 gram fish, in 5 cm chuncks
150 gram flour
200 ml milk
50 ml water or beer
2 eggs
1 tsp salt
1 tsp pepper
oil to deep fry in
fish spice mix
sauce of choice

Steps:

  • Mix the flour with the milk, water (or beer), eggs, salt and pepper.
  • Preheat the deep fryer to 170-180C.
  • Add the fish to the batter, stir around gently.
  • Carefully slide the fish pieces one by one into the hot oil. Don't overcrowd the pan, this will drop the temperature of the oil too much, causing the batter to be soggy instead of crisp.
  • When golden brown, scoop them out with a slotted spoon (don't use a frying basked, the nuggets tend to get stuck to it) and place in a bowl with some paper kitchen towel to get rid of the excess fat.
  • Bake the rest of the fish the same way (the batch size depends on the size of your deep fryer). Scoop the small bits of batter that came loose from the fish out of the oil in between the batches, otherwise they will burn and stick to the new batch, which is not very tasty.
  • Transfer to a serving bowl, sprinkle with fish spice mix, and serve hot with a dipping sauce.

8 medium white fish fillets or 4 large white fish fillets
110 g plain flour or 110 g self raising flour
1/4 teaspoon salt
1 egg
1 tablespoon butter, melted
150 ml milk
to taste lemon wedge (to garnish)

Steps:

  • Half-fill a deep pan with melted fat or oil. Heat until a faint haze rises from it (or until a bread cube sinks to the bottom of the pan, rises to the top immediately and turns golden in 50 seconds).
  • Sift the flour and salt into a bowl.
  • Beat to a smooth batter, unbeaten egg, butter and milk. Then add the flour and salt mixture.
  • Coat 2 pieces of fish with batter.
  • Lift into the pan with a fork or kitchen tongs.
  • Fry until crisp and golden, allowing about 6-8 minutes for large pieces and 4-5 minutes for medium.
  • Remove from the pan and drain on absorbent kitchen paper.
  • Repeat with the remaining fish.
  • Garnish with lemon wedges.

800 g cod (Skinned & boned, 1 3/4 lbs) or 800 g haddock fillets (Skinned & boned, 1 3/4 lbs)
250 g flour (1 cup plus 2 tbsp)

1/4 teaspoon garlic salt
1/4 teaspoon pepper
200 ml beer (7 oz)
1 egg
oil (for frying)

Steps:

  • Pat fish fillets dry w/paper towels, cut into pieces & set aside.
  • Mix the next 6 ingredients (flour through pepper) in a large bowl. Add beer + egg & mix till smooth & lump-free. Allow batter to rest for 30 minutes.
  • Heat oil to approx 180°C (350°F). Dip fish pieces in the batter & deep-fry them (a few at a time) for 5-6 minutes or till golden brown.
  • Remove from the oil using a slotted spoon, drain on kitchen paper & keep warm till all the fish has been cooked.
