DEEP-FRIED COCONUT PRAWNS

If you have been anywhere by the sea in the Yucatan peninsula you will have had these deep-fried king prawns with a coconut batter. Curiously to me, they often come with an apple sauce, but less frequently they're served with a papaya and habanero dipping sauce, which I like. The other problem is the batter is often too sweet, so this is my version with no sugar.

Number Of Ingredients 20

24 raw king prawns, peeled, tails on (about 600g/1lb 5oz frozen raw shell-on prawns)
175g/6oz plain flour
1½ tsp baking powder
1 medium egg, beaten
150ml/5fl oz ice-cold water
60g/2¼oz panko breadcrumbs
60g/2¼oz unsweetened desiccated coconut
600ml/200fl oz corn oil, for deep frying
salt and freshly ground black pepper
1 large papaya, skin and seeds removed, roughly chopped
½-1 habanero chilli, stem and seeds removed, roughly chopped
1 banana shallot, roughly chopped
1 garlic clove, halved
3 tbsp cider vinegar
2 thin slices fresh root ginger, skin removed
1 lime, juice only
1 orange, juice only
1 tbsp soft brown sugar
1 large pinch ground allspice
½ tsp salt

Steps:

  • To make the dipping sauce, place all the ingredients into a food processer and blend until smooth. Pour into a saucepan and bring to the boil. Reduce to a simmer and cook gently over a low heat for 5 minutes. If the sauce gets too thick, add a few tablespoons of boiling water.
  • To make the batter, sift 125g/4½oz plain flour, the baking powder and pinch salt into a bowl. Make a well in centre and break in the egg. Bring in the flour from the sides to make a paste then whisk in the cold water to make a smooth batter.
  • Line a baking tray with greaseproof paper and fill a deep-fat fryer or a large, deep, heavy-bottomed pan two-thirds full with the oil. Heat to 180C (a cube of bread should turn brown in one minute when dropped in.) CAUTION: Hot oil can be dangerous. Do not leave unattended.
  • Tip the remaining 50g/1¾oz flour into a shallow bowl and season generously with salt and pepper. Mix together the breadcrumbs and coconut in a seperate bowl.
  • Coat each prawn in the flour, shaking off any excess, then holding it by the tail, dip it into the batter. Lift it out and let any excess batter drip back into the bowl. Roll the prawn in the coconut crumbs, pressing down so the mixture sticks. Put the prawn on the prepared tray and repeat until all are coated, leaving space between each one.
  • Deep-fry the prawns in batches for 1 or 2 minutes until golden-brown and crisp. Drain on kitchen paper.
  • Serve at once with the papaya dipping sauce.

1-1/4 cups cornstarch
6-1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon Cajun seasoning
1-1/2 cups cold water
1/2 teaspoon canola oil
2-1/2 cups sweetened shredded coconut
1 pound uncooked shrimp (26-30 per pound), peeled and deveined
Additional oil for deep-fat frying
1/2 cup orange marmalade
2 tablespoons honey

Steps:

  • In a large bowl, combine the first 5 ingredients. Stir in water and oil until smooth. Place coconut in another bowl. Dip shrimp into batter, then coat with coconut. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry shrimp, a few at a time, for 3 minutes or until golden brown. Drain on paper towels., In a small saucepan, heat marmalade and honey; stir until blended. Serve with shrimp.

3/4 cup flour
1 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon pepper

2 cups shredded unsweetened coconut

Steps:

  • Heat oil in deep fryer or deep skillet to 325*.
  • Meanwhile, mix flour, salt, ginger, and pepper.
  • Beat egg whites, just until foamy.
  • Coat shrimp with flour; dip into egg whites.

  • Fry, turning once, for about 2-3 minutes, until golden brown.

3 eggs, beaten to blend
1 1/2 teaspoons cayenne pepper
1 teaspoon seasoning salt
1 cup all-purpose flour
3 cups dried breadcrumbs
1 cup shredded coconut
24 uncooked large shrimp, peeled,tails left on and deveined (about 1 ½ lbs total)
vegetable oil, for deep-frying
2 (8 ounce) cans crushed pineapple, drained
1 (6 ounce) jar plum sauce

Steps:

  • Combine eggs, cayenne and seasoning salt in shallow pan.
  • Place flour in another shallow pan.
  • Combine breadcrumbs and coconut in third pan.
  • Dredge shrimp in flour, shaking off excess.
  • Holding shrimp by tail, dip into eggs and then roll in breadcrumb mixture, coating thoroughly.
  • Heat oil in deep-fryer.
  • Add shrimp in batches (do not crowd) and fry until golden-brown, about 3 minutes.
  • Transfer to paper towels to drain.

1 lb large shrimp, peeled and deveined
1/3 cup all-purpose flour
2 egg whites, lightly beaten
1 1/3 cups flaked coconut
oil, for deep-fat frying
1 (12 ounce) jar pineapple preserves
1 tablespoon pina colada nonalcoholic drink mix, thawed

Steps:

  • Butterfly shrimp by cutting the inner curve of the shrimp deeply, but not all the way through.
  • Press to flatten on your cutting board.
  • Dredge the shrimp in the flour, shaking off excess.
  • Then dip into the egg whites and then into the coconut.
  • Fry shrimp in a deep fat fryer or deep skillet, a few at a time, for 1-1.5 minutes or until golden brown.
  • Drain on a clean paper bag.
  • To make dipping sauce, warm the preserves in a small skillet until it melts, and stir in pina colada mix.
  • Serve warm dipping sauce with fried shrimp.

1 large egg
1/2 cup all-purpose flour
2/3 cup beer (room temperature)
1 1/2 teaspoons baking powder
1/3 cup all-purpose flour
2 cups mound's brand sweetened coconut
25 medium uncooked fresh shrimp, with tails left on
2 1/2 cups vegetable oil (can use 3 cups)

Steps:

  • NOTE; the shrimp must be chilled for at least 5-24 hours (the longer chilling time the better it will be).
  • In a medium bowl whisk egg with 1/2 cup flour, beer and baking powder until well combined.
  • Prepare two separate bowls, place 1/3 cup flour in one bowl and the coconut in the other bowl.
  • Holding the shrimp by the tail dredge firstly in flour shaking off any excess flour, then dip in the beer batter allowing excess to drip off.
  • Roll the shrimp in coconut pressing down slightly with fingers to adhere the coconut to the shrimp.
  • Repeat with all remaining shrimp.
  • Place onto a parchment-lined baking sheet.
  • Refrigerate for a minimum of 5-24 hours.
  • Heat oil in a deep-fryer or in a large heavy pot to 350°F.
  • Fry the shrimp in batches turning once until golden brown.
  • Carefully using tongs remove to a brown paper bag or paper towels to drain.
